Beans are far from boring when you stir in soy sauce, toasted almonds and fancy mushrooms.

1 1/2 pounds fresh green beans
1/4 cup slivered almonds
6 ounces fresh shiitake mushrooms
1 tablespoon olive or vegetable oil
1 tablespoon sesame oil
3 cloves garlic, finely chopped
2 tablespoons soy sauce

Steps:

  • Remove ends of beans. Leave beans whole, or cut into 1-inch pieces. Place steamer basket in 1/2 inch water in saucepan or skillet (water should not touch bottom of basket). Place green beans in steamer basket. Cover tightly and heat to boiling; reduce heat. Steam 10 minutes.
  • Cook almonds in ungreased heavy skillet over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown and fragrant.
  • Remove tough stems of mushrooms; cut mushrooms into 1/4-inch slices. Heat olive and sesame oils in 12-inch skillet over medium heat. Cook mushrooms and garlic in oil 3 minutes, stirring occasionally. Stir in soy sauce and green beans. Cook 2 to 3 minutes or until green beans are crisp-tender. Sprinkle with almonds.

6 tablespoons canola oil
1 pound haricot verts, cleaned and blanched
Kosher salt and fresh cracked pepper
2 cups sliced button and oyster mushrooms
1 shallot, sliced
2 cloves garlic, sliced
1 teaspoon chopped fresh rosemary
1 teaspoon chili flakes
Splash sherry vinegar
1 tablespoon thinly sliced fresh mint

Steps:

  • In a large saute pan, heat 3 tablespoons of the oil over medium-high heat. Add the haricot verts and season with salt and pepper. When they begin to brown, about 5 minutes, remove from the pan and add the remaining 3 tablespoons oil with the mushrooms. Brown the mushrooms, about 8 minutes, and then add the shallots, garlic, rosemary and chili flakes and cook until softened, about 3 minutes. Season with salt and pepper.
  • Return the beans to the pan and add the sherry vinegar. Stir in the mint and cook until just fragrant. Season as needed.

8 ounces fresh shiitake mushrooms, stemmed, caps sliced
2 shallots, chopped
2 garlic cloves, minced
2 lbs green beans, slender, trimmed
2/3 cup low sodium chicken broth
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Melt 3 tablespoons butter in large nonstick skillet over medium-high heat.
  • Add shiitake mushrooms and sauté until tender, about 5 minutes.
  • Transfer mushrooms to medium bowl.
  • Melt remaining 3 tablespoons butter in same skillet.
  • Add shallots and garlic and sauté until tender, about 2 minutes.
  • Add green beans and toss to coat with butter.
  • Pour broth over green bean mixture.
  • Cover and simmer until liquid evaporates and green beans are crisp-tender, about 10 minutes.
  • Stir in shiitake mushrooms.
  • Season to taste with salt and pepper.
  • Transfer to platter and serve.

We bring extra umami (a savoriness) to a traditional green bean casserole with the addition of dried shiitake mushrooms. Once rehydrated, they turn soft and earthy, and their soaking liquid adds oomph to the sauce as well. Our fried onion topping is made from scratch - first, a dip in buttermilk, then fried to crunchy perfection.

1 ounce dried shiitake mushrooms
4 tablespoons unsalted butter
1 white onion, diced
12 ounces cremini mushrooms, sliced
6 tablespoons all-purpose flour
4 cups low-sodium chicken or vegetable broth
Kosher salt
1 1/2 pounds green beans, trimmed and halved
3/4 cup heavy cream
Freshly ground black pepper
1 white onion, halved and thinly sliced
1 cup buttermilk
2 cups all-purpose flour
Kosher salt
Vegetable oil, for frying

Steps:

  • Make the casserole: Place the dried shiitake mushrooms in a small bowl and cover with boiling water, about 2 cups, and cover with plastic wrap. Let steep for 20 minutes. Strain through a fine mesh strainer, reserve 1/2 cup of the liquid and slice the steeped mushrooms.
  • Melt the butter in a large Dutch oven over medium heat. Add the diced onion; cook, stirring, until softened, 7 to 10 minutes. Add the cremini and shiitake mushrooms; saute until softened and most of the liquid has evaporated, 10 minutes. Sprinkle in the flour; cook, stirring, 1 minute. Add the broth and mushroom liquid. Bring to a boil, then reduce the heat to medium-low and simmer until thickened, 5 to 10 minutes.
  • Bring a pot of salted water to a boil. Add the green beans and cook until crisp-tender, 7 to 10 minutes. Drain; shake off any excess water and add to the mushroom sauce. Cook, stirring occasionally, until the beans are very tender and the sauce is thick, 10 to 12 minutes. Stir in the heavy cream and season with 2 teaspoons of salt and pepper.
  • For the topping: Soak the sliced onions in the buttermilk, 5 minutes. Combine the flour and 1 teaspoon salt in a medium bowl. Heat 2 to 3 inches vegetable oil in a large pot until a deep-fry thermometer registers 350 degrees F. Working in batches, drain the onion, toss with the flour and shake off the excess, then fry until golden, 4 to 6 minutes. Drain on paper towels.
  • Transfer the green bean mixture to a 4-quart baking dish and top with the fried onions. (The casserole and topping can be made up to 2 hours ahead; refrigerate the casserole. Bring to room temperature; reheat at 350 degrees F, 30 minutes. Top with the fried onion; bake 5 more minutes.)

1 lb fresh green beans, trimmed and cut into 2 inch pieces
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons olive oil
1/2 cup fresh sage leaf, chopped
4 ounces sliced fresh mushrooms
3 cloves garlic, minced
1/2 cup chicken broth
2 tablespoons white wine
1 teaspoon Worcestershire sauce
salt and pepper

Steps:

  • In a large saucepan, cook beans in boiling salted water for 10-12 minutes or until crisp-tender; drain.
  • Plunge into icewater; drain and set aside.
  • In a skillet, over medium-high heat, melt butter and add olive oil.
  • Saute sage 1 minute or until crisp and dark green.
  • Remove with a slotted spoon and set aside.
  • Add mushrooms and minced garlic to skillet; cook 2 minutes or until liquid evaporates.
  • Add green beans, tossing to mix.
  • Stir in broth, wine, Worcestershire sauce, salt, and pepper; cook for 5-10 minutes or until liquid is reduced by half.
  • Stir in sage just before serving.

1 1/2 pounds green beans, stem ends trimmed
1/2 cup plus 1 tablespoon olive oil, plus more as needed
3/4 pound shiitake mushrooms, stemmed, wiped clean, and thinly sliced
Freshly ground pepper

Steps:

  • Bring a large saucepan of water to a boil; add salt. Prepare an ice bath; set aside. Working in two batches, cook the green beans in boiling water until crisp-tender, 3 to 5 minutes. Using a slotted spoon, plunge beans into ice bath to stop the cooking. Drain, and pat dry; set aside.
  • Heat 1/2 cup oil in a large skillet over high heat until hot but not smoking. Working in batches so as not to crowd skillet, add mushrooms, and season with salt and pepper. Cook, stirring frequently, until golden and crisp, 2 to 3 minutes. Using a slotted spoon, transfer mushrooms to paper towels to drain. Add more oil as needed for subsequent batches.
  • Reduce heat to medium. Add beans and remaining 1 tablespoon oil; season with salt and pepper. Cook, tossing, until the beans are heated through, about 3 minutes. Transfer to a large serving dish. Add mushrooms; toss to combine. Serve warm or at room temperature.

Steps:

  • Steam green beans over boiling water until just tender 3 to 4 min. Drain green beans, and run cold water over to stop cooking. Set aside. In a large skillet heat olive oil and butter. Add garlic and cook until golden, add the mushrooms and continue to cook, stirring often until mushrooms are cooked through. Add the beans and continue to cook 5 to 8 minutes more. Add sage, salt and pepper to taste.

4 ounces fresh shiitake mushrooms, stems removed, caps sliced
1 shallot, chopped
1 garlic clove, minced
1 lb fresh green beans, trimmed
2 -3 tablespoons lemon juice
1 tablespoon white wine
salt and pepper

Steps:

  • Melt tub margarine in a nonstick skillet over medium high heat. Add mushrooms and sauté for about 5 minutes. Remove and reserve, covered.
  • Add shallots and garlic to the pan and sauté until they soften, about 2 minutes.
  • Add green beans and toss to coat. Add lemon juice and wine, cover, and simmer on low until most of the liquid evaporates, about 10 minutes. Be careful not to overcook them, the beans should be crisp-tender.
  • Add mushrooms back in and warm for about 1 minute. Season to taste with salt and pepper, and serve.
