- Cook 1/2 chopped onion in a pot with 3 tablespoons olive oil, about 5 minutes. Add 1 1/4 pounds trimmed green beans, a 15-ounce can crushed tomatoes, 1 1/4 cups water, 1 teaspoon salt, 1/4 teaspoon pepper and a pinch of cinnamon. Partially cover and simmer, 35 minutes. Season with salt and pepper.

- Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
- Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.
GREEN BEANS WITH ONIONS, HAM AND TOMATOES
I created this Italian inspired green beans recipe because I was tired of just plain beans. This has a hint of sweetness due to the red onions and balsamic vinegar and is certainly something different than the norm. I like to prepare this with Roast Beef and roasted potatoes.

- Add onions and Canadian bacon, and caramelize for a few minutes and then add garlic and cook for a few more minutes.

- Sort beans and rinse with cold water. Place beans in a Dutch over or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discarding liquid., In a Dutch oven or soup kettle, place ham hocks and water. Cover and bring to a boil. Reduce heat; simmer for 1 hour. Add beans; simmer 1 hour longer or until meat and beans are tender. Remove from heat. Cool slightly. Remove ham hocks. Cover and refrigerate ham hocks and soup., Remove meat from bones; discard bones. Set meat aside. Remove fat from broth. Return broth with the beans and meat to pan. Add the celery, carrots, onion and green beans. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 10 minutes. Add tomatoes and seasonings; cook for 10 minutes. Add cabbage; cook 35 minutes longer or until vegetables are tender.

TOMATO SASSY GREEN BEANS WITH HAM
I had an abundance of fresh green beans that I was trying different ways of cooking. This is the one I did that was my family's favorite.

Steps:
- Chop ham into a small dice.
- Heat butter in a heavy, large pot with a lid.
- Place onion in butter, and sauté over a medium heat for 2-3 minutes.
- Add green beans and ham, and stir-fry for about 5-6 minutes.
- Add the V-8 juice, and the garlic, along with the spices.
- Stir well, lower heat to a slow simmer and cover.
- Simmer the green beans for 30-40 minutes, stirring often.
- Remove lid, turn heat up to a faster simmer and cook for 5 more minutes until liquid reduces.

- Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 7 minutes. Drain, rinse under cold water and blot dry with paper towels; set aside. (This can be done up to 4 hours ahead; cover and refrigerate.)
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, season with salt and cook, stirring occasionally, until soft and golden, about 8 minutes. Add the ham and continue cooking until warmed through, about 2 minutes. Stir in the vinegar and remove from the heat.
- Add the green beans to the pot and stir until combined and warmed through. Add the parsley and season with salt and pepper.

- Add the bacon to a large Dutch oven and cook over medium heat until light golden (not crisp). Drain off the excess fat.
- Add the onions to the pot; cook until the bacon and onions are golden brown. Add the green beans and tomatoes, and season to taste with salt, black pepper and cayenne. Stir gently to combine.

NEW POTATOES, GREEN BEANS AND HAM
This recipe was given to me by my Mother-in-law who raised 9 children and taught school for 40 years and didn't have much time to cook. It remains a family favorite with my children. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

- I cook this in a crockpot all day, but may be cooked in a dutch oven on the stove, also.
- Add all the ingredients and cover, cook on low for 8 to 10 hours.
- If cooking on the stove you may need more broth, but the crockpot makes broth as it cooks, so you shouldn't need any more.
- Use your own judgement on the amount of broth.
- Serve with fresh, sliced tomatoes and corn bread for a great Southern meal.

I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

- Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
- Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
- To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

- In large dutch oven,add 1/3 cup vegetable oil.Saute' onions until clear. Add canned tomatoes with minced garlic and stir. Put worstershire sauce in next with ham seasoning. On low heat let ingredients simmer for about 5 minutes. Open large can of green beans saving the water inside and add to mixture. Salt and pepper to taste and let cook for 45 minutes on low heat. If you want,can whole or fresh sliced and cooked potatoes can be added to mixture.
