Green Beans with Cranberries is a fresh approach to serving a green bean casserole during the holiday season. A wonderful Walnut based vinaigrette dressing coats the green beans. We add layers of flavors from the sweetness of the cranberries, the earthiness of the toasted walnuts topped with the richness of crumbled bleu cheese. Now I know some people do not like bleu cheese so consider another cheese such as feta.

24 ounces Fresh Green Beans (trimmed)
3 tbsp Roasted Walnut Oil
1 tbsp Sherry Vinegar
2 tsp Dijon mustard
1 tsp Salt
1/4 tsp Freshly Ground Black Pepper
1/2 cup Toasted Walnuts (chopped)
1/3 cup Dried Cranberries
1 Shallot (thinly sliced into half-moons)
2 ounces Bleu Cheese (crumbled)

Steps:

  • Steam the green beans to desired tenderness.
  • Place green beans in a bowl. Blanch the green beans in cold water for a few minutes to stop them from cooking. Drain and dry well.

  • Cut in half for bite-size green beans.
  • Place chopped walnuts in a small frying pan with a little butter. Toast on the stove top until lightly brown.
  • In a small bowl, whisk together the walnut oil, vinegar and Dijon mustard. Stir in the salt and pepper.
  • Add the cool green beans to a large bowl and toss in the walnuts, cranberries and shallots and drizzle in the vinaigrette.
  • Place on a platter or serving dish and sprinkle with the blue cheese.

Steps:

  • In a large nonstick skillet, saute the green beans in 1 tablespoon oil until crisp-tender. In a large bowl, combine the salad greens and beans. , In a small bowl, whisk the vinegar and remaining oil; drizzle over salad and toss to coat. Sprinkle with walnuts and blue cheese. Serve immediately.

  • Heat olive oil in a skillet over medium heat; add garlic and cook and stir until fragrant, about 2 minutes. Add walnuts to skillet, cook and stir until lightly toasted, about 2 minutes; stir in green beans, toss lightly to coat, and cook and stir until warmed through, 2 to 3 minutes.
  • Transfer green beans to serving bowl and immediately top with crumbled feta cheese.

This is a wonderful veggie side dish to serve to guests, it is more like a bean salad, as it is not meant to be served hot, but at room temperature. The amounts I have listed are only estimated as I really do not measure any thing when I make this dish, you can adjust all ingredients to taste. You can really use just about any kind of nuts for this recipe, I have even made this with toasted walnuts. The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

1/2-1 teaspoon Dijon mustard
2 teaspoons cider vinegar
1 -2 tablespoon finely chopped shallot (or to taste)
2 -3 tablespoons olive oil
1 1/2 cups sliced almonds, toasted
2 lbs fresh green beans, ends trimmed
1/2-3/4 cup blue cheese, crumbled (or to taste)
salt and black pepper

Steps:

  • In a small bowl whisk together mustard, vinegar, shallot and oil.
  • Prepare a bowl with ice water.
  • In a saucepan with a small amount of water, blanch/steam the beans until JUST firm-tender (about 3-4 minutes); drain through a colander, then immediately transfer to the bowl of ice water just for a couple of minutes to cool and keep the colour.
  • Remove the beans to a bowl and dry well patting with paper towels.
  • Drizzle the dressing over the beans; toss to combine.
  • Season with black pepper and a pinch of salt.
  • Add in blue cheese and almonds; toss to combine.
  • Transfer to a serving plate or bowl, and sprinkle with more sliced toasted almonds.
  • Serve at room temperature.
  • Delicious!

My sister-in-law gave me this great, simple recipe. Green beans are sauteed in bacon fat, then tossed with toasted nuts and crumbled blue cheese. Very rich and quite fattening, but great for holidays!

1 pound fresh green beans, cut into 2 inch pieces
¼ cup bacon drippings
3 ounces crumbled blue cheese
½ cup chopped walnuts, toasted
salt and pepper to taste

Steps:

  • Place green beans in a saucepan with one inch of water in the bottom. Bring to a boil over medium-high heat, and cook for 5 minutes, or until tender-crisp. Remove from heat, drain, and set aside.
  • Heat the bacon drippings in a large skillet over medium heat. Add green beans, and toss to coat. Saute until the beans are heated through. Sprinkle with nuts and crumbled blue cheese. Season with salt and pepper to taste.
