CRUSHED PEAS WITH POACHED SALMON
This fresh update of English mushy peas gets its zesty zing from basil vinaigrette.

Steps:
- Place salmon in a pot, and add leek, peppercorns, 2 teaspoons salt, and 4 cups water. Bring to just under a boil, reduce heat, and cook at a bare simmer until salmon is just cooked through, 3 to 5 minutes. Remove from water, and cover with parchment to keep moist.
- Puree sliced basil and lemon zest in a food processor. Add sugar and lemon juice, and pulse to combine to make vinaigrette. With machine running, add oil and season with salt.
- Bring a medium pot of water to a boil. Add 1 tablespoon salt and the peas. Reduce heat, and vigorously simmer until tender and bright green, about 4 minutes. Drain, and transfer to a bowl. Add 2 tablespoons basil vinaigrette, and crush with a potato masher. Season with salt and pepper, then add mint.
- Divide peas among 4 plates, and top with salmon. Drizzle with more vinaigrette, and garnish with basil sprigs.
ROASTED SALMON WITH PEAS AND RADISHES
Salmon and sweet peas are the perfect pairing for a quick and satisfying supper. The salmon is roasted skin-side up, to protect the delicate flesh and keep the fish moist. Peppery radishes mellow during cooking, turning slightly sweet and juicy as they soften. Browned butter, mustard and capers coat the peas and radishes in a tangy sauce, and white miso provides depth. If there's no miso to be found, just leave it out or sub with a splash of soy sauce.

- Heat oven to 425 degrees. On a rimmed baking sheet, coat salmon with 2 tablespoons oil, season lightly with salt and pepper and arrange skin-side up. Roast until fish is just opaque throughout and cooked to medium, 8 to 10 minutes.
- Meanwhile, in a large nonstick skillet, melt 1 tablespoon butter in remaining 2 tablespoons oil over medium-high. Add halved radishes (not leaves), season with salt and pepper and cook, stirring occasionally, until golden and slightly softened, about 8 minutes. (If using zucchini, you can reduce the cook time to about 5 minutes; if using artichokes, you'll only need to cook about 3 minutes.) Add 1 cup water, the peas, capers, miso and mustard, and cook, stirring to dissolve the miso and mustard, until peas are tender, 3 to 4 minutes.
- Add remaining 2 tablespoons butter and simmer until a light sauce forms, about 2 minutes. Season with salt and pepper and stir in radish leaves and dill.
- Divide vegetables among plates or shallow bowls and top with salmon. Spoon pan sauce on top and serve warm.
ZESTY HADDOCK WITH CRUSHED POTATOES & PEAS

- Cover the potatoes in cold water, bring to the boil, then turn to a simmer. Cook for 10 mins until tender, adding peas for the final min of cooking. Drain and roughly crush together, adding plenty of seasoning and 1 tbsp oil. Keep warm.
- Meanwhile, for the dressing, mix 1 tbsp oil, the lemon juice and zest, capers and chives with some seasoning.
- Dust the fish in the flour, tapping off any excess and season. Heat remaining oil in a non-stick frying pan. Fry the fish for 2-3 mins on each side until cooked, then add the dressing and warm through. Serve with the crush and broccoli.

- Bring water and lemon zest to a simmer in a large skillet. Season salmon fillets and add to pan with snap peas. Cover and cook 5 minutes, until salmon is opaque throughout; transfer to a platter. Drain and toss peas with butter, mint, and watercress. Drizzle with olive oil and season.

- Place salmon, skin side down, in a large high-sided skillet. Add wine, 2 tablespoons salt, and cold water to cover salmon by 1/2". Cover pan; bring liquid to a simmer over medium heat. Reduce heat to medium-low, uncover, and gently poach salmon until just cooked through and barely opaque in the center, about 6 minutes, depending on thickness. Transfer salmon and 2 tablespoons poaching liquid to a plate; tent loosely with foil.
- Meanwhile, melt butter in a medium skillet over medium heat. Add mushrooms and cook, stirring occasionally, until they begin to soften, about 3 minutes. Add 1/2 cup salmon poaching liquid and peas and simmer until peas begin to soften, 2-3 minutes. Add cream and bring sauce to a simmer. Cook until slightly thickened, about 5 minutes. Season with salt and pepper.
- Using a spatula, transfer salmon, skin side up, to paper towels. Gently peel off and discard skin. Invert onto serving plates and spoon sauce over. Garnish with chives.

- Bring a pan of water to the boil and cook the fusilli according to the pack instructions.

- Make sauce:.
- Pick enough tarragon leaves to measure 1/2 cup (do not pack).
- Chop enough chives to measure 1/3 cup.
- Coarsely chop shallot.
- In a food processor puree tarragon, chives, and shallot with remaining sauce ingredients until smooth and season with salt and pepper.
- Sauce may be made 1 day ahead and chilled, covered.
- Bring sauce to cool room temperature before serving.
- Make Fish:.
- In a deep 10-inch skillet bring wine and water to a simmer, covered.
- Cut salmon into 6 pieces and season with salt and pepper.
- Submerge 3 salmon pieces, skin sides down, in simmering liquid (add hot water if necessary to just cover salmon) and poach at a bare simmer, covered, 8 minutes, or until just cooked through.
- Transfer cooked salmon with a slotted spatula to a platter to cool and poach remaining salmon in same manner.
- When salmon is cool enough to handle, peel off skin and if desired with a sharp knife scrape off any dark meat.
- Salmon may be cooked 1 day ahead and chilled, covered.
- Bring salmon to cool room temperature before serving.
- Assemble:.
- Cut potatoes lengthwise into 1/8-inch-thick slices.
- In a steamer set over boiling water steam potatoes until just tender, 4 to 5 minutes.
- Spoon sauce onto 6 plates and arrange some potatoes in a circle, overlapping slightly, on top of sauce .
- Season potatoes with salt and arrange salmon on top of potatoes.
- Garnish salmon with peas.

- In a medium saucepan of simmering water, poach the salmon filets 10 minutes, or until flaky and tender.
- In a medium bowl, mix together cream cheese, sour cream, green onions, salt, hot pepper sauce, lemon juice and Worcestershire sauce.
- Flake salmon into the mixture. Cover and refrigerate 8 hours, or overnight, before serving.

POACHED SALMON IN ASPIC
Steps:
- Poach salmon:
- Wash salmon inside and out and sprinkle inside with salt. Unfold 1 piece of cheesecloth on top of the other to make a double layer, then wrap fish snugly in it and tie ends (close to fish) with kitchen string. Place on poacher rack in poacher, then straddle poacher across 2 burners on stovetop. Add 6 quarts cold water (it should cover fish by 1 inch), lemon juice, vegetables, herbs, and peppercorns.
- Bring to a boil, partially covered, over high heat (this will take about 25 minutes; fish will register 145°F on an instant-read thermometer inserted into thickest part of fish). Transfer poacher to a metal rack and cool fish in broth, uncovered, 30 minutes. Then chill fish in poacher (do not pour off broth), uncovered, at least 8 hours.
- Reduce broth for aspic:
- Lift fish on poacher rack out of broth and drain well, then transfer from rack to a large shallow baking pan and chill. Pour broth through a sieve into a large bowl. Transfer 8 cups broth to a 4-quart heavy pot, reserving remainder for another use. Add white wine, Madeira, thyme sprig, and salt and boil until reduced to 5 cups, 30 to 40 minutes. Cool 20 minutes.
- Prepare salmon for glazing:
- Wash reserved leek leaves and chopped leeks in a bowl of cold water, then lift out and drain well. Cut leaves into decorative strips. Blanch strips in a saucepan of boiling water 1 minute, then transfer to a bowl of ice and cold water. Drain and pat dry.
- Remove strings from cheesecloth, then open cheesecloth but don't remove it. Remove fatty strip and small bones (they look like a comb) from spine of fish from head to tail. Trim off any fat from edges of belly. Carefully remove bony section under gills, then remove skin and dark flesh from visible side (top) of fish by gently scraping with a small sharp knife. Using the cheesecloth, roll fish over onto platter and remove bony section under gills, then remove skin and dark flesh from other side of fish. Wipe platter clean, then cover fish with dampened paper towels and chill until aspic is ready.
- Clarify broth (using egg whites and shells) and make aspic:
- Whisk together reduced broth, chopped leek, carrot, celery, and egg whites and shells in a 4- to 6-quart heavy pot. Bring to a boil, whisking constantly, then reduce heat and cook at a bare simmer, undisturbed, over low heat 30 minutes. Ladle broth through sieve lined with a double thickness of dampened paper towels set over a 1-quart glass measure, then press firmly on solids.
- Soften gelatin in cold water in a 1-quart saucepan 1 minute. Add 3 cups broth and simmer, stirring, until gelatin is dissolved, about 2 minutes.
- Glaze salmon with aspic:
- Ladle 2/3 cup aspic into a metal bowl set in a larger bowl of ice and cold water. Let stand, stirring occasionally, just until aspic is the consistency of raw egg white. Remove bowl from ice water and spoon a thin layer of aspic over fish, then chill fish until aspic is set, about 10 minutes. Arrange leek garnish on fish and glaze fish with more aspic. Chill fish, uncovered, until ready to serve.
- Pour remaining aspic into a 13- by 9-inch baking dish and chill until firm, about 1 hour. Cut into 1/2-inch cubes, then arrange cubes around salmon.
