VEGAN "LOBSTER" ROLLS
Vegan and vegetarian variation on the traditional New England lobster roll.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Pat hearts of palm dry. Toss with avocado oil and coat with seafood seasoning; season with salt and pepper. Transfer to a baking pan.
- Roast in the preheated oven for 20 minutes.
- Combine vegan mayonnaise, celery, shallot, lemon zest, juice of 1/4 lemon, capers, dill, sesame seeds, and salt in a large bowl. Add roasted hearts of palm and toss to coat.
- Brush the tops of the sandwich rolls with olive oil. Toast in a skillet over medium-high heat until lightly browned, about 1 minute. Add hearts of palm mixture evenly to each roll and serve.

VEGETARIAN "LOBSTER" ROLLS RECIPE BY TASTY
Here's what you need: hearts of palm, celery, fresh dill, fresh chives, old bay seasoning, salt, pepper, lemons, mayonnaise, long potato rolls, melted butter

Steps:
- Cut the hearts of palm into oblique chunks and add them to a large bowl.
- Mince the celery and add to the bowl with the hearts of palm.
- Add the dill, chives, Old Bay seasoning, salt, pepper, lemon juice, and mayonnaise and stir to combine.
- Brush the insides of the potato buns with the melted butter.
- Toast in a medium skillet over low heat for 2-3 minutes, until golden.
- Fill the buns with the hearts of palm mixture.
- Garnish with chives.
- Enjoy!

- In a medium saucepan over low to medium heat, combine apple cider vinegar, lemon juice, sugar and a ½ teaspoon of sea salt. Stir until the salt and sugar dissolve and then add the oyster mushrooms. Bring liquid to a low boil and simmer for 8 to 10 minutes until the mushrooms taste marinated.
- If not all the moisture has evaporated, use your hands to squeeze out the excess liquid from the mushrooms and add them into a large bowl. Then add hearts of palm, celery, red onion, chives, garlic, dill, vegan mayo, Old Bay seasoning, smoked paprika, remaining sea salt (¼ teaspoon OR leave out and add to taste just before serving) and ground black pepper. Add powdered dulse, if using. Refrigerate this mixture until assembling sandwiches.
- Brush the melted butter on the inside and outside of the hot dog buns. Toast the buns with the sides facing down for 8 minutes, flipping halfway. Bake until golden brown.
