4 slices bacon
1 pound fresh green beans, trimmed and or two 9-ounce packages frozen cut or French-cut green beans
¼ cup chopped onion
1 tablespoon butter
⅛ teaspoon ground black pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, turning occasionally. Transfer bacon to paper towels to drain, reserving 1 tablespoon drippings in skillet. Crumble bacon; set aside.
  • Meanwhile, cook green beans, covered, in lightly salted boiling water for 5 minutes; drain. Place beans in a large bowl of ice water for 5 minutes. Drain well.
  • Add the partially cooked green beans, onion and butter to the reserved drippings in skillet. Cook and stir over medium-high heat about 5 minutes or until crisp-tender. Stir in reserved bacon and pepper before serving.

2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.

  • Preheat the oven to 425 degrees F.
  • Put the beans on 1 or 2 baking sheets. Sprinkle over the bacon and onions, and add the olive oil, salt and pepper. Toss around to mix and coat everything in oil.

The only thing is, all ingredients are "to taste" I guess I have to give some kind of measurement as guidelines though, so I'll give it my best shot! ;-)

3 cups frozen green beans
3 slices bacon, fried and crumbled
1 small onion, diced

Steps:

  • Take scissors (I have a pair I use for food only) and cut up your bacon into a skillet.
  • Start frying over medium heat until you get some of the bacon grease"oozing" out.
  • Add diced onion.
  • Continue to cook until bacon is done.
  • Cook your green beans according to package directions.
  • When done, drain them and pour into a bowl.
  • Dump the fried bacon and onion (and grease) over the green beans.
  • Toss to coat.
  • Serve!
  • *I know, this sounds greasy, but when spread out over a good sized serving of green beans, it's really not that bad.
  • Also, I have used turkey bacon before and it works ok-- then you don't have the grease though, to fry up the onions--.

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

  • Trim green beans and steam until crisp tender.
  • In the meantime fry bacon and onion until bacon is crisp and onion is translucent.
  • Depending on the amount of bacon fat, pour some off, but leave about two tablespoons.
  • Add steamed beans, broth, and toss coat.

2 slices thick, cured bacon, chopped
1 sweet onion, (medium), chopped
1/2 cup chicken broth
1/2 teaspoon coarse salt, (or to taste)
1/4 teaspoon freshly ground black pepper, (or to taste)

Steps:

  • Boil the beans for 6-7 minutes, or until crisp tender. Drain and place the colander into a prepared ice bath. Dry the beans well and chop into bite-size pieces (or leave them whole if you prefer). Set aside.
  • Add the bacon to a pot or skillet over medium-high heat. Add the onions. Sauté until the bacon is crispy and has rendered its fat and the onions are translucent. Don't remove the bacon fat! Add the chicken broth, salt, and pepper, and beans. Simmer for 3 minutes. Enjoy!

  • Prepare the onions by bringing 3 quarts of water to a boil. Trim off the stem end tips of the onions (opposite of the root). Drop the onions into the boiling water. Boil the onions for 2 to 4 minutes, depending on their size, and remove with a slotted spoon. Cool for a few minutes and then peel. (If you squeeze the root end of a pearl onion it should pop out of its skin easily.)
  • Bring the water back to a boil, add the green beans and blanch for 3 to 4 minutes. While the beans are blanching, fill a large bowl with ice water. Drain the green beans and transfer the beans to the ice bath to cool. Set the beans aside.
  • Heat a large skillet over medium-high heat. Add the bacon and sauté until cooked through and crispy. Remove the bacon with a slotted spoon and set aside.
  • Pour all but 1 tablespoon of the bacon fat from the pan. Add the pearl onions to the pan and season with salt and freshly ground black pepper. Sauté over medium-low heat for about 10 minutes and then cover the pan and cook for another 10 minutes, until the onions are lightly browned and starting to soften. Stir or shake the pan several times during the cooking process.
