ROASTED GREEN BEANS
A great alternative to fast-food French fries. My family and friends love these as a snack or hors d'oeuvre. No matter how many I make, it's never enough!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Pat green beans dry with paper towels if necessary; spread onto a jellyroll pan. Drizzle with olive oil and sprinkle with salt and pepper. Use your fingers to coat beans evenly with olive oil and spread them out so they don't overlap.
- Roast in the preheated oven until beans are slightly shriveled and have brown spots, 20 to 25 minutes.

SHREDDED GREEN BEANS
This new twist on green beans is from Heidi Swanson's "Super Natural Cooking". I love green beans, so I am always up to try something different. This recipe is terrifc! Also great with just lemon zest.

Steps:
- Slice the beans on a diagonal into roughly 1/8 " pieces. If you are using a food processor, do them a handful at a time. Eitehr way, the result should be tiny, angular zeroes.
- Heat the olive oil in a large skillet over medium-high heat. Add the beans and stir until coated with oil, then add the water.
- Cover and cook 2 or 3 minutes, until the beans are brightly colored and tender; give the pan a good shake midway through to ensure even cooking.
- Remove from the heat and stir in the zests and half of the chives. Season to taste with salt and pepper and serve garnished with the remaining chives.
GREEN BEANS
These are so good. I created this to give green beans more flavor. This is a big batch because there are 6 of us (7 if you include my hubby's lunch for work next day) and because they always want seconds ..... even the little ones. I use fresh or frozen green beans but cooking time will differ between the two.

- In saucepan add green beans and onion and cover with water.
- Bring to boil and boil until beans and onions are tender, about 10 minutes.
- Drain.
- Add remaining ingredients and cook until flavors are well blended, about 5 minutes.
