Steps:
- Place green beans in a pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 10 minutes. Drain water, leaving beans in the pot.
- Place bacon strips on a microwave-safe plate and cook in the microwave until crisp, about 2 minutes. Cool and crumble bacon.
- Stir butter and bacon into beans in the pot and return to medium heat; cook and stir until butter melts, 2 to 3 minutes. Add garlic; cook and stir until fragrant, 3 to 4 minutes. Top with lemon zest and stir.

- Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
- Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.

- In a large skillet over medium-high heat, cook the bacon until done but not crisp. Remove the bacon to drain on paper towels. Reserve 2 teaspoons of the bacon fat in the pan and discard the rest. Chop or break bacon into small pieces.
- While the bacon is cooking, steam the prepared green beans using a steamer or steamer basket, until almost fully cooked 3-4 minutes (taste to test). Note: they will complete cooking when sautéed and to retain firmness they should not steam until fully done. Remove beans from the steamer.
- Over medium-high heat add the diced shallots to the skillet with the bacon fat and sauté for 2-3 minutes.
- Add the green beans and sauté to coat and heat through. Toss in bacon and sliced almonds; remove from heat and serve immediately.

- Slice bacon into 1 inch pieces, (easiest way is to cut with scissors).
- Put bacon into a large pot and begin to fry.
- While bacon is frying, coarsely chop onion.
- When bacon is about 1/2 way done, add onion and continue frying until bacon is semi crisp. (Do NOT drain grease).
- Drain green beans and dump into bacon and onions. Stir.
- Continue to cook for 30 minutes on medium, stirring occasionally.

- Fill a large pot with water and bring to a rolling boil over high heat. Once boiling add the green beans, cover, and cook for 3-4 minutes. Remove the green beans from the boiling water and put into a bowl of ice water to stop the cooking process. Remove the beans from the ice water and set aside. Heat a large saute pan over medium high heat and cook the chopped bacon until crispy (around 8-10 min). Put the cooked bacon on a paper towel-lined plate. Set aside. Remove most of the bacon grease from the saute pan, leaving around 2 Tablespoons of grease (enough to coat the bottom of the pan). Put the pan over medium low heat, then add the shallots and garlic to the pan and cook, stirring and cooking for 3-4 minutes, until they start to caramelize. Add the green beans, raise heat to medium high. Add the salt, pepper, and apple cider vinegar. Stir everything together, cooking for 3-4 minutes. Put the green beans into a serving dish. Sprinkle the bacon on top, stir together, and serve immediately.

- Fry bacon in a skillet over medium-high heat until partially cooked.
- Drain off most (but not all) of the fat.
- Add onion and continue to cook until bacon is brown and onion is clear.
- Add vinegar and 1 t of the seasoned salt.
- Cook until most of the vinegar has cooked down and remove from heat.
- In a large saucepan, cook beans in water, covered, until done (5-7 minutes).
- Do not drain.
- Add bacon mixture and cook uncovered for another five minutes' or so.
- Add additional seasoned salt to taste.
- There should be little liquid left at serving time.

- Line a baking sheet with foil (this makes clean-up easy) and set a wire rack over it. Spray the rack with non-stick and place the bacon slices on the rack.
