3 tablespoons olive oil, divided
3/4 teaspoon salt, divided
2 tablespoons white wine vinegar
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
1-1/2 teaspoons Dijon mustard
1-1/2 teaspoons sugar
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°. In a large bowl, toss beans with 1 tablespoon oil and 1/2 teaspoon salt. Transfer to 2 ungreased 15x10x1-in. baking pans., Roast 30-35 minutes or until beans are tender and lightly browned, stirring occasionally., In a small bowl, whisk vinegar, dill, mustard, sugar, pepper and the remaining oil and salt until blended. Transfer beans to a large bowl. Drizzle with vinaigrette and toss to coat.

5 red bell peppers
3 medium shallots, thinly sliced
2 garlic cloves, minced
1/4 cup red wine vinegar
1 tablespoon sherry wine vinegar
salt
1/3-1/2 cup extra virgin olive oil (use sparingly so as to use less)
fresh ground pepper
1 1/2 lbs green beans
1 lb cherry tomatoes, halved
2 tablespoons chopped mint
2 tablespoons chopped parsley
1/2 cup roasted macadamia nuts or 1/2 cup almonds, chopped

Steps:

  • Preheat the broiler.
  • Roast the peppers under the broiler or over a gas flame, turning a few times, until charred all over; transfer to a work surface and let cool.
  • Discard the skin, stems and seeds and cut the peppers into 2-by-1-inch strips.
  • In a small bowl, combine the shallots with the garlic, red wine and sherry vinegars and a large pinch of salt.
  • Let stand for 10 minutes.
  • Stir in the olive oil and season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil.
  • Add the beans and cook until crisp-tender, about 4 minutes.
  • Drain and spread out on a large baking sheet.
  • Let cool to room temperature.
  • In a large bowl, combine the peppers with the beans, tomatoes, mint and parsley.
  • Add the shallot dressing and toss well.
  • Sprinkle with the macadamia nuts or almonds, toss & serve.

1 lime
2 large ripe tomatoes, seeds removed and diced small
1 small red onion, chopped
1 red bell pepper, stem and seeds removed and diced small
1 ripe mango, peeled, pitted and coarsely chopped
1/4 cup chopped flat-leaf parsley
1 serrano pepper, seeds and stems removed and minced (use gloves and protect your eyes and nose when handling all hot peppers)
1 medium clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
2 pounds fresh green beans, trimmed and cut into 1-inch pieces
10 fresh radishes, thinly sliced
2 large ripe tomatoes, cut into wedges
1 red onion, medium dice
1/4 cup rice wine vinegar
1 teaspoon ground ginger
2 cloves garlic, gently crushed with the blade of a knife and quartered
1 tablespoon chopped flat-leaf parsley
1/2 cup olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Microwave lime in a small bowl for about 30 seconds to release essential oils, and set aside until it is just cool enough to handle. Prepare salsa by combining tomatoes, onion, bell pepper, mango, parsley, serrano pepper, and garlic. When the lime is just cooled down enough to handle, cut it in half, remove any seeds and squeeze the lime juice into the salsa. Season with salt and pepper, stir to combine and set aside.
  • Blanch the green beans for about 2 minutes in salted water, drain and let cool.
  • Prepare the dressing. Through the feed opening of a running blender add, 1 at a time, rice wine vinegar, ground ginger, garlic and parsley until a smooth paste forms. Leaving the blender running, add the olive oil in a slow stream through the feed opening. Season with salt and freshly ground black pepper, to taste.
  • Gently fold the cooled green beans with the salsa, radishes, tomatoes, and red onion. Use enough of the dressing to coat, but do not feel compelled to use all of the dressing. You can serve the rest of the dressing on the side.

  • Bring a large pot of salted water to a boil. Add beans and boil until color changes to bright green, 2 to 3 minutes.
  • Drain beans completely and run under cold water or submerge in a bowl with ice-cold water to stop the cooking process. Once cooled, drain completely and set aside.
  • Combine bell pepper, mango, and shallots in a large salad bowl. Add green beans and feta cheese; toss to combine.
  • Combine onion, balsamic vinegar, sugar, mustard, and poppy seeds together in a bowl. Drizzle in olive oil while whisking rapidly until dressing is smooth. Season with salt and pepper.
  • Drizzle about 1/4 cup vinaigrette over the salad and mix to combine.

3 cups green beans or Asian long beans
2 slightly underripe mangos
1 cup cherry or grape tomatoes, halved
¼ cup fresh cilantro
3 green onions, sliced
¼ cup peanuts, crushed
2 tablespoons fresh lime juice
1 tablespoon gluten-free tamari
½ teaspoon unrefined cane sugar
1 fresh Thai chili, minced (optional)

Steps:

  • Bring a pan of water to a boil. Add the green beans and cook for up to 2 minutes, until bright green and tender-crisp. Drain, then plunge them into a bowl of ice water to halt the cooking process. Drain again. Trim the ends and slice the beans in half lengthwise. Place them in a large bowl and set aside.
  • Seed and peel the mango and slice into long, thin strips. Add mango to the green beans, along with the tomatoes, cilantro, onion, and peanuts.
  • Whisk together the lime juice, tamari, cane sugar, and chili in a small bowl. Pour over the salad, toss, and serve. The salad can be made and dressed ahead of time and left to chill and marinate in the fridge for up to 3 hours.

1 lb. green beans
1 large red bell pepper, roasted
1 small jalapeno pepper
1 large ripe mango
2 Tablespoons toasted sesame seeds
Dressing:
1 Tablespoon chopped fresh cilantro
4 Tablespoons salad oil (canola)
2 Tablespoons extra virgin olive oil
1 small garlic clove, minced
1/2 teaspoon crushed red chiles
1/2 teaspoon ground cumin
1 1/2 Tablespoons honey
4 Tablespoons fresh lime juice
Salt to taste

Steps:

  • Trim the green beans of their tips and tails and cut into 1 1/2 inch pieces, on the diagonal. Drop the beans into a pot of boiling salted water and cook until just crisp tender. Drain and plunge the beans into an ice bath to stop the cooking. Peel and slice the mango into pieces about the same size as the green beans Roast the red bell pepper, removing the peel and seeds. Cut the pepper into about the same size as the green beans. Remove the stem from the jalapeno pepper, remove the seeds and membranes, and mince the jalapeno finely. Combine the beans, mango, jalapeno pepper and roasted red pepper and mix lightly. Combine the dressing ingredients in a jar and shake well to combine. Taste and adjust for salt. Dress the salad with the dressing. Sprinkle toasted sesame seeds over and serve.

  • Char peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel and seed peppers. Cut into 1/2-inch-wide strips. Transfer to large bowl. Cook beans in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain. Transfer to bowl of ice water to cool. Drain well. Add to bowl with peppers.

Steps:

  • Trim the ends off the beans. Remove the strings if any.
  • Bring to a boil enough water to cover the beans. Add the beans and, when the water returns to a boil, cook until tender, about 8 minutes. Do not overcook. Drain well and put them in a salad bowl.
  • Preheat broiler.
  • Place the pepper under the broiler, and cook it on all sides until the entire skin is well charred. When cool enough to handle, split it in half. Remove and discard the seeds and veins.
