2 cups cherry tomatoes (halved)
1 large cucumber (diced)
1 can chickpeas (drained and rinsed)
½ cup kalamata olives
½ cup feta cheese
1/4 cup olive oil
1 teaspoon dijon mustard
1 tablespoon red wine vinegar
½ teaspoon honey
2 tablespoons lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon dried oregano
salt and pepper to taste
1 tablespoon chopped fresh parsley

Steps:

  • Divide the quinoa, cherry tomatoes, cucumber, chickpeas, olive, and feta cheese evenly among 4 bowls.
  • For the dressing: combine all ingredients in a small bowl and whisk until combined.
  • Drizzle the dressing over the salad and serve.

6 tablespoons extra-virgin olive oil
1 medium onion, finely chopped (1 1/2 cups)
2 cloves garlic, minced (1 tablespoon)
Kosher salt and freshly ground pepper
1 cup quinoa, rinsed and drained several times
2 cups halved cherry tomatoes (12 ounces)
1 bell pepper, halved, seeded, and cut into 1/2-inch pieces (1 cup)
4 mini cucumbers, peeled, halved, and cut into 1/2-inch pieces (1 1/2 cups)
1/2 cup Kalamata olives, halved and pitted
2 tablespoons red-wine vinegar
6 ounces feta, crumbled
1 cup fresh parsley leaves, coarsely chopped if large
1 cup fresh mint leaves, coarsely chopped if large
Pepperoncini, for serving

Steps:

  • Heat a medium saucepan over medium-high. Swirl in 2 tablespoons oil. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion is translucent, 3 to 4 minutes. Transfer onion mixture to a large bowl.
  • Return saucepan to medium-high heat; add quinoa, 1/2 teaspoon salt, and 1 1/2 cups water. Bring to a simmer, then reduce heat to low and cook, covered, until water is absorbed and quinoa is tender, 14 minutes. Remove from heat; let stand, covered, 10 minutes. Fluff with a fork; add to bowl with reserved onion mixture. Let cool to warm room temperature, 15 minutes.
  • Meanwhile, combine tomatoes, bell pepper, cucumbers, olives, vinegar, and remaining 1/4 cup oil. Season with salt and pepper. To serve, spoon quinoa onto plates and top with tomato mixture, feta, herbs, and pepperoncini. Drizzle with some dressing from bottom of bowl, if desired.

1 cup quinoa
1/2 cup red pepper, diced

1/2 cup cucumber, diced

1/4 cup lemon juice
2 tablespoons olive oil

Steps:

  • In a saucepan, bring stock to a boil.
  • Stir in quinoa.
  • Reduce heat to med low and cover.
  • Cook 15 minutes, until liquid is absorbed.
  • Transfer to a large bowl and cool.
  • Stir veggies and cheese into cooled quinoa.
  • Whisk together dressing ingredients.
  • Pour over quinoa mixture and toss.

1 15-ounce can chickpeas, drained and rinsed
1/2 seedless cucumber, chopped
3 large plum or 5 Campari tomatoes, chopped
1/2 red onion, thinly sliced
3 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
1 tablespoon finely chopped fresh oregano, plus more for topping
Freshly ground pepper
1/4 cup crumbled feta cheese (about 2 ounces)
1 small head romaine lettuce, chopped
1/4 cup halved pitted kalamata olives

Steps:

  • Bring 1 3/4 cups water, the quinoa and a pinch of salt to a boil in a medium saucepan. Reduce the heat to medium low; cover and cook until the quinoa is tender and the liquid is absorbed, 10 to 15 minutes. Remove from the heat and fluff with a fork; let cool slightly.
  • Meanwhile, toss the chickpeas, cucumber, tomatoes, red onion, vinegar, 2 tablespoons olive oil and the oregano in a large bowl; season with salt and pepper and let sit 10 minutes.
  • Pulse the feta, 2 tablespoons water and the remaining 1 tablespoon olive oil in a mini food processor until smooth, adding up to 1 tablespoon water, if needed; season with salt and pepper.
  • Divide the lettuce among bowls; top with the warm quinoa, the chickpea mixture and olives. Drizzle with the feta dressing and sprinkle with oregano.

1 tablespoon red wine vinegar
1/4 teaspoon dried oregano
1 clove garlic, smashed and finely chopped to a paste

1 cup quinoa

Steps:

  • Whisk together the lemon juice, vinegar, oregano, garlic and some salt and pepper in a small bowl. Slowly whisk in the oil until emulsified. Let sit at room temperature while you prepare the salad to allow the flavors to meld.
  • Rinse the quinoa in a strainer until the water runs clear. Combine the quinoa, 2 cups water, 1 teaspoon salt and 1/4 teaspoon pepper in a small saucepan, bring to a boil and cook until the water is absorbed and the quinoa is tender, about 15 minutes.
  • Transfer to a bowl, fluff with a fork and let sit for 5 minutes to cool slightly. Add the tomatoes, olives, green onions, cherry peppers, red onions, cucumbers and dressing and toss to coat. Cover and refrigerate for at least 1 hour and up to 8 hours before serving. The longer it sits the better the flavor.
  • Just before serving, transfer to a platter and sprinkle feta on top.

1 cup quinoa
8 ounces reduced-fat feta cheese
1 English cucumber
1 red bell pepper
1 red onion
2 pints cherry tomatoes
2 (15 1/2 ounce) cans garbanzo beans
1 (15 1/2 ounce) can black olives (optional)
1/4 cup olive oil
1/4 cup red wine vinegar
1 lemon, juice of
2 teaspoons oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup fresh parsley, chopped

Steps:

  • Rinse and prepare quinoa per package directions.
  • While the quinoa cooks, prepare the other ingredients.
  • In a large bowl, whisk together juice of 1 lemon, 1/4 cup olive oil, 1/4 cup red wine vinegar, 1/2 tsp salt, and 1/4 tsp black pepper.
  • Chop cucumber, red bell pepper, and red onion. Half or quarter cherry tomatoes. Add to bowl.
  • Next, add 2 cans drained garbanzo beans, and 1 can drained olives (if using).
  • Crumble feta cheese over the top, and add chopped parsley. Gently combine.
  • Once quinoa has cooked and cooled, add to the bowl and combine.
  • If mixture seems dry, you can always add more red wine vinegar or lemon juice.
  • Works well as a main dish over baby spinach, or as a side dish for grilled chicken or fish.

1 cup quinoa
1 1/2 cups water
1 cup chopped green bell pepper
1 cup chopped red bell pepper
1/3 cup crumbled feta cheese
1/4 cup extra virgin olive oil
2 -3 tablespoons apple cider vinegar
1 pinch salt and pepper, to taste
1 -2 tablespoon fresh parsley

Steps:

  • First rinse and drain your quinoa using a mesh strainer or sieve .
  • Bring a medium saucepan to medium heat and lightly toast the quinoa to remove any excess water. Stir as it toasts for just a few minutes. This step is optional but really adds to the nuttiness and fluff factor of the quinoa!
  • Next add your water, set burner to high, and bring to a boil.
  • Once boiling, reduce heat to low and simmer, covered with the lid slightly ajar, for 12-13 minutes or until quinoa is fluffy and the liquid has been absorbed.
  • While the quinoa cooks, chop and prep the remaining ingredients and whisk together your dressing ingredients.
  • Snag your now-fluffy quinoa from the pot and give it a little fluff with a fork.
  • For a chilled salad, you can pop the quinoa in the fridge for a few minutes prior to adding your veggies or simply let it cool on the countertop for a few minutes for a room temperature quinoa bowl. Totally up to you!
  • For the super simple vinaigrette, whisk together olive oil, apple cider vinegar, salt, and pepper. How easy was that!? Pour over your quinoa bowl and toss with a pair of forks or salad servers and dig. on. inches.
  • Add any additional salt and pepper to taste, if desired.
