CRAWFISH MIRLITON (CHAYOTE) SOUP

My Cajun mother makes a wonderful mirliton casserole for the holidays that's always a hit. I had a craving for mirliton and crawfish one day, and pieced together this soup from several recipes and a few traditional Cajun cooking methods. Some people prefer to peel and pit mirliton before using them, but the whole fruit is edible. Crawfish tails are usually mostly cooked before being peeled and bagged, but it's best to be on the safe side. Sauteing them first makes sure that they are fully cooked and flavors the butter for the rest of the soup.

4 cups chicken broth
1/2 tablespoon dried parsley
1/2 tablespoon dried basil
1 lb crawfish tail
2 tablespoons butter
1 small onion, chopped
1 garlic clove, chopped
1/2 teaspoon cayenne
1/2 teaspoon crab boil
4 mirlitons, chopped
salt and pepper

Steps:

  • Stir dried herbs into broth and set aside.
  • Saute crawfish tails in butter until warm and cooked through.
  • Drain butter and crawfish juice into a pot. Set crawfish aside for later.
  • Add onions, garlic, cayenne, and crab boil to butter and cook over low heat until onions are soft.
  • Add mirliton and cook for 2-3 minutes, stirring occasionally.
  • Pour broth into pot, cover, and simmer over low heat. 25 minutes for peeled mirliton, and 30 for unpeeled.
  • Use a food processor or blender to puree soup.
  • Return soup to low heat, and gradually add in crawfish tails. Stir until tails are brought up to the soup's temperature.

Look for chayote at supermarkets, Latin markets, and natural foods stores - it's a light-green pear-shaped squash that's mild and crisp.

2 tablespoons (1/4 stick) butter
2 large chayote squash, peeled, halved lengthwise, pitted, thinly sliced
2 tablespoons chopped fresh parsley, divided
3 garlic cloves, chopped
2 green onions, thinly sliced

Steps:

  • Melt butter in heavy large skillet over medium-high heat. Add chayote, 1 tablespoon parsley, and garlic. Sauté until chayote is crisp-tender, about 3 minutes. Stir in green onions. Transfer to bowl; sprinkle with 1 tablespoon parsley.

4 large chayotes (mirlitons or vegetable pears)
1 large onion, chopped
1 clove garlic, minced (optional)
1/2 cup chopped celery
3 tablespoons shortening
3/4 lb fresh cooked shrimp, cleaned
1 cup grated sharp cheddar cheese, divided
1/4 cup buttered bread crumb
salt and pepper

Steps:

  • Preheat oven to 350F.
  • Parboil mirlitons/chayote/vegetable pears until almost tender.
  • Cut in half and scoop out the meat; mash and set aside, reserving shells.
  • Saute onion and garlic in shortening until translucent; add celery and cook until tender.
  • Add mashed mirlitons, shrimp, 1/2 of the cheese, and salt and pepper to the sauteed vegetables.
  • Fill the reserved shells, cover with remaining cheese and bread crumbs.
  • Bake until crumbs have browned, approximately 30 minutes.

  • Add chayotes cubes to a pot with enough water to cover. Add a little bit of salt and bring to a boil. Cover ajar and let cook for 20 to 25 minutes. Remove from heat and drain, discard water. In a frying pan, add oil and fry the ham or spam cubes until they start turning light brown and then add onion. Stir to mix the following ingredients, parsley, thyme, Mango Gourmet Hot Sauce and pepper to taste. Let mixture cook until onion are halfway cooked. Remove from heat and set aside. To make the béchamel sauce, heat the butter in a saucepan and add flour. Stir to blend. (Best to use a wooden spoon). Once the butter and the flour are well mixed, gradually add milk while stirring. Once the milk is fully mixed with the flour mixture, add grated cheese. Stir and let mixture cook for about 2 - 3 minutes on low heat. Mixture should be thick. Remove from heat and set aside. In a large bowl mix chayotes with meat mixture then fold in béchamel sauce. Add mixture to a prepared buttered dish. Sprinkle
