Steps:
- In a chilled bowl, with chilled beaters, beat the cream and confectioners' sugar together until soft peaks.
- Whisk together the sweetened condensed milk, pudding mix, half-and-half, sour cream and the salt in a large bowl.
- Reserve 4 to 6 cookies for garnish and layer half of the remaining cookies among the bottom of 4 to 6 16-ounce serving dishes (or mason jars), or in a trifle bowl (or other large glass serving dish). Next, drizzle half of the caramel over the cookies, then a layer of half the bananas, then half the pudding mixture. Repeat the layers with the remaining ingredients. Top with the whipped cream and a butter cookie or cookies. Serve or chill up to overnight.

- In a bowl, combine the milk and pudding and mix until well blended.
- In a separate larger bowl, combine cream cheese and condensed milk together and mix till smooth.
- Fold the whipped topping into the cream cheese mixture, then fold the pudding mixture into the cream cheese mixture.
- Line the bottom of a 13x9 pan with a layer of cookies (use the broken ones, if any).
- Place sliced bananas on top of the cookies.
- Spread the pudding mixture on top of the sliced bananas and then top with the remaining chessman cookies.
- Refrigerate until ready to serve.

NANNY'S SOUTHERN 'NANA PUDDIN'
I remember Nanny making this fast and easy pudding for us just like it was yesterday. It's a Southern staple in a Texas household and a must for any type of family gathering in the South. This recipe is so simple and easy you can't go wrong! Nanny's Tip: Make it in a cast iron skillet!

- 1. Combine sugar & flour in skillet on medium high heat. Mix egg yolks and milk in bowl and beat well. Add egg mixture to the flour & sugar in pan and stir well constantly until mixture thickens and begins to boil.
- 2. Remove pudding from the heat and add bananas. Mix together well. Line a glass dish large enough to hold the pudding mixture with 'Nilla wafers and pour pudding over the top of wafers (usually a 9 x 9 x 13" baking dish works well).
- 3. Layer meringue topping over the pudding and smooth over the top of the pudding to each edge. My recipe for meringue topping is listed below.
- 4. Place the dish under the oven broiler just until the meringue browns nicely.
- 5. Chill in the refrigerator for about an hour before serving...if you have the patience!
- 6. Meringue Topping: I use two large bowls for making my meringue, the bottom bowl I fill with about 3" of ice water, then I place the other bowl on top of the other to keep my egg whites chilled while I'm mixing them (metal or glass bowls work best for meringues). Place the egg whites in the bowl and mix on medium gradually adding up to 1 tbs of sugar (more or less according to your sweet tooth), until the eggs begin to form thick peaks. - In a 3-quart heavy saucepan on low heat, add sugar, flour and salt. Pour in the evaporated milk and stir constantly. The mixture will thicken slowly, about 15 minutes.
- Lightly beat the egg yolks in a medium size bowl. Add a ladleful of the thickened milk mixture to the eggs and whisk, to temper the eggs. Add the egg mixture into the saucepan and continue to whisk and cook until incorporated, roughly 2 to 3 minutes.
- Remove the saucepan from the heat and stir in the butter and the vanilla extract. Place the pudding into a bowl and cover with plastic wrap. Let cool in refrigerator for 2 1/2 hours.
- Into a large bowl or trifle dish, add a layer of vanilla wafers, a layer of sliced bananas, and top with pudding. Add the whipped cream and then repeat the layers. Garnish with crumbled cookies on top.
CLASSIC BANANA PUDDING
The key to this simple, but delicious banana pudding is the homemade vanilla custard, which sets up to the perfect consistency. It's not too thick, but not too thin. The addition of a small amount of heavy cream also gives the custard a luscious texture with just the right amount of richness.

- Whisk 1/4 cup sugar, the cornstarch and egg yolks in a large bowl to make a paste. Combine the milk, 1/2 cup each heavy cream and sugar and the salt in a medium saucepan and bring to a simmer over medium heat. Slowly pour the hot milk mixture into the egg yolk mixture while whisking. Return the mixture to the saucepan and bring to a boil over medium heat. Boil, whisking constantly, until smooth and thickened, about 3 minutes. Remove from the heat and whisk in the butter and vanilla. Set the pudding aside to cool slightly, about 10 minutes.
- Spread 1/2 cup pudding in a 2-quart baking dish. Layer about one-third of the banana slices on top, followed by half of the cookies and a heaping cup of the pudding. Top with another one-third of the banana slices and another heaping cup of pudding, then top with the remaining banana slices, cookies and pudding. Cover with plastic wrap and refrigerate 6 hours or overnight.
- When ready to serve, beat the remaining 1 cup heavy cream and 2 tablespoons sugar in a medium bowl with a mixer on medium-high speed until stiff peaks form, about 2 minutes. Spread on top of the pudding. Top with crushed cookies.
MAMA'S BANANA PUDDING

- In a large bowl, place one layer of sliced bananas, then a layer of wafers until bowl is filled, making sure top layer is wafer. Set aside. In a medium saucepan beat eggs, add sugar and mix well, add flour, milk, vanilla. Bring to boil, pour over bananas and wafer mixture. Chill and Serve.
- TIP: FRIED PLANTAINS
- To peel easily, soak in cold water and peel off skin with knife. Cut into 2-inch diagonal slices and fry in 380 degree oil until golden.

- 1. Combine Sugar and Flour in a cast iron skillet over medium high heat.
- 2. Mix egg yolks and milk in a bowl and beat well with a whisk. Add vanilla extract and mix well.
- 3. Add egg mixture to the flour and sugar mixture in the skillet and mix together well, at first using a whisk, then use a wooden spoon to keep stirring. Mix well, you want to get rid of lumps.
- 4. Bring mixture to a boil, while constantly stirring. Bring heat down to medium, keep stirring well until mixture thickens. Remove from heat.
- 5. Add bananas to the pudding and stir well, careful to not break up your banana slices.
- 6. Line the bottom and sides of a 13 x 9 glass pan, or a glass bowl with nilla wafers.
- 7. Pour mixture over the nilla wafers and spread evenly with a spatula.
- 8. Begin making your meringue. I use a big bowl with about 3 " of ice water, then place my mixing bowl over the top to keep my egg whites cold while I beat them (I've had more luck this way, especially on a hot kitchen day)! Add egg whites to bowl and begin mixing them on medium high. Slowly add up to 2 tbs of sugar to the mixture, spinning the bowl to mix your egg whites until stiff peaks form. Your meringue is ready when you have the perfect taste of sweet and stiff enough it sticks to your spatula.
- 9. Spread the meringue over the pudding and place under the broiler in your oven. Keep turning the pudding until you have a nice toasty, even glow on the meringue. Don't forget your oven mitts!
- 10. Enjoy it right away, or let the pudding cool and place in the refrigerator to set before serving.

- Mix together pudding, whipped topping (reserving enough to cover the top), sour cream & milk. Refrigerate at least 1 hour before assembling.
- Before serving make about 3 layers of filling, sliced bananas & vanilla wafers in a serving bowl. Spread remaining whipped topping on top.
- For garnish crush some wafers on top of whipped topping and arrange some slices of banana. Serve immediately or bananas will brown and become runny.
