Steps:
- Beat together all ingredients, except butter, parsley and paprika and spoon into a greased 9x9x2" casserole dish, dot top with butter; sprinkle parsley and paprika over top.
- Refrigerate for at least 1 hour or overnight. Bake in a 400' oven for 35 minutes or until warm throughout.

Steps:
- Preheat the oven to 350 degrees Fahrenheit. Grease a 9x13-inch glass baking dish with butter or non-stick spray.
- Melt 1 tablespoon of butter in a skillet over medium heat. Add the onion and stir and cook until soft and translucent. Remove from heat.
- Melt 1/2 cup of butter in the microwave.
- In a large bowl, combine the sauteed onions, hash browns, 1/2 cup of melted butter, cream of chicken soup, sour cream, cheese, salt, and pepper. Spoon the mixture into the greased baking dish.
- Melt the remaining 3 tablespoons of butter in a large skillet over medium heat. Add the cornflakes and stir until lightly browned, about 2 to 3 minutes. Spread the cornflakes evenly over the casserole.
- Bake for 40 to 45 minutes. Allow the casserole to cool slightly before serving. Enjoy!

- In a large bowl, mix together hash browns, two types of cheese, chopped onion, cream of chicken soup, sour cream and melted butter. - Preheat oven to 350°F
- Melt butter or margarine and set aside.
- In a large mixing bowl combine frozen hash browns, onion, soup, milk, sour cream, cheese, salt and pepper. Pour in 1/2 cup of the melted butter to potato mix, set reserve aside.
- Mix well and transfer to a casserole dish.
- In a separate mixing bowl pour in cornflakes, drizzle remaining butter over cornflakes and continue to mix well until most pieces are lightly coated (cereal will be shiny but not soggy).
- Cover all potatoes with cereal. Cover and bake for about 45 minutes.
- Uncover and continue baking for about 30 minutes. Serve & enjoy!
- (If you are making this ahead of time, cover cooked potatoes and keep warm, uncover and put back in the oven at 400 degrees for about 10 minutes before serving, this will make the topping crispy).

These came from a friend of my Mom's when they did progressive dinners. Always a favorite at every holiday dinner at our house!

- 1. If frozen shredded potatoes are used, thaw first. Spray non-stick spray in cooking dish. Place potatoes in dish, nearly to top. Press down slightly and add more if there is room. Don't mash them down hard though!
- 2. Fill half and half to 2/3 of the side of the cooking dish.
- 3. Cut a stick of butter into 1/2 teaspoon slices, and place all over top of potatoes. Salt and pepper generously over top of dish.
- 4. These can be cooked with other foods that are being prepared and are done when there is a tan edge and some of the potatoes sticking out of the cream are toasted a little.
- 5. For a 13" x 9" pan at 375, these take roughly 45-60 minutes if solo in the oven. This amount serves roughly 8-10 people depending on the other foods being served, and the amount of potato lovers! These are so easy and taste so good!
CHICKEN DIANE WITH CRISPY ROASTED POTATOES
One of my husband's favorite dishes is steak Diane but I'm not a big red meat eater. So, I came up with this chicken version made with a sauce that has the same flavors as the original. I serve it alongside "crispy on the outside but creamy on the inside" roasted potatoes that cook in the time it takes to make the chicken.

- Preheat the oven to 425 degrees F.
- Place the potatoes on a sheet pan. Drizzle with 2 tablespoons of the ghee and toss to coat. Liberally sprinkle with flaky sea salt then arrange all the potatoes cut-side down. Roast in the oven until golden brown, crispy and easily pierced with a paring knife, 18 to 20 minutes.
- While the potatoes roast, prepare the chicken: Liberally season both sides of the breasts with kosher salt and pepper.
- Heat a 10-inch cast-iron skillet over medium heat. Add 1 tablespoon of the remaining ghee followed by the chicken. Cook until golden brown, 3 to 4 minutes per side. (The chicken does not need to be fully cooked at this point.) Remove to a shallow bowl or plate.
- Next, add the remaining 1 tablespoon ghee followed by the shallot and garlic; cook, stirring, until fragrant, about 1 minute. Add the mushrooms and cook, stirring occasionally, until golden brown, 5 to 6 minutes, then season with kosher salt and pepper.
- Remove the skillet from the heat and add the cognac or brandy. Carefully ignite the alcohol with a match and place back on the heat. Cook until the flame subsides, 10 to 15 seconds.
- Add the stock, cream, Dijon and Worcestershire sauce. Stir together and taste for seasoning, adding more salt or pepper if needed. Add the chicken breasts and simmer until the sauce thickens and the chicken is cooked through, about 5 minutes.
- To serve, divide the potatoes between 2 shallow bowls or plates followed by the mushroom sauce and chicken. Sprinkle with the chives, parsley and more pepper.
