- Rub roast with salt and pepper. Heat oil in frying pan. Brown pork roast on all sides in hot oil. Drain well.
- Place apple quarters in bottom of crock pot. Place roast on top of apples. Combine apple juice, brown sugar and ginger. Spoon over top of roast, moistening well. Cover and cook on LOW 10 hours or HIGH 6 hours.

PORK ROAST WITH APPLE MUSTARD GLAZE
Steps:
- Preheat the oven to 350 degrees F. Take the pork out of the refrigerator 45 minutes before you are ready to roast to allow the pork to come to temperature.
- Place the pork into a roasting pan fitted with a rack or onto a baking sheet, fat side up, and season with salt and pepper. Put in the oven and roast for 1 hour. Meanwhile, make the glaze.
- In a saucepan over medium-high heat, bring the apple juice to a boil and reduce it by half, about 10 minutes. Whisk in the brown sugar, soy sauce, Worcestershire sauce, and mustard and simmer until thickened, another 5 to 7 minutes.
- After the pork has roasted for 1 hour, start brushing it with the glaze every 15 minutes. Cook until the roast reaches an internal temperature of 150 degrees F, about 2 hours total cook time. Remove from the oven, give it another coating of glaze, and let it rest, uncovered, for 15 minutes before carving. (Reserve 1 cup of the meat for the Round 2 Recipe Pork Hash).

- Preheat the oven to 450 degrees.
- Place the pork on a platter and dredge well with the cornstarch. Sprinkle with salt and pepper to taste.
- Place in a roasting pan, ribs down, and set in the oven. After 10 minutes, reduce heat to 325 degrees and brush the loin liberally with the maple syrup; reserve remaining syrup. Continue roasting, basting every 7 minutes, until the loin reaches an internal temperature of 155 degrees, about 1 1/4 hours, or until desired degree of doneness.
- Meanwhile, wash, quarter and core the apples (do not peel). Place in a nonaluminum pan with 3 tablespoons of the remaining syrup. Cover and simmer over medium heat until apples burst and are soft, about 15 minutes. Process through a food mill or sieve and set aside.
- When the loin is done, remove from the oven and set aside on a platter. Drain the fat from the pan and pour in the broth and cider. Reduce over medium heat by half. Strain into a sauce boat.
- Serve the roast with the sauce and apple puree on the side.

- In medium saucepan, combine brown sugar, cornstarch, 1/4 teaspoon caraway seed, and salt.
- Stir in 11/2 cups apple juice and lemon juice.
- Cook, stirring, over medium heat until thickened.
- Set aside.
- Place roast in oven-proof skillet.
- Insert meat thermometer.
- Roast at 325 degrees for 1 hour.
- Brush with 1/2 cup apple juice mixture.
- Roast 2 hours longer.
- Spoon combined sauerkraut, apples, carrot, and 1/2 cup remaining apple juice and 1/2 teaspoon caraway seed around pork roast.

Steps:
- Cut apple in half.
- Slice one half fairly thin and put on the bottom of a roaster.
- Place the pork roast on top of the sliced apples.
- Slice second half of apple thinly and put on top of the pork roast.
- Slice onion into rings and put on top and around the roast.
- Mix remaining ingredients and pour over the pork roast.
- Put pork roast into the oven at 325F.
- Every half hour or so baste the roast with the juices.
- Cook for as long as the roast is big.
- Take out and let rest approximately 15 minutes before cutting.

- 1. Adjust oven rack to middle position and heat oven to 375 degrees. Pat pork loin dry with paper towels and season with salt and pepper. 2. Heat 1 tablespoon oil in large skillet over medium-high heat until just smoking. Place pork loin, fat side down, in skillet and cook, turning it several times, until browned on all sides, 8 to 10 minutes. Transfer pork, fat side down, to 13 by 9-inch baking dish and roast until thermometer inserted in thickest part registers 85 degrees, about 25 minutes. 3. While pork roasts, cook remaining tablespoon oil and shallots in empty skillet over medium heat until golden brown, 3 to 5 minutes. Increase heat to high, add cider, apple butter, bay leaf, and thyme and bring to boil. Cook until thickened, about 8 minutes. 4. After pork has roasted for 25 minutes, pour glaze over pork and, using tongs, roll pork to coat with glaze. Cook until internal temperature registers 145 degrees, 20 to 30 minutes more, turning once halfway through to recoat with glaze. Transfer pork to cutting board, tent with foil, and let rest 20 minutes. Transfer glaze to small saucepan and whisk in vinegar. 5. Before slicing pork, pour accumulated juices from roast into glaze and warm glaze over low heat. Cut roast into 1/4-inch slices, transfer to platter, and spoon 1/2 cup glaze over top. Serve, passing remaining glaze at table.

- Preheat oven to 400 degrees.
- To prepare the stuffing, arrange bread cubes in a single layer on a jelly-roll pan. Bake at 400 degrees for 6 minutes or until toasted; set aside.
- Melt butter in a large nonstick skillet over medium-high heat. Add ham; saute 4 minutes or until lightly browned.
- Add onion and next 5 ingredients (onion through garlic); cook over medium-high, heat 5 minutes or until tender.
- Add apple, salt, and 1/4 teaspoon pepper; cook 2 minutes.
- Add bread cubes and apple juice to stuffing mixture, stir gently. Set aside.
- To prepare roast, trim fat from pork.
- Combine garlic powder and next 6 ingredients (garlic powder through 1/4 teaspoon pepper) in a small bowl; rub evenly over pork.
- Place pork on a broiler pan coated with cooking spray; insert meat thermometer into thickest portion of pork.
- Bake at 400 degrees for 30 minutes.
- Combine the jelly, ginger, and lemon rind in a small bowl. Brush jelly mixture over roast.
- Spoon the stuffing onto the broiler pan around pork.
- Cover with foil, and bake at 400 degrees for 15 minutes; uncover and bake an additional 15 minutes or until thermometer reaches 155 degrees, basting pork occasionally with jelly mixture.
- Cover and let stand 10 minutes before slicing.

My husband doesn't like BBQ sauce, but we had a pork roast. I whipped this up in the slow cooker, and it was awesome served with broccoli and rice, and also as pulled pork sandwiches for the 2 kids and hubby for a few days without them getting tired of it! - Preheat oven to 400°F Trim excess fat from roast. Sprinkle with salt and pepper on all sides. In heavy skillet, brown roast on all sides in oil over med. heat. Remove pork and add remaining ingredients to skillet. Cook and stir over med heat until sugar dissolves and mixture comes to a boil.
- Place pork in roasting pan and roast at 400F for 30 minutes.
