FUSILLI WITH GRAPE TOMATOES AND BURRATA
It only takes a few minutes to put together this quick fresh tomato sauce with a kick. We've included a small amount of burrata for a fresh creamy finish in this low calorie weeknight pasta dinner.

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 3/4 cup cooking water and then drain.
- Meanwhile, heat 3 tablespoons olive oil in a large pot or Dutch oven over medium-high heat. Add the garlic and cook until just starting to brown, about 1 minute. Add the tomatoes and a big pinch of salt and cook, without stirring, until the tomatoes start to blister and split, 1 to 2 minutes. Continue cooking, stirring and gently smashing the tomatoes, until they break down, 2 to 4 minutes. Stir in the red pepper flakes.
- Add the pasta and 1/2 cup of the cooking water to the tomatoes. Cook over medium-high heat, gently stirring, until the pasta is well coated, 1 to 2 minutes. Add more cooking water if the pasta is dry; season with salt.
- Divide the pasta among shallow bowls. Carefully cut the burrata into quarters and place on top of the pasta. Lightly season the burrata with salt and pepper and drizzle with the remaining 1 tablespoon olive oil. Sprinkle with the oregano.

GRAPE TOMATO AND OREGANO FOCACCIA
This focaccia's bright colors come from the yellow and red grape tomatoes sprinkled throughout and their complimented by Asiago cheese, garlic, oregano leaves and olive oil.

- In large bowl, stir yeast, sugar and 1/4 cup of the water until blended. Let stand 10 minutes or until yeast is dissolved and foamy. Add remaining 2/3 cup water, 1 tablespoon olive oil, 1 teaspoon salt and 1 tablespoon oregano. Stir in 2 1/2 cups of the flour, slowly adding additional flour as necessary to make dough easy to handle.
- Place dough on lightly floured surface. Knead 10 minutes or until dough is smooth and springy. Grease large bowl with oil. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap sprayed with cooking spray; let rise in warm place 45 minutes to 1 hour or until doubled in size. Dough is ready if indentation remains when touched.
- Meanwhile, about 20 minutes before baking, place pizza stone or cookie sheet on oven rack. Heat oven to 425°F. Line cookie sheet with cooking parchment paper. Gently push fist into dough to deflate. On lightly oiled surface, pat dough to 14x9-inch oval. Place on paper-lined cookie sheet. Cover loosely with plastic wrap sprayed with cooking spray; let rise 20 minutes.
- Meanwhile, in small bowl, mix 1 tablespoon oil and garlic. With fingertips, gently make 1/2-inch-deep depressions about 2 inches apart in dough. Brush with garlic-oil mixture; sprinkle with 1 tablespoon oregano. Sprinkle cheese over dough; top with tomatoes. Gently press tomatoes into dough. Sprinkle with sea salt. Slide dough and parchment paper from cookie sheet onto pizza stone.
- Bake 18 to 20 minutes or until golden brown and crisp. Cool on cooling rack, about 20 minutes. Serve warm or cool.

TOMATO AND OLIVE FOCCACIA

- On a baking pan spread olive oil. Press the pizza dough into the pan until the dough fills pan completely. Cover the dough with a piece of oiled plastic wrap (oiled side down) and allow it to rise, until doubled, up to 1 hour. Scatter tomatoes on risen focaccia. Sprinkle with salt; pepper; oregano; olives and garlic. Set a rack in the lower third of the oven and preheat to 450 degrees. Bake the focaccia for about 25 minutes, or until deep golden. Lift the side of the focaccia with a spatula or pancake turner and check the bottom about halfway through baking time. If it is getting too dark, slide the pan onto another pan to insulate the bottom. To serve immediately, slide the focaccia from the pan to a cutting board. If it will be served later, slide it off the pan onto a rack to cool.

- Add the flour into a bowl (or the bowl of a food processor). Sprinkle the dried yeast in with the sugar and mix. Start adding the water and mix (or pulse). Add the salt and continue to mix adding all the water. Finish as you pour -slowly- the oil and mix (or pulse in the food processor) until it comes together.
- Cut the cherry tomatoes in half, season with minced garlic, a pinch of salt and pepper, and the e.v.o . oil. Let them sit a bit, they will get juicy and flavorful.
- Grease a non-stick cookie sheet or oven tray with e.v.o. oil and, with greasy hands, transfer the dough on the sheet.
