GRANOLA BARS WITH DRIED FRUIT AND SEEDS



Granola Bars with Dried Fruit and Seeds image

A combination of nut butter, dried fruit, and lots of seeds makes these chewy homemade granola bars downright irresistible. For a crispier bar, toast them in the oven after baking.

Number Of Ingredients 12

Nonstick vegetable cooking spray
1 1/4 cups dried fruit (cherries, raisins, currants, cranberries, and/or blueberries), divided
2/3 cup honey
1/2 cup creamy almond, peanut, or sunflower butter
1 1/2 teaspoons ground cinnamon
3/4 teaspoon kosher salt
1 teaspoon vanilla extract
1 1/2 cups old-fashioned oats, divided
1/2 cup raw pumpkin seeds
1/2 cup raw sesame seeds
1/2 cup raw sunflower seeds
1/2 cup unsweetened coconut flakes

Steps:

  • Preheat oven to 325°F. Lightly coat a 13x9" pan with nonstick spray and line with parchment paper, leaving an overhang on both long sides; spray parchment.
  • Pulse 3/4 cup fruit and 1/2 cup hot water in a food processor until smooth and incorporated, 3-4 minutes. Add honey, almond butter, cinnamon, salt, and vanilla and pulse until combined, about 15 seconds. Add 1/2 cup oats and pulse until well combined, 30-45 seconds. Add pumpkin seeds, sesame seeds, sunflower seeds, coconut, and remaining 1 cup oats and 1/2 cup fruit. Pulse until just combined, about 15 seconds.
  • Transfer mixture to prepared pan, pressing down until completely even. Bake granola until darkened, firm around the edges, and the center gives just slightly when pressed, about 35 minutes. Transfer pan to a wire rack and let cool in pan. Remove granola using parchment overhang, then cut into 20 bars with a serrated knife.

  • Granola can be made 5 days ahead. Keep tightly wrapped at room temperature.

2 cups old-fashioned oatmeal
1 cup almonds, (chopped)
1 cup unsweetened coconut, (shredded)
3 tablespoons butter
2/3 cup honey
1/4 cup brown sugar, (lightly packed)
1 1/2 teaspoons vanilla extract
1/4 teaspoon kosher salt
1/2 cup pitted dates, (chopped)
1/2 cup dried figs, (chopped)
1/2 cup raisins
1/2 cup sunflower seeds
1 cup cinnamon chips

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 9 x 13 inch baking dish and line it with parchment paper.
  • Toss the olatmeal, almonds and coconut together on a sheet pan and bake for 10 minutes, until lightly browned. Stir halfway through the baking time.
  • Reduce oven temperature to 300 degrees.
  • Place the butter, honey and brown sugar in a small saucepan and bring to a gentle boil over medium heat. Remove from the heat and stir in vanilla and salt.
  • Pour the oatmeal, almonds and coconut into a large bowl.
  • Pour the melted butter/honey mixture over the oat mixture. Add the dates, figs, raisins and sunflower seeds and stir well.
  • Pour the mixture into the prepared pan. Lightly press the mixture evenly into the pan. bake for 25 to 30 minutes, until light golden brown.
  • Cool for at least 2 hours before cutting into squares.
  • Place the cinnamon chips in a microwave-safe bowl. Microwave at medium for 45 seconds; stir. If necessary, microwave at medium an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred.
  • Using a knife or the back of a spoon, spread the melted cinnamon chips over each granola square. Place the squares onto parchment until set.

3 cups quick-cooking oats
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter, melted
1 cup flaked coconut
1 cup sliced almonds
1 cup miniature semisweet chocolate chips
½ cup sweetened dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together the oats, sweetened condensed milk, butter, coconut, almonds, chocolate chips and cranberries with your hands until well blended. Press flat into the prepared pan.
  • Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars. Let cool for 5 minutes, cut into squares then let cool completely before serving.

150g Oats
100g butter
3 tbsp honey
200g dried mixed fruit
50g peacan nuts
3 tbsp sunflower seeds

Steps:

  • Put oven on 190C. Then line 18cm baking tray with grease proof paper.
  • Melt butter in a saucepan on a low heat (or in the microwave for speed). Then add in honey.
  • Add in dried fruit, chopped nuts, seeds and oats. Mix together well.
  • Pour mixture into baking tray. Bake in the oven for 15-20 minutes.

2 1/2 cups rolled oats
1 cup chopped nuts (I use walnuts, almonds and a small handful of sunflower seeds)
1 cup chopped dried fruit (I use dried apricots and dried cherries)
1/2 cup honey
3 tablespoons brown sugar
2 tablespoons butter (optional)
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees.
  • Grease an 8x8 glass pan.
  • Place nuts and oats on a baking sheet, and bake for about 12 minutes or until lightly toasted.
  • While oats and nuts are toasting, place in a saucepan over medium heat the honey, brown sugar, butter, vanilla, cinnamon and salt.
  • Stir until the mixture bubbles, and keep it boiling and stirring for about 2 minutes.
  • When oats and nuts come out of the oven, turn it down to 325.
  • Take the pan off the heat, and when the oats are finished, pour them right into the saucepan and mix to combine honey mixture evenly.
  • Stir in the chopped dried fruit.
  • Press mixture into the glass pan with the back of a spoon - it will be pretty sticky.
  • Bake at 325 for 20 minutes, and let cool completely before cutting.
  • Wrapped in saran wrap, these will keep for at least a couple of weeks!

Here is a good alternative to a commercially made granola bar. It's a flexible recipe, allowing for any number of additions: dried cherries, pistachios, peanuts, dates, orange zest. You could substitute a dried fruit purée (directions are in the notes) for the honey and brown sugar, providing a complex twist on the binding agents. You could add chocolate. Coconut. The possibilities are endless.

1/2 cup packed brown sugar
1/4 cup neutral oil, like grapeseed or corn
3 cups any good, not-too-sweet granola

Steps:

  • Put the honey, brown sugar, and oil in a small pot and bring to a boil. Put the granola in a large bowl and pour the sugar mixture over the top while mixing; stir until the granola is well coated.
  • Press into an 8- or 9-inch square pan and let cool in the fridge. Cut into squares or rectangles and serve. Store in an airtight container for up to 4 days.

These bars are a healthy on the go snack. My picky kids love them and my even pickier hubby loves them! They taste great warm or cold out of the fridge. Portable and packed with nutrition these bars are perfect for families on the go!

2 cups puffed brown rice cereal (unsweetened)
2 cups old fashioned oats
1/4 cup roasted almonds, chopped
1/4 cup roasted sunflower seeds
1/2 cup shredded coconut
1/2 cup dried fruit, chopped
1/2 cup peanut butter
1/2 cup brown rice syrup or 1/2 cup honey
1 teaspoon vanilla
1 cup mini chocolate chip (optional)

Steps:

  • Combine cereal, oats, nuts, seeds, coconut and fruit in a large mixing bowl.
  • Heat the peanut butter, syrup, and vanilla in a small sauce pan until warm. Do not boil.
  • Pour the peanut butter mixture over the cereal mixture. Mix well while syrup is still warm. I use my hands as they are the best tool for this mixing job!
  • Pour mixture into a 9x13 pan.
  • Pack the mixture down firmly with moist fingers or the bottom of another 9x13 pan sprayed with cooking spray.
  • The chocolate lover should sprinkle on the mini chocolate chips at this point and press them in firmly.
  • Cover with plastic wrap.
  • Cool completely.
  • Cut into 24 bars.
  • Wrap individually and store in fridge.
  • I have kept these in the fridge for 2 weeks and they still taste fabulous!

  • Line an 8×8 baking pan with a sheet of aluminum foil, leaving a few inches of overhang on the sides to allow for easy removal. Generously spray the foil with cooking spray and set aside.
  • Add dates and cinnamon to the bowl of a food processor and process until the dates have broken down into a paste, stopping to scrape down the sides of the bowl as necessary. If your dates are too dry and you’re having trouble processing them, add a splash of water to get things moving. Be careful not to add too much, though, because you want the paste to be quite thick.
  • Transfer the date paste to a large bowl and add remaining ingredients, mixing well to ensure that everything is fully combined.
  • Transfer the mixture into your prepared baking pan, using your fingers or a spatula to ensure that it is pressed down firmly and evenly. Cover and refrigerate for at least 1 hour before using a sharp knife to cut into bars. Store bars in an airtight container in the fridge.
