GRANNY'S OAT CAKES
A fabulous snack for anyone, it tastes great!!!

Steps:
- Melt the margarine and syrup
- Add sugar to mixture until it is all melted
- Take the saucepan off the heat
- Stir in the oats
- Put them in a non stick baking tin/ grease proof paper - 10 inches by 12 inches
- Put the mixture in the tin - spread it evenly
- Set oven to Gas mark 5 and put in the mixture for 20 minutes
- Take them out and cut it into 24 bars while it is hot
- Leave to cool in tin
- Take it out the tin and eat!!!

Steps:
- Preheat oven to 350º F and lightly grease a 9x13-inch baking dish with butter or non-stick spray.
- In a large bowl, whisk together sugar, flour, baking soda and salt, then mix in eggs and pineapple.
- Pour batter into your pan and top with an even layer of pecans and brown sugar.
- Place baking dish in oven and bake for 40-45 minutes, or until toothpick inserted in center comes out clean.
- While cake cooks, combine evaporated milk, sugar and butter in a medium saucepan over medium-high heat and bring to a boil.
- Remove from heat and stir in vanilla extract, then pour over hot cake.
- Let cake cool so it absorbs icing, then slice, serve and enjoy.
NOVA SCOTIA OATCAKES
Steps:
- Preheat oven to 400 degrees and line baking sheet with parchment paper.
- Dissolve baking soda in hot water (add a little more water if needed).
- Combine dry ingredients with butter, then add dissolved baking soda.
- Mold into a dough ball, then press it out onto a baking sheet. You can roll it out with a dough pin to make it thin as you want it to be (I recommend about 1/4 inch thick.)
- Cover and chill for 10-15 minutes to firm up the dough, then remove the oatcakes and score down the middle and across to make 8-10 squares (you'll use these lines for clean cuts after it's done baking).
- Bake for 12-15 minutes until they are golden brown. They should be crisp and crunchy, not chewy.
- Separate the cakes along the score lines with a thin knife and then allow them to cool.
- Enjoy with your favorite coffee or tea or add them to your day pack for some quick energy during a hike or a long road trip.

GRANNY'S POUND CAKE
This is my Granny's pound cake. One year my dad took one to work with him. All of the men he worked with were asking him if they could buy a cake from Granny. She sold those cakes for $20 each and had to tell my dad she wasn't making any more before they left her alone. That's how she got her Christmas money that year, and it was a very good Christmas. She passed away about 2 years ago, and I thought this recipe was lost. Fortunately my Grandma had it and now I have it. Here it is.

Steps:
- DO NOT PREHEAT THE OVEN.
- Mix butter and shortening until lightly mixed.
- Mix sugar in one cup at a time.
- Mix eggs in one at a time.
- Mix milk and flour in alternately.
- Grease bunt pan and pour in batter.
- Put your batter in a COLD oven.
- Bake at 300 degrees for 1 hour and 30 minutes, or till toothpick comes out clean.
- Remove from oven and then from pan.
- "Sweat" the cake, by wrapping it in wax paper and tinfoil, until it cools. This will make it moist. It won't be anywhere near as good if you don't do this.

GRANDMA NANCY'S OATMEAL CAKE
My Grandma used to bake this cake, only to have the whole thing disappear. She finally found out my Grandpa was taking it to his shop and hiding it in a drawer to snack on as he worked. It looks complicated, but it isnt, and the flavor is worth it. Every time I eat it I think of my grandparents and smile!

Steps:
- Pour hot water over oatmeal; set aside.
- Cream together sugars and shortening, then add eggs.
- Sift together dry ingredients and add to the wet.
- Stir in oatmeal and vanilla.
- Pour into greased 9 x 13 cake pan and bake for 1 hr and 10 minutes at 350° and then top with topping.
- Topping: Combine butter, milk and sugar in a small saucepan.
- Bring to a boil and continue to boil 1 minutes and add coconut, nuts and oatmeal.

- Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
- Whisk together flour, baking powder, soda and salt.
- Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
- Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.

- Stir the flour, baking powder, sugar and salt together.
