2 cups flour
1 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
4 tablespoons shortening
1 large egg, lightly beaten
milk
1 teaspoon vanilla extract
butter

Steps:

  • Combine flour, sugar, salt, cinnamon and baking powder.
  • Cut in shortening, reserve 1/2 cup; set aside.
  • Place beaten egg in a measuring cup and add enough milk to equal one cup.
  • Add vanilla and combine with flour mixture, mix well.
  • Pour into a greased 8 x 8 pan.
  • Sprinkle with reserved dry mixture.
  • Dot with butter, sprinkle with sugar and cinnamon.
  • Bake 25 minutes at 375°.

This is a recipe my grandmother made all the time. I didn't like raisins, so she always made half without. Was I spoiled, or what? Like many of her old recipes that I have found, she didn't have instructions, just ingredients. (she used a wood stove to cook until I was in junior high (1960s), so many of her recipes just said bake in a hot oven, etc.) I tend to write down ingredients but no directions myself! NOTE: See step #8 for directions on baking as an oblong cake.

1 cup sugar
3/4 cup butter, softened
2 cups flour
1 cup raisins
1 cup sour milk (or buttermilk)
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 eggs

Steps:

  • Pre-heat oven to 350°F.
  • Line muffin tins or cupcake tins with paper cupcake liners.
  • With pastry knife or fingers, cut butter into flour and sugar until crumbly. Reserve 1/2 cup for topping.
  • Add remaining ingredients to flour mixture and stir until just mixed.
  • Fill cupcake liners 2/3 full and sprinkle reserved crumb mixture evenly over tops.
  • Bake 20-25 minutes.
  • Cool on wire rack.
  • To make a cake, pour batter into a greased and floured oblong baking pan and top with reserved crumbs. Bake as above.

3 cups cake flour
1 cup sweet butter
3 teaspoons baking powder
1 teaspoon salt
2 cups super fine sugar
4 large eggs
1 cup milk
1 1/2 teaspoons vanilla extract
1 teaspoon lemon extract
1/2 teaspoon almond extract
2 cups dark brown sugar
1 stick butter
3 to 4 cups confectioners sugar, sifted
8 to 10 tablespoons heavy cream

Steps:

  • Preheat gas oven 350 degrees, electric 325 degrees. All ingredients should be room temperature. Grease and flour 2 (9-inch) round cake pans. Sift flour, add baking powder and salt. Set aside. On medium speed, cream butter and sugar, until light and fluffy. (Or 150 strokes by hand.) On medium speed, (or another 150 strokes) add 1 egg at a time. After 2 eggs add 2 tablespoons flour. Add flour mix alternating with the milk, ending with the flour. Add extracts. Place cake pan in middle of oven. Pans should not touch. Baking time approximately 35 minutes.
  • In a hot cast-iron skillet or heavy saucepan melt butter and brown sugar together on high heat, stirring until sugar is thoroughly melted. Transfer into mixing bowl and, using mixer on low speed, starting and ending with confectioners' sugar; alternately add heavy cream with vanilla, beating until frosting becomes spreadable. Spread on cooled cake.;

2 whole pound cakes (you can make them yourself or buy them)
2 large tubs Cool Whip
2 cans canned blueberries
2 cans canned cherries
3 cans crushed pineapples (drained) or 2 cans strawberries
1 Punch Bowl

Steps:

  • Cut the pound cake into slices. Crumble the pound cake in the bottom of the punch bowl to form the first layer. Then smooth a layer of Cool Whip over the pound cake until it is completely covered. Then make a layer of the canned blueberries.
  • Repeat pound cake layer, then Cool Whip, Then cherries. Repeat pound cake layer, then Cool Whip, Then pineapples or strawberries. Continue these steps till the punch bowl is full but leave room at the top for another fruit layer.
  • For the top, take and make a ring around the edge of the bowl with the fruit of your choice, either the blueberries, cherries, pineapples or the strawberries. Then do another ring on the inside of that ring with another fruit, and then fill in the center with the other one. Chill then serve.

1 cup (2 sticks) butter or margarine, softened
2 cups sugar, divided
6 eggs
2 tsp. vanilla
1 cup flour
1 cup creamy wheat (enriched farina) hot cereal (1-minute, 2-1/2-minute or 10-minute cook time), uncooked
2 tsp. baking powder
1 cup water

Steps:

  • Preheat oven to 350°F. Beat butter and 1 cup of the sugar in large bowl with electric mixer until light and fluffy. Blend in eggs and vanilla. Add flour, cereal and baking powder; mix well. Pour into lightly greased 13x9-inch baking pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Meanwhile, mix remaining 1 cup sugar and water in small saucepan. Bring to boil on medium-high heat. Boil 5 minutes.
  • Remove cake from oven. Immediately pour hot sugar mixture over cake. Cool cake completely in pan on wire rack. Cut into 24 squares to serve.

3/4 cup vegetable oil
2 1/4 cups flour (I use all purpose and it turns out fine)
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1 cup brown sugar
3/4 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 cup buttermilk (the dry buttermilk found in the baking section of the store will work, just follow the package instr)
1 egg, slightly beatten
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Mix flour, salt, and 1/2 teaspoon of cinnamon into a large mixing bowl. Add sugar and oil and mix on medium speed until well blended and feathery.
  • Remove 3/4 cup of this mixture and put in a smaller mixing bowl for the topping. Add walnuts and remainder of cinnamon to the contents of the smaller bowl for the topping, mix well and set aside for later.
  • To remaining mixture (not the topping) add baking soda, baking powder, egg and buttermilk. Mix until smooth, this is the coffeecake batter.
  • Spoon the cake batter into a buttered 9 x 13 baking dish. Sprinkle the topping over the cake batter and press lightly with fingers. Bake at 350 degrees for 25 - 30 minutes.

After making more of these pound cakes than I can count over the holidays, I've decided to share this fabulous recipe. This is my grandmother's, and it definitely packs on the pounds! Don't leave this lying around your house, because you will eat it all! I also decorate the top with colored sugars depending on the holiday or event.

1 cup unsalted butter, softened
3 cups white sugar
6 large eggs, at room temperature
3 cups all-purpose flour
¼ teaspoon baking soda
1 (8 ounce) container sour cream, at room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
2 tablespoons powdered sugar, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch tube pan.
  • Beat butter with an electric mixer until soft and creamy, scraping the sides of the bowl as you go, about 2 minutes. Gradually add in sugar on medium speed. Add eggs one at a time, beating after each addition until the yellow disappears from the previous one.
  • Combine flour and baking soda in a bowl. Add sour cream to the creamed butter mixture alternately with the flour, ending with sour cream. Beat in vanilla and almond extract just until combined. Pour batter into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 20 minutes. Cool on a wire rack for 5 minutes.
