CRAB SALAD

Steps:
- In a medium bowl, lightly toss the crabmeat, celery, chives, and tarragon together.
- In a small bowl, stir together the mayonnaise, sour cream, lemon juice, and mustard. Add the dressing to the crabmeat mixture and stir until just coated. Season with salt and pepper to taste. If not using right away refrigerate until ready to serve.
- Serve on toasted rolls or on a bed of lettuce.
CRAB SALAD SANDWICHES

- Coarsely chop or break apart the imitation crab into small pieces.
- Finely chop the celery.
- Toss the celery, crab, salt, and pepper, in a medium-sized bowl.
- Stir the mayonnaise, lemon juice, old bay seasoning and dill together in a bowl or cup.
- Pour the mayonnaise mix over the crab and toss gently to coat.
- Fill your croissant with the mixed crab meat and garnish with green onion on top if desired.

BREAD AND CRAB SALAD
Here's something really different; crab salad made with bread! Everyone in my family loves this stuff. It's very rich, so for health reasons I don't make it very often. You can also use shrimp or a combination of crab and shrimp. The amount of butter is an estimate, and time doesn't reflect the overnight refrigeration. Let me know what you think!

Steps:
- Cut off crusts of bread and discard or save for another use.
- Butter both sides.
- Cut each slice into 16 cubes and refrigerate overnight.
- Next day add Swiss cheese, celery, green onions, crab, and eggs.
- Gently stir in mayonnaise, salt and pepper to taste, and refrigerate until serving time.

SAMPHIRE & CRAB SALAD

Steps:
- Heat the oven to 220C/200C fan/gas 7. Tear the bread into rough chunks and put in a bowl with ½ tbsp rapeseed oil and a little seasoning. Toss well, then tip onto a baking tray. Bake for 8-10 mins until golden. Set aside.
- Bring a large pan of water to the boil and cook the samphire for 3 mins before draining and plunging into ice-cold water. Leave to cool for a few minutes before draining.
- To make the dressing, combine the lemon juice, crème fraîche, remaining 1 tbsp rapeseed oil, the brown crabmeat and dill, if using, in a small bowl. Season, mix to evenly combine and set aside.
- Mix the watercress and drained samphire together in a large bowl, drizzle over the dressing and toss well to coat. Serve on a platter or divide between plates, then top with the white crabmeat and croutons.

- Bring a large pan of salted water to the boil and cook the asparagus for 2 mins until just cooked. Drain, tip into iced water to refresh and drain again. Cut each spear on the angle into 2-3 pieces.
- For the dressing, mix all the ingredients with brown crabmeat, if you have it. Toss the asparagus through the dressing, then build a nest of asparagus spears on plates. Place some white crab meat in the centre of each nest, top with a small bundle of rocket and drizzle everything with olive oil before serving.

CRAB SALAD SANDWICH (BROWN BAG RECIPE)
This is a very simple recipe I threw together...nothing fancy...just a brown bag recipe to give a little variety at the office...I get so tired of ordinary sandwiches. I like to take this spread separately in a tupperware container and then take along toasted wheat bread in a ziploc and slices of tomatoes in another ziploc bag and assemble at work so it is not soggy. Very easy and really quite tasty. I suppose you could also add olives if you like them.
