GRANDMA'S OLD FASHIONED OATMEAL



Grandma's Old Fashioned Oatmeal image

This isn't my Grandmother's recipe. I have had it over 10 years and don't remember where I got the recipe. I am guessing at the time it takes to make this.

2 1/2 cups water
1/8 teaspoon salt
2 cups dry oatmeal
2 tablespoons sugar
1/2 teaspoon cinnamon
1 (5 ounce) can evaporated milk
3 tablespoons butter
2 tablespoons brown sugar, to taste

Steps:

  • Bring the 2 1/2 cups water to a boil.
  • Then add the salt.
  • While stirring constantly, gradually add the oatmeal.
  • Continue to stir the oatmeal and add the sugar and cinnamon.
  • Cook 1 minute and add the evaporated milk.
  • After adding the evaporated milk reheat to boiling.
  • Pour oatmeal in a serving dish and top with the butter and brown sugar.

1 ½ cups rolled oats
1 cup whole wheat flour
½ teaspoon salt
1 tablespoon white sugar
1 teaspoon ground cinnamon
½ cup water
5 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Place the rolled oats into a blender or the work bowl of a food processor, and pulse several times to grind them into coarse flour. Stir the oat flour together with whole wheat flour, salt, sugar, and cinnamon in a bowl. Pour in the water and olive oil, and mix to form a soft dough. Place the dough onto the prepared baking sheet, and roll out 1/8-inch thick. Using a knife, partially slice through the dough in desired shapes.
  • Bake in the preheated oven until just barely brown, 10 to 15 minutes. Watch carefully, as they burn easily. Allow to cool completely on baking sheet before breaking along score lines into individual crackers.

1 cup rolled oats
1 ¼ cups boiling water
½ cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 ⅓ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon vanilla extract
6 tablespoons melted butter
1 ½ cups packed brown sugar
¾ cup evaporated milk
1 ½ cups flaked coconut
1 ½ cups chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Pour water over oats, let stand.
  • Cream 1/2 cup butter or margarine and sugars. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.
  • Pour batter into a 9 x 13 inch pan.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 30-40 minutes.
  • To Make Icing: Mix together 6 tablespoons melted butter, 1 1/2 cups brown sugar, 3/4 cup evaporated milk, coconuts, nuts, and 1 teaspoon vanilla.
  • Pour this coconut concoction over the hot cake.
  • Put cake under broiler, and watch close so nuts don't burn, about 5-10 minutes. Serve hot or let cool. Enjoy.

1 pound pitted dates, quartered
1-1/2 cups water
1/2 cup sugar
1-1/2 cups all-purpose flour
1-1/2 cups old-fashioned oats
1 cup packed brown sugar
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon almond extract
3/4 cup shortening
Whipped cream, optional

Steps:

  • Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes. Remove from heat., In a large bowl, combine flour, oats, brown sugar, vanilla, baking soda, salt and almond extract. Cut in shortening until crumbly. Press half onto bottom of a greased 13x9-in. baking dish. Carefully spread with date mixture. , Sprinkle remaining crumb mixture over filling; press down gently. Bake until lightly browned, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, serve with whipped cream.

1 cup cottage cheese
2 eggs
3 tablespoons wheat germ

1 (10 1/2 ounce) can mushroom soup
2/3 cup water

Steps:

  • Mix all ingredients together (except mushroom soup and water).
  • Form into patties.
  • Fry in a little oil until golden brown.
  • Place in cooking sprayed 9 x 13-inch pan.
  • Cover with Mushroom Sauce.

This is similar to the other recipes posted here, but with a couple changes. I went ahead and posted it, as my Grandma made these every year at Christmastime and they are extremely addictive!!! I guessed on the servings...if you're like me, you make a pig of yourself and don't share, so it's a 1 serving recipe!!! ;) **Note, due to a few reviewers saying these were too oily, I changed the oil amount!**

2 cups shortening
2 cups brown sugar
½ cup white sugar
4 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
1 ½ teaspoons baking soda

1 teaspoon ground allspice
1 teaspoon ground cloves
6 cups rolled oats
1 cup milk
2 cups raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt, cinnamon, allspice and cloves; stir into the sugar mixture until well blended. Mix in the rolled oats alternately with the milk. Finally, stir in the raisins. Drop by heaping spoonfuls 3 inches apart onto the prepared cookie sheets.
  • Bake in the preheated oven for 10 to 11 minutes, or until edges are golden and tops are dry. Cool on cookie sheets for 1 minute before removing to cool on wire racks.

Also, reduce baking soda to 1 1/2 teaspoons and cinnamon to 1/2 teaspoon. Raising the oven temperature a little—to 300 degrees F—will help with browning and still keep the cookies chewy.
