GRANDMA'S OLD-FASHIONED SWEET RELISH

Grandma's Old-fashioned Sweet Relish image

This is scrumptious. It is my Grandma Florence's, and she called it "Hamburger Relish". Simple and easy, I can it in pints and give it for Christmas. I've never found any as good.

Number Of Ingredients 10

Ingredients

4 quarts ground cucumbers
1 quart ground onion
4 cups ice cubes
5 tablespoons sea salt
6 cups vinegar
6 cups sugar
2 teaspoons turmeric
1 1/2 teaspoons celery seeds
3/4 teaspoon ground cloves
2 tablespoons mustard seeds

Steps:

Combine cukes, onions, ice and salt.
Let stand for 2 hours,.
then drain.
Mix the next 6 ingredients in a large pot.
Bring to a boil, add ground cuke mixture, and cook for 20 minutes, or until it begins to thicken.
While still hot, seal in sterilized jars.
As far as preparation time, I use Grandma's old hand grinder, so I'm sure it would be much faster with a motorized food grinder.

This is a recreation of something my husband's grandmother made all the time when he was a kid in the 80's before she passed. I got bits and pieces of what she did from family members. This is not what I consider creole food, but it is quite tasty and really cheap and filling meal!

8 slice bacon, chopped
3 c onion, chopped
1 can(s) diced tomatoes, 16 oz
1 can(s) crushed tomatoes, 28 ounces
1 lb hot dogs, cut into chunks
1 bay leaf
2 Tbsp dried minced garlic
1 tsp cajun seasoning
1/8 tsp cayanne pepper
1/2 tsp oregano, dried
1/2 tsp crushed dried thyme
1/2 tsp smoked paprika
1/2 tsp sweet paprika
1 tsp dry mustard powder
salt and pepper to taste
1 c cooked rice, preferably white

Steps:

1. In large pot saute the bacon and onion till onion is soft and bacon is cooked.
2. Stir in tomatoes and seasonings. Bring to boil, reduce heat to low, let simmer 10 minutes.
3. Add hot dogs, stirring well. Cover with tight lid and cook 15 minutes.
4. Stir in rice. Remove bay leaf. Let simmer 5 minutes. Serve!

This is a Meat Sauce from Upstate New York that is used on top of Hot Dogs. When I grew up it was used on steamed hot dogs and steamed rolls, sometimes with raw onions (for those who like them) on top! Very good... thanks Grandma Slattery for getting the recipe!

Ingredients

1 tablespoon butter
1 onion, chopped
2 tablespoons white vinegar
2 tablespoons brown sugar
3 tablespoons lemon juice
½ tablespoon prepared mustard
3 tablespoons Worcestershire sauce
1 pound lean ground beef
1 cup ketchup
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
salt and pepper to taste

Steps:

Melt butter in a saucepan over medium heat. Saute the onion in butter until soft. Stir in the vinegar, brown sugar, lemon juice, mustard, Worcestershire sauce, ketchup, tomato sauce, and tomato paste. Stir to blend.
When the mixture begins to simmer, add the raw ground beef breaking it into pieces with a wooden spoon. Simmer for 20 to 30 minutes. Serve over steamed hot dogs. Of course you can add some raw onions if you want.
