This cheesecake is essentially fat-free! And guess what? It tastes exactly like (or in my opinion better than) regular cheesecake. Full of protein, this is an excellent choice for breakfast, snacks, or dessert if you are looking to stay lean (and in some cases, mean). Any fruit, chocolate, etc., can be added if you'd like!

1 cup graham cracker crumbs
½ cup oats
⅓ cup water
¼ cup defatted soy flour
1 ounce fat-free cream cheese, softened
2 ½ (8 ounce) packages fat-free cream cheese
12 ounces fat-free small curd cottage cheese
¾ cup skim milk
½ cup liquid egg substitute (such as Egg Beaters®)
1 ¾ cups granular sucralose sweetener (such as Splenda®)
1 cup non-fat plain Greek yogurt (such as Fage® Total 0%)
¼ cup defatted soy flour
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch pie pan.
  • Pulse graham cracker crumbs, oats, water, soy flour, and cream cheese together in a food processor or blender on high until smooth. Press crust mixture into greased pie pan.
  • Mix cream cheese, cottage cheese, milk, and liquid egg substitute in a blender until completely smooth. Pour into a large mixing bowl. Add sweetener, yogurt, soy flour, and vanilla extract and mix well. Pour filling into crust.
  • Bake in the preheated oven until top begins to brown, about 1 hour. Let cool completely, 3 to 4 hours. Refrigerate until serving.

2 cans refrigerated crescent dinner rolls
2 (8 ounce) packages cream cheese
1 cup sugar
1 egg, divided
2 teaspoons vanilla
1/2 cup sugar
1/2 cup chopped pecans
cinnamon

Steps:

  • Press one can of crescent rolls in bottom of a greased 9 x 13 casserole dish.
  • Mix cream cheese, sugar, egg yolk and vanilla until smooth.
  • Spread over crescent rolls.
  • Roll out another can of crescent rolls and place on top of cream cheese.
  • Beat egg white and brush on top.
  • Combine topping ingredients and sprinkle on top.
  • Bake at 350 degrees for 30 minutes.

21 ounces cream cheese (preferably unsalted) or 21 ounces mild goat cheese, softened (preferably unsalted)
5 tablespoons unsalted butter, melted and cooled slightly
3 tablespoons fine semolina or 3 tablespoons whole wheat pastry flour
1 large pinch sea salt
1/2 cup superfine sugar
2 eggs, lightly beaten
2 small oranges, zest of, finely grated
1 tablespoon fresh squeezed orange juice
3 tablespoons raisins (optional)

Steps:

  • Preheat oven to 325°F Generously butter a 9" springform pan.
  • Using a wooden spoon, stand mixer with paddle attachment or food processor, beat cheese until soft and smooth. Add melted butter, grain product (oats, semolina or flour), salt, sugar, eggs, orange zest and orange juice. Add raisins, if using (if using a food processor, fold them in by hand).
  • Pour mixture into prepared pan. Bake in preheated oven until just barely set and still wobbly in the center, about 25 minutes.
  • Serve hot, warm or at room temperature. Serve with fresh fruit, fruit compote, jam, yogurt or sour cream, or any combination thereof. For dessert, dust with confectioner's sugar and serve with whipped cream.

  • Preheat the oven to 350. In a large food processor pulse the almonds, 2 tbsp sweetener, and 4 tbsp butter until a coarse dough forms. Grease two twelve hole standard silicone muffin pans or line metal tins with paper or foil cupcake liners. I used a silicone muffin pan for this and the cheesecakes popped out really easily. Divide the dough between the 24 holes and press into the bottom to form a crust. Bake for 8 minutes.
  • Meanwhile, combine the Friendship Dairies 4% cottage cheese and the cream cheese in the food processor (you don’t need to wash the bowl). Pulse the cheeses until smooth. Add the sweetener and extracts. Mix until combined.
  • Add the eggs. Blend until smooth. You will need to scrape down the sides. Divide the batter between the muffin cups.
  • Bake for 30-40 minutes until the centers no longer jiggly when the pan is lightly shaken. Cool completely. Refrigerate for at least 2 hours before trying to remove them if you didn’t use paper or foil liners. Serve with thawed frozen berries.
