It is very safe to say that I am addicted to making fruit cups. We eat them every morning for breakfast, and I am constantly trying new combinations of fruit. This is my latest- my favorite so far.

Yield 16 1-cup servings

Number Of Ingredients 7

16 ounces frozen sweetened strawberries, thawed
12 ounces pineapple-orange juice concentrate, thawed
2 (20 ounce) cans crushed pineapple, undrained
2 (11 ounce) cans mandarin oranges, undrained
6 bananas, diced (yellow but not too ripe)
1/3 cup lemon juice (bottled is fine)
16 ounces frozen blueberries

Steps:

  • Combine all ingredients in a very large bowl.
  • Freeze in 1-cup increments.
  • Thaw slightly before serving, to a slushy consistency.

My grandma passed away quite awhile ago, but this is one thing that really reminds me of her. She would make tons of it and freeze it to have enough all year long. We usually just used old yogurt cups and other random plastic containers with lids to make these in.

1 1/3 cups water
1 2/3 cups sugar
12 ounces frozen orange juice concentrate
water (5 orange juice cans full)
2 tablespoons lemon juice
2 lbs crushed pineapple
fruit (Fresh or Frozen)

Steps:

  • Boil water and sugar until slightly thickened; cool slightly.
  • Add concentrate, water, lemon juice, and pineapple. Add fruit until juice is thick with fruit. Can be fresh or frozen strawberries, blueberries, grapes, peaches, bananas, raspberries, kiwi, etc. (We usually do strawberries, grapes, bananas, and blueberries) Put in individual cups and freeze.(containers with lids will keep longer.).
  • **Serving size depends on the size of containers you freeze this in! 24 is just a random guess, it makes a lot though! The 5 hours freeze time is probably about a minimum**.

4 cups frozen peaches, thawed and chopped into large chunks
2 cans mandarin oranges, drained
2 cans crushed pineapple, drained
1 can fruit cocktail, drained
6 medium firm bananas, chopped into chunks
1 small can frozen pineapple-orange juice concentrate, thawed
1/3 cup lemon juice

Steps:

  • Combine the peaches, oranges, pineapple, fruit cocktail, bananas, juice concentrate and lemon juice in a bowl and mix until combined. Place in small disposable plastic cups and cover with plastic wrap or foil. Freeze until firm. Remove from the freezer 45 minutes to 1 hour before serving to thaw.

Frozen fruit salad is a blast from the past. This vintage recipe is a cool and delicious way to eat your fruit. It is at home at all of our holiday meals, but would also be a fun summer side dish!

Number Of Ingredients 6

6 ounces cream cheese, softened
1 cup mayonnaise
1 cup heavy cream - "Whipped"
3 1/2 cups fruit cocktail, well drained
1/2 cup drained Maraschino cherries
2 1/2 cups little marshmallows

Steps:

  • Quarter cherries
  • Cream together the room temperature cream cheese and mayonaise.
  • Add cherries, fruit cocktail and marshmallows, mixing it together.
  • Fold in whipped cream.
  • Put into a glass 9x13 pan or similarly sized freezer safe serving dish. Freeze until solid.
  • Remove from freezer 10-15 minutes before time to serve.
  • Cut into squares and enjoy.

6 tablespoons tarragon vinegar
6 tablespoons sugar
6 units eggs
2 units apples
2 units bananas
1 cans pineapple tidbits
1 cups maraschino cherries
1 cups grapes
1 cups marshmallows
1.5 pints whipping cream

Steps:

  • 1) Mix vinegar, sugar, and egg yolks in small saucepan. On medium/low heat stir until thickened, approx 10 minutes. Set aside to cool.
  • 2) Peel, core and dice apples put in large mixing bowl.
  • 3) Slice bananas into bite size chunks add to bowl.
  • 4) Drain pineapple and add to bowl.
  • 5) Drain and slice cherries and add to bowl.
  • 6) Wash and slice grapes and add to bowl
  • 7) Take egg mixture and add to fruit stirring gently but thoroughly.
  • 8) Add marshmallows.
  • 9) In small cold bowl whip cream with electric mixer on high until stiff, and add to fruit.
  • 10) Refrigerate until cold.
