CHIPOTLE CHICKEN WINGS
These Spicy and Sweet Baked Chipotle Chicken Wings are perfect for entertaining a crowd! They're sweet. They're spicy. They're finger-licking good!

Steps:
- Preheat oven to 400º F (200º C). Line a baking sheet with foil. Place a wired rack on top and spray it with oil.
- Pat dry the chicken wings with a paper towel.
- Place cumin, salt, paprika, black pepper, and baking powder in a gallon-sized bag. Shake the bag to combine. Add chicken and shake again to coat it evenly with the seasoning.
- Place seasoned chicken over the wired rack and spray with oil.
- Bake for 35 -40 minutes, turning once, or until cooked through and golden brown and crispy.
- In the meantime, make the chipotle sauce: Place a medium saucepan, over medium heat, add the Coca-Cola, chipotle, onion, garlic, brown sugar, and soy sauce; mix to combine. Bring to a boil; reduce heat to low and simmer until reduced by half, about 15 minutes. Stir in cornstarch slurry and cook until thickened, about 2 minutes. Set aside.
- When the chicken is cooked. Baste both sides of the chicken generously with the wing sauce and bake for 10 -15 minutes.
- Garnish with cilantro, if using, and lime wedges. Serve hot.

PANKO CHIPOTLE CHICKEN WINGS
We love wings and have been trying to perfect them and when I saw the new 4Cs Panko Chipotle Breadcrumbs at the grocery store I knew I had to try them. These made my wings so crispy and very moist. Went great with a side of Franks Wing Sauce and Ranch Dressing with celery sticks. It was also very easy and not fried!

Steps:
- 1. Wash chicken, pat dry, dip chicken in the egg wash and then the breadcrumbs, place on serving plate. Chill for about half an hour. Note: Don't dump all the breadcrumbs out, just a cup at a time and as they get moist replenish.
- 2. Place chicken in a baking pan lined with foil, place metal rack on top,place wings on the rack and spray the chicken with Pam Cooking spray. Bake at 375° for 45 to 50 minutes or until chicken pricked with fork runs clear or a meat thermometer registers 165°
- 3. Serve with a side of Franks Wing Sauce and Ranch Salad Dressing, and celery sticks. Yum.
- 4. Note: Instead of using chicken wings with the bones, try using boneless chicken thighs instead. They really go well with this recipe. My husband just loves them and now I make this recipe using them instead.
PANKO CHICKEN WINGS - HOW TO MAKE CRISPY DEEP FRIED PANKO CHICKEN WINGS AT HOME!!!
In the previous episode we made panko crumbs. Now we're going to use these to make amazingly crispy deep-fried chicken wings.

Steps:
- To start, combine the all-purpose flour, salt and cayenne pepper. Place this in a container with a lid.
- Trim away the wing tips from the chicken wings and slice through the center joint of each wing, giving you a dozen winglets.
- Drop the winglets into the flour, put the lid on and shake them around to coat. Allow the winglets to stand in the flour for 10 minutes.
- For the panko coating, place the panko crumbs in a bowl, and whisk 2 eggs in another bowl.
- Before starting, spread a layer of panko crumbs over a large platter. This is where the coated wings will set and the layer of crumbs prevents the coating from sticking to the platter and getting damaged.
- Dip the winglets in the egg to wet all of the flour coating.
- Transfer the winglet to the panko crumbs to get a good solid coating all over.
- Transfer the winglet to the platter to set. Continue with the remaining winglets.
- Allow the panko coating to set for 10 minutes.
- Half fill a large pan with oil and heat this to 180c or 350f. Carefully drop the wings into the oil and fry them for 5 to 6 minutes, turning halfway through.
- Remove the wings from the oil using a slotted spoon and drain any excess oil on kitchen paper.
- And there we have it, a batch of amazingly crisp panko chicken wings.
HOT & SPICY WINGS WITH MAPLE CHIPOTLE HOT SAUCE

- Heat oven to 200C/180C fan/gas 6. In a small bowl, mix the ingredients for the spice rub together. Put the chicken wings in a large bowl and mix with the spice rub and a good amount of seasoning. Spread out in a single layer on a large foil-lined baking tray (or 2 smaller ones). Roast for 45 mins, then remove from the oven and drain off any excess oil.
- Heat a gas or charcoal barbecue to high. Mix the ingredients for the hot sauce in a small bowl and brush all over the chicken wings. Cook the wings on direct heat on the barbecue for 3-4 mins each side or heat oven to 220C/200C fan/gas 7 and cook the wings for 15 mins. Serve with plenty of napkins.

PANKO CRUSTED BAKED CHICKEN DRUMSTICKS
I was searching for a good baked chicken recipe with Panko that didn't have Parmesan cheese as an ingredient. My mouth likes it, my waist doesn't. Anywho this is a hybrid of a recipe I was experimenting with, and I think it's pretty tasty and kinda lean ;-) You be the judge....

- Preheat oven to 350.
- In a large bowl, combine all of the ingredients except the cooking spray. Use a whisk to be sure the ingredients are all combined well. Set aside.
- Wash the chicken drumsticks in cold water; don't dry them.
- Roll each drumstick into the crumb mixture, and carefully transfer each piece to the baking sheet. Do no discard the leftover crumbs.
- Lightly spray the drumsticks with the vegetable oil.
- Bake, loosely covered with aluminum foil for 45 minutes.
- Remove from oven. turn chicken over. and top each drumstick with some of the leftover crumb mixture. Spray once again, liberally with the vegetable oil.
- Return the baking sheet to the oven, this time uncovered for another 45 minutes.
PANKO CRUSTED OVEN BAKED CHICKEN WINGS
I have been playing around with recipes for chicken wings at home and I came up with this. Panko crumbs (found in the Asian aisle or sometimes with the bread crumbs) are very crunchy. Baking the wings is better than frying if you are trying to cut down on fat. These turn out so crunchy, then you can 'spin' or coat them with your favorite sauce. Absorbs into the panko, but still keeps the crispy texture. Reminds me a little of Hooter's breading. Also, try to find Amish wings, they are tastier and usually larger than typical wings. Enjoy!

- Heat the oven to 425.
- Pour the flour into a shallow bowl or dish and season with salt.
- Beat the eggs until foamy in a medium sized bowl.
- Pour the Panko Breading into a shallow bowl or dish. You may need to add more as you go on, use best judgement.
- Take the wings, rinse and dry well with paper towel.
- One by one, Dredge in the flour, then dip in the egg. Shake off excess.
- Place each wing into the Panko crumbs, pressing the crumbs onto the chicken on all sides, coat well. Gently shake off excess.
- Place breaded wings on a non-stick baking sheet. Bake for 25-30 minutes.
- When done, flip over and put the broiler on Low for 2 minutes each side. You may want to drizzle a little butter before broiling. Keep a close eye, the breading does not need to be brown like typical bread crumbs, it will be crispy even if it looks white still.
- While the wings are still hot, put a few good shakes of your chosen sauce into a bowl and coat the wings one by one with the sauce. Let sit for about 5 minutes before serving. Wings are great with no sauce as well.
- First time trying I used Spicy Szechuan Peanut Sauce Recipe #72983 and loved it as well as some generic Honey BBQ sauce and also some Frank's Red Hot Buffalo Wing sauce and all were great!

- Cut chicken breast into bite-sized pieces and place them in a medium-sized bowl.
- Pour buttermilk and can of chiles over the chicken, making sure to get all of the adobo sauce out of the can. Mix well to incorporate.
- Cover and let marinate in the refrigerator for 2-4 hours.
- In a separate bowl, mix together panko bread crumbs, chili powder, salt, pepper, and paprika.
- Remove chicken from the refrigerator and dredge the pieces in the bread crumb mixture for an even coat.
- Fry them in 350˚F (180˚C) oil until they are crispy and golden brown (about 2 minutes).

- Remove the tips from the wings a reserve for another use like stock.
- Separate the wings at the joints.
- Wash wings and pat dry with paper towels.
- Place wings in container with a lid or sealable plastic bag.
- Remove the peppers from the adobo and chop fine.
- Mix chopped peppers with the adobo and other ingredients.
- Pour over wings, stir around till they are coated and allow to marinate for 1 to 24 hours.
- Preheat oven to 350 degrees.
- Place wings on foil lined cookie sheet.
- Bake for 30 to 45 minutes till wings are done.

- Line a baking pan with parchment paper.
- Combine the mayonnaise, honey mustard, thyme, and parsley.
- Spread over the chicken to coat thoroughly.
