GRANDMA'S MEATLOAF
This is my all time favorite dish, that my Grandmother served in her restaurant. She would serve this with real mashed potatoes and creamed corn.

Steps:
- Mix everything together very well and shape into 2 loaves.
- You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.
- Bake at 350 degrees for about 45 minutes to 1 hour or until done.
- Makes 2 loaves.
GRANDMA'S FAMOUS MEATLOAF WITH SALTINES
This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

Steps:
- Mix all together; I generally use my hands.
- Form mixture into a loaf shape.
- Put in a baking dish (I use a pie plate).
- Bake at 350 for 1 hour.
- NOTE: I always put a little water in my pan. I've never done it any other way, so I don't know what would result if you don't.
GRANDMA'S OLD-FASHIONED MEATLOAF
Steps:
- Preheat the oven to 350 F
- Heat the oil in a large skillet over medium heat. Add the chopped celery and onion; cook until the vegetables are tender, or for about 7 to 9 minutes, stirring frequently.
- In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.
- Pack the meatloaf mixture into a 9-by-5-by-3-inch loaf pan or shape it and bake it free-form in a 9-by-13-by-2-inch baking pan or 10-by-15-by-1-inch jelly roll pan.
- Bake at 375 F for 1 hour.
- Using 2 spatulas, carefully move meatloaf to a serving plate and slice.

- Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

GRANDMA'S MEATLOAF WITH OATS
Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
- Remove from the oven and spread ketchup over top. Serve with additional ketchup.

GRANDMA'S MEATLOAF
I modified this from Grandma's swedish meatball recipe, leaving out several seasonings that didn't seem to suit my family. I have the original 3 x 5 card that she wrote it on. The card is brown and brittle now, but treasured anyway. I'd love for some pioneering type to do this in the microwave and let me know how it works. I've not had much luck with beef in the microwave.

Steps:
- Pre-heat oven to 350 degrees F.
- Spray your meatloaf pan with cooking spray.
- Mix bread crumbs, salt, milk, eggs and onion in small bowl.
- Set aside.
- In large bowl, mix by hand the ground beef and sausage.
- I usually wear powder-free medical gloves for this step.
- Yuck!
- Blend the meats completely and add the contents of the small bowl.
- Continue to blend by hand until uniform in consistancy.
- Put meat mixture in loaf pan and LIGHTLY pack.
- Bake for 1 1/2 hours at 350 degrees F.
- Remove from oven and let it rest on a cooling rack for about 20 minutes.
- Slice and serve.

- Place each loaf in a loaf pan.
- Mix sauce ingredients together in a saucepan and simmer over low heat for about 10 minutes.

- Pre heat oven to 350 degrees.
- Spray a 9 x 5 inch loaf pan with non stick cooking spray.
- Stir beef, eggs, onion, ketchup, salt and pepper, oatmeal, 1/2 of tomato soup, and 1 Tablespoon Worcestershire sauce with hands (it really is easier that way).
- Mold and put into loaf pan.
- Stir brown sugar, rest of Worcestershire sauce, and rest of soup and pour over top of loaf.
- Bake for 90 minutes.
