CREAMY PUMPKIN & LENTIL SOUP



Creamy pumpkin & lentil soup image

Whether you're carving a Halloween pumpkin or have picked up a cheap squash, use the plentiful flesh and seeds in this soup

1 tbsp olive oil, plus 1 tsp
2 onions, chopped
2 garlic cloves, chopped
approx 800g chopped pumpkin flesh, plus the seeds
100g split red lentil
½ small pack thyme, leaves picked, plus extra to serve
1l hot vegetable stock
pinch of salt and sugar
50g crème fraîche, plus extra to serve

Steps:

  • Heat the oil in a large pan. Fry the onions until softened and starting to turn golden. Stir in the garlic, pumpkin flesh, lentils and thyme, then pour in the hot stock. Season, cover and simmer for 20-25 mins until the lentils and vegetables are tender.
  • Meanwhile, wash the pumpkin seeds. Remove any flesh still clinging to them, then dry them with kitchen paper. Heat the 1 tsp oil in a non-stick pan and fry the seeds until they start to jump and pop. Stir frequently, but cover the pan in between to keep them in it. When the seeds look nutty and toasted, add a sprinkling of salt and a pinch of sugar, and stir well.
  • Whizz the cooked pumpkin mixture with a hand blender or in a food processor until smooth, then add the crème fraîche and whizz again. Taste for seasoning.
  • Serve with a spoonful of crème fraîche, a few thyme leaves and the toasted seeds scattered on top.

2 tablespoon extra-virgin olive oil, 1 turn of the pan
1 medium onion, finely chopped
3 cups canned or packaged vegetable stock, found on soup aisle
One 14 1/2-ounce can diced tomatoes in juice
One 15-ounce can black beans, drained
Two 15-ounce cans pumpkin puree (found often on the baking aisle)
1 cup heavy cream
1 tablespoon curry powder, 1 palm full
1 1/2 teaspoons ground cumin, 1/2 palm full
1/2 teaspoon cayenne pepper, eyeball it in the palm of your hand
Coarse salt
20 blades fresh chives, chopped or snipped, for garnish

Steps:

  • Heat a soup pot over medium heat. Add oil. When oil is hot, add onion. Saute onions 5 minutes. Add broth, tomatoes, black beans and pumpkin puree. Stir to combine ingredients and bring soup to a boil. Reduce heat to medium low and stir in cream, curry, cumin, cayenne and salt, to taste. Simmer 5 minutes, adjust seasonings and serve garnished with chopped chives.

1 kg pumpkin
1 1/2 liters chicken stock
1/2 cup tomato paste
1 onion, peeled and diced
2 teaspoons garlic, crushed
2 teaspoons ginger, grated or finely chopped
2 teaspoons basil
black pepper

Steps:

  • Peel and chop pumpkin.
  • In a large pot add pumpkin, and also all other ingredients, with the exception of the black pepper.
  • Bring the soup to the boil and simmer for approx 30 minutes or until pumpkin is tender.
  • Remove from the heat and puree soup until smooth in food procesor or blender, stir in black pepper and serve.

1 large onion, chopped
4 cups vegetable stock
1 (28 ounce) can stewed tomatoes (no spices added)
2 tablespoons maple syrup
4 cups pumpkin or 4 cups butternut squash, pureed
1/8 teaspoon white pepper
salt

Steps:

  • In a large pot, heat the oil over a medium flame. Add onion and saute until limp, but not browned, about 6 to 8 minutes.
  • Stir in 3 cups of the stock, and let simmer, partially covered, about 15 minutes.
  • Pour tomatoes and maple syrup into the food processor and puree. Add to pot above. Add the pumpkin and remaining 1 cup stock.
  • Season with the pepper and salt to taste. Reheat. Garnish with finely chopped chives.

4 cups low sodium canned chicken stock, warmed

2 scallions, thinly sliced

Steps:

  • In a heavy large saucepan, melt butter over medium heat. Add onions and cook until tender about 5 minutes. Stir in thyme, stewed tomatoes, and pumpkin puree and bring to a simmer. Stir in warmed stock and return to a simmer and cook for 20 minutes. Puree soup in 3 batches in a blender. Season with nutmeg, salt and pepper. Stir in cream and return to simmer. Serve with sliced scallions.
