CHEWY OATMEAL BREAKFAST BARS TO-GO RECIPE BY TASTY
Here's what you need: almond butter, maple syrup, almond milk, vanilla, rolled oats, brown rice cereal, slivered almond, dried cranberry, dark chocolate, dark chocolate

Steps:
- Preheat oven to 325˚F (160˚C).
- Combine wet ingredients together in a large bowl.
- Then add in all the remaining dry ingredients.
- Add mixture into a 8x8 inch (20x20 cm) baking pan lined with greased parchment paper. Firmly press down mixture until it is one smooth layer. (If you grease the spatula as well it will prevent the mixture from sticking to it!)
- Bake 15-20 minutes, or until golden brown. Let cool 10 minutes.
- Drizzle top with melted dark chocolate. Chill for 30 minutes, or until dark chocolate is solid.
- Cut into 8 equal pieces.
- Wrap each bar in parchment paper or foil.
- Store in the freezer for up to 3 months or in the refrigerator up to 1 week.
- Enjoy!

- Preheat oven to 350°. Cream shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in water. In another bowl, whisk together flour, baking soda, cinnamon and salt; add to creamed mixture, and mix well. Stir in oats, raisins and walnuts. , On a surface sprinkled with additional sugar, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter in desired shapes. Place 2 in. apart on greased baking sheets. Bake until set, 12-15 minutes. Remove to wire racks to cool.

BEST APPLE BARS
VERY MOIST!! Popular apple bars with carmel frosting! The absolute best of all the apple recipes I have ever tried. Grating the apples helps let the apple juice ooze out and give flavor. Always a WINNER. So yummy you'll smack your lips!! A good item to have with your coffee at snack time!

Steps:
- Cream butter and sugar. Add beaten egg and mix well. Add vanilla.
- In a separate bowl combine flour, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture. Add grated apples.
- Pour mixture into a greased 9 x 9 inch baking pan. Bake in a 350 degree oven for 30 minutes.
- For frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Remove from heat and add sifted powdered sugar while stirring. Cool slightly and spread on bars. Sprinkle chopped pecans on top.
- Cool completely and cut into bars. Store in air-tight container to retain moisture.
- Note: If you prefer sweeter, add 1/4 cup sugar to batter of bars, but remember the apple juice from the grated apples will provide some sweetness. We enjoy it as is because the carmel frosting is sweet. Also, we have had them with no frosting and just a sprinkling of powdered sugar on top. Enjoy!

Steps:
- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 9x9-inch baking pan.
- In a bowl combine flour, baking powder, cinnamon, baking soda and salt.
- In another bowl, beat the butter, Crisco shortening and brown sugar until smooth and creamy (about 5 minutes).
- Add in egg and vanilla; beat well until combined.
- Stir in the flour mixture, oatmeal, chopped apples, coconut, nuts or chocolate chips (if using) mix well to combine.
- Spread into prepared baking pan.
- Bake for about 30-35 minutes, or until bars tests done.
- Cool and sift the confectioners sugar over top.
- Cut into squares.

GRANDMA GUSKY'S CHEWY OATMEAL COOKIES (GLUTEN FREE)
This recipe was given to me by my mother-in-law. It was her mother's recipe. I converted it to be gluten free. If you don't need it to be gluten free, simply substitute the rice flour, starch and protein powder for 1 1/4 cups unbleached flour. Also, omit the xanthan gum.

- Preheat oven to 370°F.
- Sift or stir together flour, starch, baking powder, baking soda, cinnamon, salt, and xanthan gum. Set aside.

- Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes. Remove from heat., In a large bowl, combine flour, oats, brown sugar, vanilla, baking soda, salt and almond extract. Cut in shortening until crumbly. - Directions, Oven at 350 degrees, have a baking pan ready.
- Mix the dry ingredients together, add the oil and apple sauce and mix.
- Separate about 2 cups of the mixture. Put the mixture into a pan or two - we used 1 14"x12" pan. You can grease the sides of the pan, but it isn't necessary on the bottom.
- You want to pack the mixture down and have it be about 1/4 inch thick.
- Spread on the preserves and then crumble the remaining dry mixture on the top.
- Bake at 350 degrees for 25-30 minutes.
- Let cool 10+ minutes and enjoy.
- Oats & whole wheat are good for fiber, the soy adds some protein, and the apple sauce is a good partial substitute for oil/butter, keeping it pretty moist.
