CHEWY CHOCOLATE-COCONUT BARS
warning...these are *extremely* addicting, be prepared to eat half a pan right away! if desired reduce the coconut and add in some chopped nuts :)

Steps:
- Set oven to 350 degrees.
- Grease a 13 x9-inch baking pan.
- In a large bowl cream shortening, brown sugar, eggs and vanilla until well blended.
- In a small bowl mix together flour, baking powder and salt; add to the creamed mixture, mix until blended.
- Mix in the coconut & chocolate chips.
- Transfer/spread the mixture in the prepared pan.
- Bake 20-25 minutes.
- Let cool before slicing.
- Delicious!

Steps:
- Preheat oven to 350°F.
- Place the melted butter, 1 cup flour, and ¼ cup powdered sugar in a large bowl. Stir until just combined.
- Pat into a 9x12 inch pan (a 9x13 inch pan works, too). Bake in the preheated oven for 12-15 minutes, or until just golden brown.
- Meanwhile, place the remaining ingredients in the same large bowl. Stir just until combined.
- Spread the mixture over the partially baked crust, and return to the oven. Bake for 18-20 minutes, or until golden all over the top. Remove from the oven and allow to cool for 20 minutes.
- Cut into squares while still slightly warm.

- Preheat oven to 350 degrees F (175 degrees C.) Combine the flour, baking soda, and salt; set aside.
- In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Cookies should be about 3 inches apart.

- In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. My mom got this recipe from her mom. The bars are moist and spicy, and keep well. You can drizzle the bars with a powdered sugar glaze, but usually mom served them plain.

- Pre-heat oven to 350°F.
- Grease a 10x15-inch jellyroll pan and set aside.
- In a medium saucepan, bring the raisins, water, sugar and shortening to a boil.
- Add cinnamon, nutmeg and cloves and allow to cool.
