1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup shortening
2 cups brown sugar, packed
2 teaspoons vanilla extract
3 large eggs
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups shredded coconut

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x9-inch baking pan.
  • In a large bowl cream shortening, brown sugar, eggs and vanilla until well blended.
  • In a small bowl mix together flour, baking powder and salt; add to the creamed mixture, mix until blended.
  • Mix in the coconut & chocolate chips.
  • Transfer/spread the mixture in the prepared pan.
  • Bake 20-25 minutes.
  • Let cool before slicing.
  • Delicious!

These bars taste like a coconut-laden pecan pie!

Number Of Ingredients 11

½ cup (1 stick) unsalted butter, (melted)
1 cup flour
¼ cup powdered sugar
2 eggs, (beaten)
1½ cups brown sugar
2 tablespoons flour
1 cup walnuts or pecans, (chopped)
¾ cup coconut ((sweetened or unsweetened is fine))
¼ teaspoon baking powder
½ teaspoon kosher salt
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Place the melted butter, 1 cup flour, and ¼ cup powdered sugar in a large bowl. Stir until just combined.
  • Pat into a 9x12 inch pan (a 9x13 inch pan works, too). Bake in the preheated oven for 12-15 minutes, or until just golden brown.
  • Meanwhile, place the remaining ingredients in the same large bowl. Stir just until combined.
  • Spread the mixture over the partially baked crust, and return to the oven. Bake for 18-20 minutes, or until golden all over the top. Remove from the oven and allow to cool for 20 minutes.
  • Cut into squares while still slightly warm.

1 ¼ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup butter
½ cup packed brown sugar
½ cup white sugar
1 egg
½ teaspoon vanilla extract
1 ⅓ cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Combine the flour, baking soda, and salt; set aside.
  • In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Cookies should be about 3 inches apart.
  • Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
⅔ cup shortening
2 cups packed brown sugar
1 teaspoon vanilla extract
3 eggs
1 ½ cups semisweet chocolate chips
¾ cup chopped walnuts
½ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In large bowl, cream the shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder, and salt. Mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in pan.
  • Bake 20 to 25 minutes. Let cool before cutting into bars.

Steps:

  • Preheat oven to 400 degrees F ( 200 degrees C ). Grease a 15x10x1 inch jellyroll pan.
  • In a heavy saucepan combine the sugar and eggs. Cook over medium heat, stirring constantly until sugar is dissolved. Remove from heat, stir in the flour, salt, vanilla, and pecans.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashioned oats
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. Remove to wire racks to cool., Freeze option: Place wrapped logs in a freezer container; return to freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Prepare and bake as directed.

My mom got this recipe from her mom. The bars are moist and spicy, and keep well. You can drizzle the bars with a powdered sugar glaze, but usually mom served them plain.

Number Of Ingredients 12

1 cup raisins
1 cup water
1 cup sugar
1/2 cup butter or 1/2 cup margarine
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon clove
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup chopped pecans or 1 cup walnuts
1/2 cup chopped dates

Steps:

  • Pre-heat oven to 350°F.
  • Grease a 10x15-inch jellyroll pan and set aside.
  • In a medium saucepan, bring the raisins, water, sugar and shortening to a boil.
  • Add cinnamon, nutmeg and cloves and allow to cool.
  • While the spice mixture is cooling, sift together the flour, salt and baking soda.
  • Add to cooled mixture and stir well.
  • Stir in chopped nuts and dates.
  • Spread in prepared pan and bake for about 30 minutes.
