Steps:

  • Reduce the apple cider in a saucepan over medium-high heat until it's thick and coats the back of a wooden spoon, 10 to 15 minutes. Stir in the cream and salt and cook until it reaches the desired consistency, an additional 2 to 3 minutes.

1/2 pound whole wheat shells or penne pasta
4 golden apples, cored and chopped
1 cup cloudy apple cider
3 tablespoons brown sugar
A handful golden raisins
1 teaspoon ground cinnamon
4 large center cut pork loin chops, 1 1/2-inch thick
Black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1 rounded tablespoon all-purpose flour
2 cups milk
1/2 pound extra-sharp white cheddar
A few grates nutmeg, to taste
Dash hot sauce
2 cups broccoli tops, cut into small florets
2 tablespoons spicy brown or grainy Dijon mustard
1/4 cup maple syrup

Steps:

  • Heat a large pot of water for pasta. Season water with salt and cook pasta to al dente.
  • Add apples to a medium pot and stir in cider, sugar, raisins, cinnamon and a pinch of salt. Place pot over medium-high heat and cook until tender, about 12 minutes.
  • Season chops with salt and pepper. Heat 2 tablespoons extra-virgin olive oil in a skillet over medium-high heat. Add chops and cook 6 to 7 minutes on each side.
  • While chops cook, heat 2 tablespoons butter in a sauce pot over medium heat. Whisk in flour and cook a minute then whisk in milk and season with salt and pepper. Grate cheese and stir into sauce and season with nutmeg, to taste, and a dash of hot sauce. Reduce heat to low.
  • Add broccoli to pasta last 2 minutes of cook time. Drain and return to pasta pot. Add cheese sauce and stir to coat.
  • Add mustard and syrup to chops and glaze, 1 minute.
  • Serve pork with apple sauce, macaroni and cheddar with broccoli along side.

Pie Crust
2 1/2 heaping cups raisins
2 cups cold water
2 tablespoons cornstarch
3/4 cup sugar
3 tablespoons cider vinegar
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
2 tablespoons unsalted butter
1 large egg yolk
1 tablespoon milk
Pinch of salt
Vanilla ice cream, for serving

Steps:

  • On a lightly floured work surface, roll 1 piece of pie crust into a 12-inch round. With a dry pastry brush, sweep off the excess flour; fit dough into a 9-inch pie plate, pressing it into the edges. Cover with plastic wrap; chill pie shell until firm, about 30 minutes.
  • In a medium saucepan, mix together raisins, water, cornstarch, sugar, vinegar, salt, cinnamon, and butter. Bring to a gentle boil over medium-high heat. Let boil until very thick, stirring constantly, 2 to 3 minutes. Remove from heat and let cool slightly.
  • Preheat oven to 450 degrees. Pour raisin mixture into pie shell. On a lightly floured work surface, roll remaining piece of pie crust into a 12-inch round. 1 pound pork ribs, chopped
6 (3.5 ounce) links Italian sausages
1 large white onion, finely chopped
1 ½ teaspoons salt, divided

1 ½ teaspoons dried oregano
½ teaspoon red pepper flakes
1 cup water
2 (28 ounce) cans whole peeled tomatoes in juice
1 teaspoon dried basil

¼ cup chopped fresh basil

Steps:

  • Heat 2 tablespoons oil in a pot and cook pork ribs until browned, about 5 minutes. Transfer to a plate. Cook sausages until browned, about 5 minutes. Transfer to the same plate as the ribs.
  • Drain off some of the excess fat. Reduce heat to medium-low and pour in remaining olive oil. Add onion and 1/2 teaspoon salt; cook and stir until translucent, about 5 minutes. Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Grandma Strohecker. As with so many of these recipes, she didn't specify serving yield. So, I am guessing a bit. I have had a version of this so many times growing up and it is *so* good.

1 cup margarine
2 cups white sugar

1 teaspoon vanilla
