SMASHED POTATO SALAD

2 1/2 pounds small yellow potatoes, halved or quartered if large
Salt and freshly ground black pepper
1/4 cup olive oil
1/4 cup chopped fresh parsley
2 tablespoons country Dijon mustard or Dijon mayonnaise
1 tablespoon sherry or champagne vinegar
2 small or 1 large shallot, finely chopped
1 jalapeno, seeded and finely chopped

Steps:

  • Put the potatoes in a large saucepan, cover with cold water and season generously with salt. Bring to a boil, reduce to a simmer and cook until the potatoes are tender, 15 to 20 minutes. Drain and let cool slightly. Gently smash with a fork or potato masher.
  • Meanwhile, in a large bowl, whisk together the oil, parsley, mustard, vinegar, shallots and jalapeno. Season with salt and pepper. Add the potatoes and gently combine. Serve at room temperature.

10 pounds salad potatoes, cooked, peeled and cubed
12 hard-boiled large eggs, chopped
4 celery ribs, chopped
5 radishes, sliced
1 medium onion, chopped
1/3 cup chopped green pepper
Salt and pepper to taste
6 cups mayonnaise
1/4 cup packed brown sugar
1 tablespoon sugar
1-1/2 teaspoons vanilla extract
1/2 teaspoon prepared mustard
1/2 cup milk
Leaf lettuce
Paprika
Minced fresh parsley

Steps:

  • In a large bowl, combine the potatoes, eggs, celery, radishes, onion, green pepper, salt and pepper. In another large bowl, combine the mayonnaise, sugars, vanilla and mustard. Stir in milk. Pour over potato mixture; gently toss to coat. Chill overnight. , Serve in a lettuce-lined bowl. Sprinkle with paprika and parsley.

This is my maternal grandmother's recipe for potato salad. She grew up in Arkansas during the Depression. I love this recipe, it reminds me of good family times together. And, well, BACON!

5 lbs potatoes
2 onions (yellow or white, not sweet)
1 (10 ounce) jar dill pickle relish
8 eggs
1 lb bacon
1 1/2 cups Miracle Whip
salt
pepper

Steps:

  • Hardboil the eggs. Let cool, peel, cut in half and scoop out the yolks into a bowl. Chop the whites finely and put in a large bowl.
  • Peel and chop the potatoes into bite-size pieces. Boil in well-salted water until tender. Cool, then add the potatoes to the bowl with the egg whites.
  • Peel and chop the onions, finely. Mix with the entire jar of pickle relish and add to potato mixture.
  • Fry the entire pound of bacon until crispy, then crumble or chop. Add to potato mixture.
  • Mix the egg yolks and Miracle Whip until smooth, then blend into potato mixture.
  • Add salt and pepper to taste.
  • Store in refrigerator until ready to eat. Usually best prepared the day before you intend to serve it.

This is the recipe my mom's grandma used to make potato salad. It is by far the best potato salad I have ever eaten. The dressing is cooked before adding to the potatoes.

5 lbs potatoes
6 hard-boiled eggs
1 medium onion, diced
1/2 stalk celery
celery seed, to taste
1/4 cup margarine
3 eggs, beaten
1 pint salad dressing
2 tablespoons mustard
1 cup granulated sugar
2 tablespoons white vinegar
1 tablespoon salt

Steps:

  • Boil potatoes until soft (about 20 minutes), peel, and dice into bite sized pieces.
  • Mix eggs, salad dressing, mustard, sugar, vinegar, and salt.
  • Melt the margarine in a deep skillet and add dressing mix.
  • Cook dressing on medium heat, stirring frequently, until boiling and pulling away from sides of pan.
  • Pour dressing over diced potatoes, celery, hard boiled eggs, and onions. Mix well.
  • Sprinkle on celery seed to taste.
  • Refrigerate and serve when cooled.

5 pounds potatoes, peeled, cut into 2 inch chunks
3 hard-cooked eggs, peeled and finely diced
½ cup finely chopped dill pickle
2 cups mayonnaise
salt to taste

Steps:

  • Boil potatoes until soft, about 25 to 30 minutes. Remove potatoes to a large bowl.
  • While the potatoes are still warm but not steaming, stir in the hard-cooked eggs with a fork. Mix in the dill pickle, then stir in the mayonnaise. Season to taste with salt. Continue to stir until potatoes are smashed and not many big chunks remain.

This is a recipe for potato salad I got from my grandmother. She claims that everyone seems to like it, so she sticks with it. I heart potato salad very much, and am rather pleased with this, my first attempt, at making it. It isn't what I thought I would put into a potato salad had it have been my own recipe, but I guess this is why some recipes stay in the family so long. This is what I would consider a "classic" potato salad. Gotta love that mayo!

5 lbs russet potatoes
3/4 green bell pepper
1/2 large red onion
1/4 cup pimiento, plus
more pimentos (another scooch from a jar)
5 hard-boiled eggs
4 small celery ribs
1 cup mayonnaise
1 teaspoon salt, plus add some
salt, to taste
pepper, to taste

Steps:

  • Start large pot of water boiling for potatoes.
  • Peel and cut potatoes into chunks. (I've heard that it's best to boil potatoes whole. I have never done that and my potato dishes always turn out fine, but please do what you feel is best, and/or give me some tips!).
  • Boil potatoes.
  • Drain potatoes.
  • Hard boil eggs. Put eggs into a pot with enough room to keep them separated as best as possible. Put cold water up to about an inch above them in the pot, and then bring to a rolling boil. Let boil for 10 minutes, then take them off the heat immediately and pour cold water over them to stop the cooking process. Let cool completely, peel (I find it useful to bang the eggs with enough heft against a hard surface to crack the shell), then slice and dice them to the size you prefer to be put into the salad.
  • Finely dice the bell pepper, onion, and celery.
  • Combine potatoes, eggs, and vegetables. Add mayonnaise, salt, and pepper. Mix well.
  • I am letting mine sit overnight in the fridge to let all the flavors have a better chance of melding together.

3/4 cup sugar
2 tablespoons flour
1 teaspoon dry mustard
1 teaspoon salt
3/4 cup water
3/4 cup vinegar, tarragon flavored if possible
3 eggs, beaten fluffy
5 lbs potatoes, peeled, cooked and diced
5 green onions
1 large onion
6 eggs, hard boiled and chopped
1 1/2 cups mayonnaise, Grandma always used Spin Blend salad dressing

Steps:

  • In a sauce pan stir together sugar, flour, mustard and salt. Mix in water, vinegar and eggs. Cook over low to medium until thick, letting mixture bubble up a couple of times, stirring constantly.
  • Pour into a glass jar, seal and refrigerate (this can be done up to a week beforehand).
  • Boil potatoes. Let cool (sprinkle a little tarragon vinegar on them while cooling) and cut into 1/2" chunks.
  • Thinly slice entire green onions and mix with home dressing with mayonnaise, then mix in diced onion.
  • Mix potatoes and diced hard boiled eggs with the dressing.
