- LINE cutting board with 2 pieces of plastic wrap. Place each sheet of dough on its own piece of plastic wrap. Allow to stand at room temperature for 15 minutes.
- SPRINKLE each sheet evenly with 3 tablespoons of sugar. Using a rolling pin, lightly press sugar into dough. Beginning with long side, carefully roll up the dough, using plastic wrap to roll and form. You may need to squeeze roll gently and reshape roll. Wrap each roll well in plastic wrap and freeze for at least 1 hour.
- PREHEAT oven to 350° F. Let each frozen roll stand at room temperature for 10 minutes.
- CUT each chilled roll into 1/4-inch slices with a sharp knife, carefully wiping the knife occasionally with a towel. Turn roll frequently to prevent flat sides. You will get about 26 slices per roll. Place slices 2 inches apart onto ungreased baking sheets. Some reshaping maybe needed.
- BAKE for 8 to 10 minutes. Cool on baking sheets for 2 minutes; remove to wire rack to cool completely. Store in airtight container.

ICEBOX PINWHEEL COOKIES
Notes about the recipe: To make these even fancier, you can roll the whole roll in coarse sugar before chilling. These keep in the freezer up to three weeks.

- Sift the flour, baking powder, and salt together and set aside.
- In a mixer with a paddle attachment cream the butter well; then add the sugar and continue creaming until light and fluffy. Add the eggs 1 at a time and then the vanilla.
- On the low setting, add the dry ingredients and mix just until combined. Divide the dough in half and return half the dough to the mixer. Add the warm melted chocolate and mix to combine. Shape both pieces of dough into 4 by 4-inch square, and wrap them in plastic wrap and chill for 30 minutes.
- Cut each square into 4 strips then place them on a sheet pan and keep chilled while you roll out the dough. Between pieces of parchment paper, roll out a piece of chocolate dough into a rectangle 6 by 7 inches (have a ruler nearby). Roll a piece of vanilla dough out into a 6 by 6-inch square. Peel off the top pieces of parchment from both doughs and flip the vanilla dough onto the chocolate, allowing 1/2-inch border of chocolate dough around the top and bottom. Press the 2 doughs together lightly with a cake pan or other flat pan. Peel off the top piece of parchment and fold the 1/2-inch of over hanging chocolate dough up and over the vanilla dough. Use the parchment to roll up the dough into a tight pinwheel. Wrap in plastic wrap and chill 4 to 5 hours (roll the dough a couple times the first hour so it doesn't develop a flat side). Repeat with the remaining pieces of dough.
- Preheat the oven to 350 degrees F.
- Butter a sheet pan. Unwrap the roll and cut into 1/4-inch slices. Place them 1 1/2 inches apart on the sheet pan and bake for 9 to 11 minutes.
CINNAMON SUGAR PINWHEEL COOKIES
DH loves these cookies. Makes a nice addition to a Christmas cookie tray! Prep time includes chilling.

Steps:
- Allow cream cheese and 1/2 cup butter to soften, then blend together.
- Stir in egg yolk and flour, mix well.
- Cover bowl and chill 30 minutes.
- Heat oven to 350 degrees.
- Divide dough in half and roll very thin.
- Brush with 2 Tbsp melted butter.
- Combine cinnamon, sugar and nuts, sprinkle half this mixture over dough.
- Roll up like a jelly roll.
- Cut roll in 1/2 inch slices and place cut side down on ungreased baking sheet.
- Repeat other half.
- Bake 15 minutes or till golden brown.
- Cool on wire rack, then sprinkle with powdered sugar.

This recipe was handed down by my 'Baba' (Ukrainian for 'grandmother'). She originally just made a chocolate and plain pinwheel cookie, but I adapted it easily to create a very colorful variety that my kids and husband adore at Christmas time!

- Sift the flour, baking powder, baking soda, and salt together into a bowl. Resift again into another bowl.
- Beat the butter with the brown and white sugars in a mixing bowl until light and fluffy. Beat in the eggs and vanilla until smooth. Gradually stir in the flour mixture until evenly blended. Gather the dough into a ball, and divide into two equal parts. Place one half in a second bowl. Add red food coloring to the dough in one bowl, and green food coloring to the dough in the other bowl. Use a fork or wooden spoon to blend the food coloring into the dough until evenly blended. Add additional drops of food coloring to make the desired shade.
- Roll out the red dough to 1/4 inch (5mm) thickness. Roll out the green dough to 1/4 inch (5mm) thickness, and place on top of the red dough. Beginning on one edge, roll the doughs to make a log so the two colors spiral inside each other. Wrap the log in waxed paper, then in a cotton towel, and refrigerate at least 8 hours.
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease 2 baking sheets.
- Unwrap the dough log, and place on a clean, lightly floured surface. Slice the log into rounds 1/8 inch (3 mm) thick, and place on prepared baking sheets.
- Bake in preheated oven until set, 5 to 6 minutes. Watch carefully to prevent edges from browning. Remove from oven, and cool on racks.

- Beat first 4 ingredients in large bowl with mixer until blended. Add flour and baking soda; mix well. Refrigerate 30 min.
- Heat oven to 375ºF. Roll half the dough into 12x9-inch rectangle on lightly floured surface. Brush dough with half the butter; sprinkle with 2 Tbsp. colored sugar. Starting from one short side, roll up dough tightly to form log. Repeat with remaining dough. Roll logs in remaining colored sugar until evenly coated; wrap individually in plastic wrap. - Step 2Divide dough in half, keeping one half in mixing bowl. Add red food coloring and mix until desired color is reached. Shape each dough into a square that is roughly ½” thick.
- Step 3Place red dough between two sheets of parchment paper and roll into a rectangle that’s about 1/4" thick. Repeat with white dough. Take top sheet of parchment paper off of each dough.
- Step 4Remove top parchment paper and trim sides to match up evenly. Starting on a long side, use the bottom parchment paper to help roll dough tightly in to a log.
- Step 5Preheat oven to 350°. Line 2 large baking sheets with parchment paper. Place sprinkles on a medium plate. Using a sharp knife, slice cookies 1/2” thick and roll edges in sprinkles.

- In the bowl of a stand mixer, cream together butter and sugar until light and fluffy. Mix in eggs and vanilla, followed by salt and baking powder. Scrape the bowl as needed. Mix in flour, adding one cup at a time. Continue mixing until fully combined and no streaks remain. Divide dough into two equal portions. Return one half of the dough to the bowl. Add 5 drops of red gel food color to the bowl. Mix until dough is evenly colored.
- Place untinted dough between two large sheets of wax paper. Roll out dough to a 9x16-inch rectangle. Transfer dough to the refrigerator to chill, keeping both sheets of wax paper in place. Repeat process with red dough. Refrigerate both layers of dough for 15-20 minutes.
- Place the red dough down first, removing the top layer of wax paper. Remove one sheet of wax paper from the untinted dough. Carefully flip the untinted dough down onto the red layer. Remove the remaining top layer of wax paper. Trim the dough to an even rectangle. Beginning at one of the short ends, carefully roll dough into a tight log. Pull up gently on the remaining layer of wax paper to help roll the dough. Wrap dough log in wax paper. Wrapped dough may be placed inside of two large drinking glasses or the center of a paper towel roll cut down the length. This will help to keep it's round shape. Refrigerate for at least 2 hours or overnight.
- Add holiday nonpareils to a large shallow dish or tray. Unwrap dough log and begin rolling in the sprinkles. Continue rolling and pressing sprinkles into the dough until it is completely covered and no dough shows through. Rewrap in wax paper. Refrigerate for an additional 1-2 hours.
