One 3 1/2-pound whole chicken
7 tablespoons yogurt
3 tablespoons olive or vegetable oil
1 tablespoon plus 1 1/2 teaspoons garlic ginger paste
5 teaspoons Kashmiri chile powder
1 teaspoon kasuri methi
1/2 teaspoon ground cardamom, optional
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
1/4 teaspoon turmeric powder
1/4 teaspoon pepper powder
Pinch red food color
Salt
1 to 2 tablespoons butter or ghee

Steps:

  • Pat dry the whole chicken, and then make slits on it.
  • Whisk together the yogurt, oil, garlic ginger paste, chile powder, kasuri methi, cardamom if using, cumin, garam masala, turmeric, pepper, food coloring and salt in a bowl to make a smooth paste. Add the chicken and mix it well, making sure that the marinade is coating the chicken and rubbed into the slits.
  • Cover the bowl and refrigerate 6 to 8 hours or overnight.
  • Preheat a tandoor or grill to the highest heat for 20 to 30 minutes. Grill the chicken until tender, 15 to 20 minutes.
  • Smoke the chicken: Put an iron skillet on the high heat, then add the tandoori chicken and immediately pour in the ghee or butter. It will begin to smoke immediately. Serve.

juice 2 lemons
4 tsp paprika
2 red onions, finely chopped
16 skinless chicken thighs
vegetable oil, for brushing
300ml Greek yogurt
large piece ginger, grated
4 garlic cloves, crushed
¾ tsp garam masala
¾ tsp ground cumin
½ tsp chilli powder
¼ tsp turmeric

Steps:

  • Mix the lemon juice with the paprika and red onions in a large shallow dish. Slash each chicken thigh three times, then turn them in the juice and set aside for 10 mins.
  • Mix all of the marinade ingredients together and pour over the chicken. Give everything a good mix, then cover and chill for at least 1 hr. This can be done up to a day in advance.
  • Heat the grill. Lift the chicken pieces onto a rack over a baking tray. Brush over a little oil and grill for 8 mins on each side or until lightly charred and completely cooked through.

1 1/2 teaspoons grapeseed oil
2 medium onions, chopped
1 1/2 teaspoons fresh thyme
1 tablespoon curry powder (med to hot)
4 garlic cloves, crushed
2 teaspoons gingerroot, finely grated
550 g tomatoes, peeled & chopped
3 tablespoons fresh cilantro, finely chopped
600 g boneless skinless chicken breasts
1 1/2 cups fat-free chicken broth

Steps:

  • Cut chicken into large bite sized pieces.
  • Heat oil and cook onion, thyme, curry powder, garlic and ginger until onion is soft.
  • Add tomato and coriander; cook stirring for 5 minutes or until tomato soft.
  • Add chicken into pan and cook, stirring for 10 minutes or until browned lightly.
  • Stir in stock, simmer uncovered for 15 mins or until chicken is cooked through and the sauce has thickened to your taste.
