The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table-Grandma's recipe is a winner every time!"

2 eggs
1 cup milk
1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

Famous Western Pennsylvania Ham Loaf. Perfect way to use up left over smoked ham after Christmas or Easter. Be sure to serve it with a generous amount of sauce. We use a hand-held meat grinder that belonged to my husband's great-grandmother - doesn't take long and is somewhat nostalgic.

2 pounds ground smoked ham
2 pounds ground pork
2 cups crushed graham crackers
1 ½ cups evaporated milk
3 eggs, beaten
1 (10.75 ounce) can condensed tomato soup
1 cup brown sugar
½ cup white vinegar
½ cup water
1 tablespoon ground dry mustard

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a large baking sheet or jellyroll pan with parchment paper.
  • In a large bowl, mix the smoked ham and ground pork together until thoroughly mixed, and lightly mix in the graham crackers, evaporated milk, and eggs. Form the mixture into two loaves, and place the loaves onto the prepared baking sheet.
  • In a saucepan over medium-low heat, whisk together the tomato soup, brown sugar, vinegar, water, and dry mustard until well combined. Bring the mixture to a boil, stirring to dissolve the brown sugar. Pour about 1 cup of sauce over each ham loaf, reserving remaining sauce.
  • Bake in the preheated oven for 2 hours. Slice and serve with reserved sauce.

Ham Loaf:
1 lb cooked ham, cut in cubes
1 lb ground pork
2 large eggs
1/2 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
1 teaspoon onion, chopped
1 Tablespoon green bell pepper, diced
1 Tablespoon red bell pepper, diced
1 teaspoon stone ground mustard
1/2 cup finely crumbled bread crumbs
1/4 cup milk
Glaze:
1 cup packed brown sugar
1 teaspoon dry mustard
3 Tablespoons vinegar (may use apple cider or white)
3-4 slices pineapple
3-4 Marciano cherries

Steps:

  • Preheat oven to 350 degrees F. Line an 11 x 7 or 13 x 9 inch baking pan with parchment paper.
  • Place ham cubes in food processor and pulse until meat is crumbly texture.
  • Place ham, ground pork, eggs, salt, pepper, onions, green and red bell peppers, and mustard in a large mixing bowl.
  • Pulse 1-2 slices of bread in a food processor to make fine crumbles. Place bread crumbs in a small bowl, and stir in the milk. Add mixture to meat. Combine ingredients well, using your hands, like making a meat loaf. Form into a loaf and place in baking pan.
  • In a small bowl, stir together the brown sugar, dry mustard, and vinegar. Press mixture onto top of ham loaf. Arrange pineapple slices and cherries over the brown sugar.
  • Bake for 1 hour and 15 minutes.
  • Remove from the oven, allow to set 5-10 minutes.
  • Transfer to a serving platter and cut into desired size slices. Serves 4

AMISH HAM LOAF

Similar to meatloaf, this Amish Ham Loaf is made with ground ham and pork, seasoned with curry powder, ground ginger, and nutmeg then glazed with a sweet and sour sauce.

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

This is a meat loaf made with ham that features a mustard glaze instead of the usual ketchup type on beef meat loaves. It makes a lot and leftovers make great sandwiches. If you want a ham loaf that really goes bang, substitute the recipe for Pirate's Pantry Hot Mustard Sauce (posted separately) for the glaze in this recipe.

  • Combine all ingredients except glaze. I use a stand mixer.
  • Make a loaf and place in a glass 9"x13" baking dish.
  • Add 2 TBSP water to bottom of baking dish.
  • Cover loaf with glaze.
  • Bake at 325 for 11/2 hours or until 165 degrees.
  • Allow to sit 15 minute before slicing.
  • Au Gratin potatoes are an excellent accompaniment.

This is an easy delicious ham that my grandma has made every year for Christmas, I got to make it for the first time last year for my family and it is always wonderful and beautiful.

1 (12 pound) whole ham
1 liter ginger ale (such as Vernors®)
1 cup brown sugar
1 (8 ounce) can pineapple slices, drained, reserve juice
toothpicks
1 (4 ounce) jar maraschino cherries

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place ham in a roasting pan.
  • Pour ginger ale into the roasting pan. Rub brown sugar over the ham. Attach pineapple slices to outside of ham with toothpicks. Secure a cherry into the middle of each pineapple slice again using toothpicks. Pour reserved pineapple juice into pan with ginger ale. Tent aluminum foil over the ham.
  • Bake ham in preheated oven for 4 hours. Remove aluminum foil and continue baking another 30 minutes.

2/3 c. dry bread crumbs
1/2 c. chopped onion
1/2 c. milk
1 egg
Dash pepper
1/2 c. brown sugar
1 tsp. dry mustard
2 tbsp. vinegar
2 tbsp. water

Steps:

  • Mix all ingredients together (except for glaze). Form into rounded loaf in loaf pan. Bake for 30 minutes at 375 to 400 degrees. Drain grease from pan. Mix ingredients for glaze and pour over meat. Bake an additional 30 minutes. Can be garnished with pineapple and cherries prior to baking.
