GRANDMA'S APPLE PIE

This apple pie recipe is easy and fairly quick, with a buttery, flaky crust.

2 heaping cups all-purpose flour
1 scant cup butter-flavored Crisco
1 tsp salt
1/4 cup (or less) water
6 or 7 large June apples, peeled and sliced (any tart apple will work, such as Granny Smith)
1 cup sugar
2 tbsp flour
1 dash of salt
1 tsp cinnamon
1 stick butter

Steps:

  • Measure flour and salt into mixing bowl. Cut in shortening thoroughly.
  • Sprinkle in water 1 tablespoon at a time, mixing with fork until all flour is moistened and dough almost cleans side of bowl.
  • Gather dough into ball; divide in half, shape into flattened rounds on lightly floured board.
  • Using floured rolling pin, roll dough 2 inches larger than inverted pie pan.
  • Let dough rest for 5 minutes, then transfer to pie plate.
  • After filling the dough, place the second round of dough onto the pie.
  • Seal the edges of the pie, either by fluting or by pressing the edges together with a fork. Trim the excess crust if necessary.
  • Place sliced apples into pastry-lined pie pan.
  • Combine dry ingredients. Spread over apples.
  • Dot the apple mixture generously with butter.
  • Bake at 400 for 25 minutes, then reduce heat to 375 and cook 10 minutes longer.

1 1/2 pounds short crust pastry, recipe follows
7 cups Royal Gala apples, cored and quartered (about 5 apples)
1/2 cup sugar
1 tablespoon lemon juice
2 teaspoons lemon zest, finely chopped
1/4 teaspoon grated nutmeg
Pinch salt
1 egg yolk
2 tablespoons water
2 tablespoons unsalted butter, cold
3 cups all-purpose flour
1/4 teaspoon salt
4 ounces unsalted butter, cold
8 ounces shortening, cold
1/2 cup ice cold water

Steps:

  • Preheat the oven to 375 degrees F.
  • Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
  • Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
  • Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
  • Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
  • With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.

1 tablespoon dark brown sugar
1 teaspoon kosher or Hawaiian salt, crushed
1/2 cup butter flavored all-vegetable shortening, chilled and cut into small pieces
1/2 cup cold unsalted butter, chilled and cut into small pieces
1/2 cup cold water
Cooking spray
1 egg yolk plus 1 teaspoon water, beaten, for egg wash
4 large or 6 medium Granny Smith apples, about 2 pounds (to make 6 cups sliced apples)
2 tablespoons freshly squeezed lemon juice
2/3 cup granulated sugar
1/2 cup dark brown sugar, firmly packed
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1 large egg
1 1/2 tablespoons good quality bourbon
2 tablespoons butter
Vanilla sugar, for sprinkling, optional

Steps:

  • Crust Preparation: Preheat oven to 400 degrees F.
  • Combine all the dry ingredients in a large mixing bowl. Add shortening and butter. Using a pastry blender, cut in the shortening and butter until the mixture resembles course meal. Drop by drop, add the cold water. Mix in with the fingertips, not hands, as the palms will warm the dough. Continue mixing water in until the dough begins to hold together without being sticky but not crumbly. Divide dough into 2 pieces and place 1 piece of dough in plastic warp. Press down to form a disk. This will make rolling out easier after chilling. Lightly spray a deep 9-inch pie pan with cooking spray. Roll out second piece of dough and place in pie plate, allowing the excess pastry to hang over the edge. Lightly brush sides and bottom of crust with egg wash. Chill in refrigerator for 10 minutes before filling. Makes pastry for 9-inch double-crust pie.
  • Preheat oven to 425 degrees F.
  • Filling Preparation: Peel, quarter, and core apples; cut into 1/4-inch slices (should have 6 cups). Toss with the lemon juice in a bowl. In a separate bowl combine sugars, flour, cinnamon, nutmeg, and allspice, pour over the apples and toss to coat. Whisk together egg and bourbon. Fold into apple mixture. Spoon apple filling into the chilled pastry shell; cut butter into very small pieces and sprinkle over the apples. Roll out remaining pastry. Cut slits in pastry to allow steam to escape. Lightly brush egg wash around edge of pie. Cover pie and trim overhang. Turn edges under flush with the rim; crimp all around to make a stand-up edge. Bake pie at 425 degrees F for 40 minutes, or until top is golden brown and juices are bubbling up. Remove from oven and sprinkle with vanilla sugar, if desired. Cool on wire rack.

This is the only fruit filled pie that I will eat. I always request it when going home for the holidays. Good when it is still warm from the oven. And still yummy the next day. Just place a strip of waxed paper over the cut edge of your pie, if you cover the whole thing the topping will get soggy. My mother enjoys her pie with real whipped cream, my husband like his with a scoop of vanilla ice cream, but I love mine just the way it is! Yum

1 pie crust
2/3 cup flour
1/3 cup packed light brown sugar
1/3 cup butter
2 lbs tart cooking apples
1 tablespoon lemon juice
2 tablespoons flour
3/4 cup sugar
1 dash salt
1 teaspoon cinnamon

Steps:

  • Preheat oven to 400 degrees. Have your pastry crust in a 9 inch pie plate chilling in the fridge.
  • To make the topping mix flour and brown sugar, cut in butter with a pastry cutter (I believe that is what it is called) or using 2 knives in a criss-cross motion until crumbly. Place in fridge until ready to use.
  • Peel, core and slice the apples. Sprinkle apples with lemon juice. Mix flour, sugar, salt and cinnamon and stir into apples. Pour apple mixture into chilled pie crust and top with crumb topping.
  • Bake for 40-45 minutes or until apples are done. Keep an eye on it while baking as you may have to cover pie crust edges with foil to prevent them from getting too brown. I also place an empty pizza pan on the rack just below my pie to catch any juice dripping.
  • Prep time will vary depending on the way you peel, core & slice the apples, by hand, food processor or machine.

1 prepared pie crust
4 -5 cups sliced Granny Smith apples
1/2 cup sugar
cinnamon
3/4 cup flour
1/2 cup sugar
5 tablespoons margarine (room temperature)

Steps:

  • Slice apples into pie shell, pour the half cup sugar over the apples, sprinkle with cinnamon.
  • For the topping, mix flour and sugar. Cut in margarine until crumbly. Spread over the top of the pie. Bake at 350 degrees for 60 minutes, until topping starts to brown just slightly. Cover the edge of the crust with foil when baking. Remove after 45 minutes in the oven so it can brown slightly before finished baking.

1 recipe pastry for a 9 inch double crust pie
¼ cup unsalted butter
3 tablespoons all-purpose flour
¼ cup water
½ cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced

  • Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water and brown sugar, and bring to a boil. Reduce temperature and let simmer.

1 unbaked pie shell (I recommend Mango Chutney & Pork Medallions)
5 golden delicious apples, cored and sliced thin
1 tablespoon tapioca
1/2 cup sugar
1/2 cup brown sugar
1 ounce powdered hot spiced cider mix, unprepared
1/2 teaspoon salt
2 tablespoons cinnamon
1/8 teaspoon nutmeg
1 teaspoon vanilla
3 tablespoons butter

Steps:

  • Preheat oven to 400°F.
  • Mix all the ingedients together, except butter, in a large mixing bowl.
  • Pour ingredients into a prepared 9" unbaked pie crust.

Up until I made THIS apple pie, I had hated apple pies my entire life! It didn't matter if I bought them or made them; it didn't matter if they were Dutch or Crumb-crust or plain crust...I couldn't get past the overly sweet/cinnamony insipidness of the filling. However, things have now changed, forever. A friend begged me to make them an apple pie, and I found this recipe on a website where it had garnered 1,617 five star reviews! I read over 40 of the reviews and the version of the pie recipe that I'm posting is based on THEIR tweaking it. The original pie had too many calories for some and no seasonings: suggestions included cutting the syrup in 1/2, adding vanilla and some spices. It also included several helpful hints on adding the buttery caramel syrup. Please do yourself a favour: whether you adore apple pie or have always avoided it as I have, MAKE THIS PIE!!!! 1 tablespoon cornstarch

Pastry for a double-crust pie (9 inches)
6 to 7 cups thinly sliced peeled tart apples (about 2-1/2 pounds)
1 tablespoon lemon juice

Dash ground nutmeg
2 tablespoons butter
2% milk
