GRANDMA LILLIE'S SODA CRACKER PIE

This recipe is was given to me by a cousin at my wedding shower 16 years ago. She received it from her mother, Betty Ruckman, who had been given it many more years ago by my Mother's Mother, Lillie Craven. It would probably be good with any fruit or berry, if peaches aren't available.

Number Of Ingredients 8

3 egg whites
1 cup sugar
12 soda crackers, CRUSHED (saltines)
1/4 teaspoon baking powder
1 teaspoon vanilla
1/2 cup black walnut, chopped coarsely
sliced fresh peach
Cool Whip (I prefer whipped cream ) or whipped cream (I prefer whipped cream )

Steps:

  • Preheat oven to 325 degrees.
  • Beat 3 eggs white until stiff. Slowly add 1 C white sugar while continuing to beat.
  • Fold/Stir in the crushed crackers and baking powder.
  • Fold in the walnuts and vanilla.
  • Put in a buttered pie plate and bake at 325 for 30 minutes. At 3500 feet, I bake for about 36 minutes.
  • Cool.
  • Put layers of sliced peaches on the cooled meringue, then top with Cool Whip or whipped cream.
  • Can be served immediately, or prepared up to 24 hours in advance. Store in the refrigerator.

1 cup sugar
1 teaspoon baking powder
1 pinch salt
20 crackers (crumble by hand for larger crumbs)
1 cup pecans
1 teaspoon vanilla
whipped cream

Steps:

  • To stiffly beaten egg whites, add sugar, baking powder, pinch salt, crackers (crumble by hand for larger crumbs), of pecans and vanilla.
  • Pour into lightly greased 9" pie pan.
  • Bake 30 minutes at 325 degrees.
  • Chill and serve with whipped cream.

This is a MOCKE apple pie that my grandma Rose always made ...Believe it or not it does taste like apple pie!!!

1 1/2 c sugar
1 1/2 c water
1 tsp cinnamon
1 Tbsp lemon juice
1 1/4 tsp cream of tartar
16 soda crackers
1 unbaked pie shell

Steps:

  • 1. Boil all of the ingredients for 5 minutes ; EXCEPT for the crackers ; Let cool.
  • 2. Make a regular pie crust as you would for an apple pie.
  • 3. Break up crackers and place in the bottom of the pie crust.
  • 4. Pour the first ingredients over top of the crackers ; dot with butter.
  • 5. Add top pie crust ; Sprinkle with sugar.
  • 6. Bake @ 350° till golden brown.

My grandmother was a wonderful cook. Even in her "town" house (as opposed to her farm house) she had two kitchens. One on the main floor for day to day cooking, and another in the basement for canning and preserving. After her death, my mother and I were cleaning out the cupboards in the basement kitchen. We found recipe box after recipe box. When my mom found this recipe, she almost did a cartwheel! I looked at the recipe and thought, "ok, this doesn't really sound all that good...." Mom told me, "wait til you try it!!" It's now one of my favorite desserts. The crust is dense and somewhat salty, which perfectly balances the creamy sweetness of the topping.

3 egg whites, well beaten
1/2 teaspoon cream of tartar
1 cup sugar
24 Ritz crackers, rolled fine
3/4 cup chopped pecans
1 teaspoon vanilla
8 ounces Cool Whip
1/4 cup brown sugar
1/4 cup chopped pecans

Steps:

  • Beat egg whites with cream of tartar, adding 1 cup sugar as you beat the eggs.
  • Fold in Ritz cracker crumbs, ¾ cup pecans and vanilla.
  • Mix well.
  • Pour into a greased 9-inch pie pan.
  • Bake at 350 F for 25 minutes.
  • Cool.
  • Mix together Cool Whip and brown sugar.

Steps:

  • Combine condensed milk and heavy cream in a large bowl.
  • Add lime juice and whisk until thickened, about 1 minute.
  • Spread 1 cup filling on bottom of deep dish pie plate or 11 inch oval casserole.
  • Top with a single layer of Ritz cracker.
