DANISH MEATBALLS (FRIKADELLER)
The Danes and the Swedes were in numerous wars over hundreds of years; one reason could have been 'the meatballs'. Most people will think of Sweden and perhaps IKEA when they think of meatballs; however it is also a traditional dish in Denmark and it is a dish that varies from family to family, often being passed down through generations. My recipe goes back at least 100 years, perhaps more; but I have traced it back to my great-grandmother and can remember making the meatballs with my grandmother as a little girl. The difference between the Danish and Swedish meatballs is often that ground pork is added to Danish meatballs making them fluffier and - being Danish - I think more tasty ;)

Steps:
- Mix together all ingredients using hands in a big bowl. To get the right consistency it is important that all ingredients get well mixed and gets softened a bit. I would say that you should knead for around 5 minutes.
- Form into meatballs according to the size you prefer. In Denmark meatballs used for dinner is the size of the palm of your hand, and lunch meat balls are about half of that. (Quantity for this recipe is based on dinner meatballs).
- Heat a non-stick pan to medium-hot and place the meatballs in the pan. If you feel they stick too much to the pan, you can add a bit of butter to the pan (not oil). Turn the meatballs with a fork once they have started to brown. Keep turning them every 4 min or so being careful that they do not brown too much. Cook for approx 15-20 min until cooked through.
- Serve with a potato salad, mashed potatoes or cooked potatoes with a white milk based gravy.

GRANDMA LILA'S GREEN BEAN CASSEROLE
This dish works best with fresh ingredients, but I sometimes can't find fresh long green beans, so I use a 16 oz package of long frozen green beans and reduce the cooking time to 1 1/2 hours instead of 2 hours.

Steps:
- In 1 1/2 quart casserole dish, thoroughly mix all ingredients except half (1.4 oz) of the French's French Fried Onions.
- Bake uncovered at 350 degree oven for 2 hours, until hot and cooked.
- Stir the mixture thoroughly and top with remaining half (1.4 oz) of the French's French Fried Onions.
- Bake for 5 minutes, until the onions are golden.

GRANDMA'S ENCHILADAS
if you like mexican food you'll love this dish! i learned how to make enchilladas this way from my mom who learned from my grandma. i usually make a whole tray & then my boyfriend takes leftovers to work & brags to everyone about how good it is!! another traditional way to serve this is for breakfast with a fried egg on top (omg, heaven!) i usually make the full fat version but see the note at the bottom for a low fat version that still tastes great!

Steps:
- Cut chicken into small pieces and add enough water (or chicken broth) to cover.
- Season water with sea salt, garlic powder, chili powder, cumin, oregano, sage, lemon juice & bay leaves.
- Some of the seasonings might seem like a lot but when you're boiling you have to make the water strong so the flavor gets into the chicken.
- Bring to a boil & cover, you don't want to boil too hard or all your water will evaporate.
- Let boil for 60 minutes or until chicken falls apart easily.
- While chicken is boiling, sauté onion in a small skillet, remove from skillet & set aside.
- Using the same skillet, add ½ cup oil & heat to medium/high, sprinkle with some salt.
- fry corn tortillas until lightly browned but not crispy (about 10 seconds per side), add more oil if needed until all tortillas are cooked.
- Once chicken is done reserve 2 cups chicken broth and shred chicken.
- Preheat oven to 350.
- Put chili sauce in a wide bowl or sauce pan.
- Using tongs, dip cooked tortillas in chili sauce and layer the bottom of a 6x9 size casserole dish (should fit 2 across & 3 down).
- Add a layer of chicken, cheese, onions and sprinkle with chicken broth (I usually use a turkey baster).
- Repeat until the dish is full...this size dish should fit 3 layers. (tortilla, chicken, cheese, onion & broth).
- Sprinkle top of dish with more chili sauce and bake at 350 for 20-25 minutes. usually i turn the broiler on for a minute or two at the end to get the top crispy.
- Let stand 5 minutes before serving.
- i serve with shredded lettuce & diced tomato topped with taco sauce.
- Note: for a lower fat version, use low fat cheese & heat tortillas on the stove top instead of frying....the dark rings give them more flavor than steaming. For smaller dishes cut tortillas in half to fit one single later across the bottom.

GRANDMA LILA'S FRIGADILLA
Steps:
- Put the flour on a plate. If frozen, thaw meat. Dump everything but flour into a big bowl then then mix together with your magic utensils.... your hands.
- Then make into golf ball and a half size, and then create an oval shape. Roll in plate of flour. Then lightly grease the bottom of a pan and fry the meat, and presto you have a delicious meal!
