How to make a delicious Pineapple Cream Cheese Pie, a classic pie that has largely been forgotten, but shouldn't be!

1/3 cup white sugar
1 tablespoon of cornstarch
8 ounces crushed pineapple (NOT drained! )
one 8 ounce package cream cheese (softened)
1/2 cup white sugar
1/4 teaspoon salt
2 large eggs
1/2 cup whole milk
1/2 teaspoon vanilla
1 unbaked pie crust - 9 inch pie plate
1/4 to 1/2 cup chopped pecans (depends on how much you like nuts!)

Steps:

  • Combine the pineapple filling ingredients together in a medium sized sauce pan. Whisk together well, making sure that the cornstarch is fully incorporated. Cook on medium heat until thickened up. and clear. Remove from the heat and set aside.
  • Blend the softened cream cheese with sugar, salt and then add the eggs one at a time blending each in to the mixture. Mix in the milk and vanilla.
  • Place the pie crust in the pie pan then spread cooled pineapple over the bottom of the pie crust. Gently pour in the cream cheese mixture, making sure not to disturb the pneapple layer below it, and then sprinkle the top with the chopped nuts.
  • Bake in oven at 400 degrees for 10 minutes then reduce the oven temp to 325 degrees and bake for another 40-50 minutes, or until the middle of the pie is set and cooked.
  • Remove and cool completely before serving.

1 cup white sugar
2 tablespoons cornstarch
⅛ teaspoon salt
1 (20 ounce) can crushed pineapple, undrained
3 eggs, separated, divided
1 tablespoon lemon juice
¼ teaspoon cream of tartar
6 tablespoons white sugar
1 (9 inch) baked pastry shell

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine 1 cup sugar, cornstarch, and salt in a large saucepan. Stir in pineapple and juice until blended. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from heat.
  • Place egg yolks in a bowl and gradually stir in 1 cup of hot filling. Add to the mixture in the saucepan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from heat. Stir in lemon juice and keep warm.
  • Beat egg whites and cream of tartar for meringue in a bowl until soft peaks form. Beat in remaining 6 tablespoons sugar gradually, 1 tablespoon at a time, on high speed, until stiff peaks form.
  • Pour hot filling into the pastry shell. Spread meringue over the filling, sealing edges to crust.
  • Bake in the preheated oven until meringue is golden brown, about 15 minutes. Cool on a wire rack for 1 hour; then refrigerate for at least 3 hours before cutting.

My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

3 tablespoons all-purpose flour
½ teaspoon salt
1 cup milk
1 (15 ounce) can crushed pineapple, drained
2 egg yolks
3 tablespoons butter
1 (9 inch) baked pie crust

Steps:

  • Whisk sugar, flour, and salt together in a saucepan over medium heat. Add milk and cook, whisking constantly, until mixture thickens and begins to bubble, 3 to 5 minutes. Remove from heat.
  • Stir pineapple, egg yolks, and butter into milk mixture. Return to heat and cook over medium heat until mixture begins to bubble, 3 to 5 minutes. Continue cooking, stirring constantly, until hot and thick, about 2 minutes more. Pour mixture into prepared pie crust. Refrigerate until chilled, at least 3 hours.

I made this not long ago, this is from the Dole website. This was fantastic, so easy to make and so so so tasty, if you like pineapple you will love this.

1 (20 ounce) can crushed pineapple, Dole undrained
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt (optional)
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon lemon juice
pastry for a double-crust 9-inch pie

Steps:

  • Combine crushed pineapple, sugar, cornstarch and salt in saucepan.
  • Cook, stirring, until thickened and clear.
  • Stir in butter and lemon juice.
  • Cool slightly.
  • Pour filling into unbaked 9-inch pastry shell.
  • Cut remaining pastry into 1-inch wide strips for lattice top.
  • Weave strips crisscross over pie to make lattice top.
  • Pinch edges.
  • Bake at 400°F., 25 to 30 minutes or until lightly golden brown.

1 (5 1/8 ounce) box instant vanilla pudding
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) container Cool Whip
1 9-inch graham cracker crust
toasted coconut (optional)
maraschino cherry (optional)

Steps:

  • In large bowl combine pineapple and juice with instant vanilla pudding, whisk together until mixed good.
  • Add Cool Whip and whisk together, pour into graham cracker pie shell and refrigerate.
  • You can garnish with toasted coconut and a cherry-- or just serve as is, either way it's a great summer dessert, light cool and refreshing.
