1 package (1/4 ounces) active dry yeast
1 cup warm water (110° to 115°)
1 cup quick-cooking oats
1/4 cup butter, softened
1/4 cup instant nonfat dry milk powder
1 egg, separated
2 tablespoons sugar
1 teaspoon salt
2-3/4 to 3-1/4 cups all-purpose flour
2 tablespoons sesame seeds
BURGER:
1 egg, beaten
3/4 cup ketchup
3/4 cup quick-cooking oats
1 teaspoon salt
1-1/2 pounds ground beef
Lettuce leaves
4 slices process American cheese

Steps:

  • In a large bowl, dissolve yeast in water. Add oats, butter, milk powder, egg yolk, sugar, salt and 1 cup of flour; beat until smooth. Add enough remaining flour to form a stiff dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and refrigerate for 8 hours or overnight. Cover and refrigerate egg white., Punch dough down and shape into a ball. Press into a greased 9-in. round baking pan. Cover and let rise in a warm place until nearly doubled, about 45 minutes. Brush with egg white; sprinkle with sesame seeds. Bake at 350° for 30 minutes or until golden brown. Remove from pan to a wire rack to cool., Combine the first four burger ingredients; crumble beef over mixture and mix well. On a greased broiler pan, shape meat mixture into an 8-1/2-in. patty. , Bake, uncovered, at 350° for 30 minutes or until a thermometer reads 160°. To serve, split bun in half. Place lettuce, burger and cheese on bun bottom; replace top. Cut into wedges.

1 lb swiss cheese or 1 lb mozzarella cheese, cut in about 1/2 inch nuggets
vegetable oil (for frying)
1 cup Bisquick
1 teaspoon paprika
1/4-1/2 teaspoon garlic powder
1/2 cup milk
1 egg
marinara sauce (optional)

Steps:

  • Place cheese nuggets in a pan and put in freezer for at least one hour.
  • Mix bisquick,paprika, garlic powder, milk and egg until smooth.
  • Dip cheese into batter,covering cheese completely.
  • Fry in 2 inches of oil heated to 375 degrees in a frying pan or in an electric skillet.
  • Fry about 1-2 minutes, turning once, until golden brown.
  • Drain on paper towels.
  • Let stand 3 minutes before serving.
  • Serve with marinara sauce.(recipe #153093).

2 tablespoons dry steak seasoning
2/3 cup flour, seasoned with

2 cups crumbled corn flakes
1/2 cup finely chopped pecans
2 tablespoons grated parmesan cheese
1/2 teaspoon paprika
1/2 teaspoon nutmeg (optional)
1/4 cup butter or 1/4 cup margarine
2 tablespoons flour
1 cup half-and-half cream
6 ounces sharp grated cheddar cheese
2 teaspoons Worcestershire sauce

Steps:

  • Set oven to 400°F.
  • Grease a cookie sheet.
  • Cut the beef into bite-size squares (about 1-1/4-inch squares).
  • Season the beef squares with the steak seasoning.
  • Shake the steak pieces in a plastic bag containing the flour (seasoned with salt and pepper), until each piece is individually coated.
  • Refrigerate steak while continuing preparation.
  • In a bowl, thoroughly blend the corn flake crumbs with the chopped pecans, Parmesan cheese, paprika and nutmeg (if using); set aside.
  • In a saucepan, melt the butter.
  • Add in the 2 Tbsp flour, and stir until flour is completely dissolved.
  • Whisk in the 1 cup of half and half cream, stir until the mixture come to a light boil, and thickens; lower the heat to a simmer.
  • Add in the grated cheddar cheese and Worcestershire sauce, and continue stirring and cooking until the cheese is completely melts; turn off the heat, and keep the mixture warm.
  • Dip each piece of the floured steak square in the cheese sauce, then roll in the bowl of dry crumb mixture (make sure that all sides are coated).
  • Place on a well-greased cookie sheet, leaving spaces between each square.
  • Bake for 15 minutes, or until the steak squares are a deep, golden brown.
  • Cool slightly before removing with a spatula.

1/4 teaspoon nutmeg (optional)
1/4 cup margarine or 1/4 cup butter

1 cup half-and-half or 1 cup milk
5 ounces sharp cheddar cheese, grated
2 teaspoons Worcestershire sauce

Steps:

  • Set oven to 400 degrees.
  • Slice the beef into bite-size squares (about 1-1/4-inch squares), and roll in the steak seasoning.
  • Coat the cubed seasoned steak pieces in a plastic bag containing the flour, salt and pepper mixture until each piece is individually coated.
  • Refrigerate steak while continuing preparation.
  • In a bowl, thoroughly blend corn flake crumbs, chopped pecans, Parmesan cheese, paprika and nutmeg (if using); set aside.
  • In a saucepan, melt margaine.
  • Whisk in the 2 Tbsp flour, stir until all the flour is completely dissolved.
  • Add in the half and half cream (half and half cream is recommended as milk usually will scorth the bottom of the pot, but milk can be used if desired); heat and stir until the mixture comes to a light boil.
  • Lower the heat to simmer.
  • Add in the grated cheese and Worcestershire sauce; continue stirring and cooking until the cheese melts.
  • Remove from heat; keep the cheese mixture warm.
  • Remove the steak pieces from the fridge.
  • Dip each floured steak square in cheese sauce.
  • Then roll in bowl of dry crumbs (making sure that all sides are coated well).
  • Place on a well-greased or non-stick coated cookie sheet (leaving spaces between each square).
  • Bake for 15 minutes, or until steak squares are a deep golden brown.
  • Cool slightly before removing from the pan with a spatula.

1 lb ground round
2 tablespoons taco seasoning mix
1 (4 ounce) can mild green chilies, drained, chopped
1 (8 ounce) package colby-monterey jack cheese (cut into 16 1/2-inch cubes)
1 egg white
1 tablespoon water
2 cups nacho cheese flavored tortilla chips, crushed
6 tablespoons taco sauce, thick style
3 tablespoons honey

Steps:

  • Heat oven to 400°F.
  • Combine ground beef, taco seasoning and green chilies in large bowl, mixing lightly but thoroughly.
  • Divide beef mixture into 16 portions; shape each portion around a cheese cube, completely covering cheese.
  • Beat egg white with water in shallow dish until blended.
  • Place chips in second shallow dish.
  • Dip each meatball into egg white mixture, then into chips to coat completely.
  • Press each meatball with palm into a flattened nugget shape, generously coating both sides of nugget with chips.
  • Spray large baking pan with nonstick cooking spray. Place nuggets in baking pan; spray tops of nuggets generously with nonstick cooking spray.
  • Bake in 400°F oven 15 to 20 minutes until no longer pink and juices show no pink color.
  • Meanwhile combine taco sauce & honey in a small microwave-safe dish. Microwave on HIGH 30 seconds or until warm.
  • Serve nuggets with sauce.

2 tablespoons plain fresh breadcrumbs
1 tablespoon buttermilk
2 teaspoons sriracha sauce (or any hot sauce)
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 cup all-purpose flour
1 large egg
3 tablespoons milk
1 1/3 cups panko breadcrumbs
vegetable oil, for frying
1/4 cup brown sugar
3 tablespoons soy sauce
1 orange, zested
1 cup orange juice
1 tablespoon sesame oil
1 tablespoon garlic, finely minced
2 tablespoons ginger, finely minced or grated
1 teaspoon red chili pepper flakes
2 tablespoons rice wine vinegar
1/2 cup scallion, finely sliced
1/2 cup water
1 1/2 tablespoons cornstarch
cooked white rice, dill, broccoli (for garnish)

Steps:

  • To make Dino Nuggets:.
  • In a large bowl, mix the ground chicken, egg, breadcrumbs, buttermilk, sriracha, dried oregano, garlic powder, salt and black pepper in a bowl until well combined.
  • Take a cookie sheet that will fit into your freezer and line with parchment paper. Arrange dinosaur cookie cutters on the cookie sheet. Take tablespoon sized chunks of the chicken mixture and use your fingertips to push the chicken into the cookie cutters in an even layer about 1/4 inch thick. You may need to add more or less chicken mixture to each cutter depending on the size. Lift away the cookie cutters. Repeat to fill the tray with dinosaur shapes (they can be very close together). Freeze for 1-2 hours until firm.
  • Place the flour in a wide, shallow dish. Crack egg into a second wide, shallow dish, add the milk and whisk together with a fork. Place panko breadcrumbs into a third wide, shallow dish.
  • Lift each frozen dinosaur shape off the cookie sheet then dip into the flour, turning to coat well. Then dip into the egg mixture, turning to coat. Lastly dip into the breadcrumbs, turning to coat.
  • Fill a large, deep skillet halfway with vegetable oil. Heat to 350 degrees F. Once the oil is hot, lower in a few nuggets at a time and fry until golden on one side 3-5 minutes. Flip and let the other side cook to golden brown - about another 3-4 minutes.
  • Transfer to plate lined with paper towel to drain the excess oil.
  • To make the Orange Sauce:.
  • In a small bowl, mix the brown sugar, soy sauce, orange zest and orange juice.
  • Heat the sesame oil in a large skillet over a medium heat. Once hot, add the garlic, ginger and pepper flakes and cook, stirring constantly, for 1 minute. Pour in the soy sauce mixture, the rice wine vinegar and scallions and stir through. Bring to the boil then turn down to simmer.
  • Mix the cornstarch and water in a small bowl then pour that into the skillet too, stirring it in thoroughly, until thickened. Add the fried nuggets to the sauce in the pan then gently flip them over and stir to coat in the sauce.
  • Mould the rice using small bowls into mounds on a plate. Garnish with the broccoli to make a 'Jungle' scene. Arrange the hot nuggets in the scene, garnishing with dill or cilantro if desired.

Easy and fast to make finger food. Can be easily prepared in advance and scaled up for guests. Serve the nuggets with your favorite salsa, sauce or dip. I love these fish nuggets, because they are made without any fat. This is a comfort food I like very much. I like them hot and even cold they are delicious.

1/2 lb fish fillet (cod or any other firm fish)
1 tablespoon lemon juice
3 tablespoons milk
1 egg
2 tablespoons Dijon mustard
2 tablespoons yogurt
salt
pepper
breadcrumbs

Steps:

  • Preheat oven (395°F, 200°C). Line out a baking tray with baking parchment.
  • Cut fish fillet bite-sized pieces (nuggets). Drizzle with lemon juice. Sprinkle with salt and pepper to taste.
  • In a bowl combine milk, egg, mustard and yogurt. Mix well and add salt and pepper to taste.
  • Dip the fish nuggets into milk mixture to cover nuggets with the sauce.
  • Take nuggets out of the sauce (using a fork) and let drip off excess of sauce and coat with breadcrumbs.
  • Place them on the baking tray and bake them for 10 minutes. Then heat up the oven and broil them until they are golden brown.
  • Take them out of the oven and serve them hot with your favorite sauce, salsa or dip.
  • NOTE: Can easily prepared in advance and freeze. Follow the directions and bake them only for 10 minutes. Take them out of the oven and freeze them. To serve: take them out of the freezer, thaw and broil them until they are golden brown.
  • NOTE: I do not have given the amount of breadcrumbs needed. Sometimes I need more, sometimes less. But coat the nuggets only with a thin layer of breadcrumbs. You can replace the breadcrumbs by ground almonds. This will add a nutty flavor to the nuggets.
