Number Of Ingredients 10

1 c butter, room temperature
1 c white sugar
1 c brown sugar, firmly packed
2 large eggs, well-beaten
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 1/2 c all-purpose flour
3 c quick oatmeal
2 c coconut (or you choice of nuts, raisins, date, chocolate chips, etc.)

Steps:

  • 1. Cream together butter, white sugar, and brown sugar in a large bowl.
  • 2. Add beaten eggs and vanilla.
  • 3. In a separate bowl mix together salt, baking soda, flour, oatmeal, and coconut.
  • 4. Add the dry ingredients to the butter mixture and mix until combined.
  • 5. At this time you can fold in the optional nuts, chocolate chips, raisins, or dates.
  • 6. Use a cookie scoop, drop dough onto a baking sheet (making sure not to overcrowd the pan) and bake immediately. Or, form the dough into 2" rolls in plastic and refrigerate until chilled then slice.
  • 7. Bake at 375 for 10-12 minutes.

2 cups sugar
1/2 cup butter
1/2 cup milk
2 Tbsp cocoa
3/4 cup peanut butter
1 tsp vanilla
3 cups quick oatmeal

Steps:

  • Bring sugar, butter, milk and cocoa to a boil for 1 minute.
  • Then add peanut butter and vanilla. When peanut butter is melted, add quick oatmeal. Stir together.
  • Drop by tsp. on wax paper as fast as possible. Cool and serve.

This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

2 cups white sugar
½ cup milk
½ cup unsalted butter
2 tablespoons cocoa powder
3 cups old-fashioned oats
½ cup peanut butter, or more to taste
1 teaspoon vanilla extract

Steps:

  • Combine sugar, milk, butter, and cocoa powder in a large saucepan over medium heat; bring to a boil. Cook and stir until butter is melted and mixture is smooth, 2 to 3 minutes.
  • Remove from heat and add oats, peanut butter, and vanilla extract; mix until thoroughly combined. Drop tablespoonfuls of dough onto sheets of waxed paper. Let cool until solid, 20 to 30 minutes.

This is a recipe from a friend's Grandmother, and it's yummy. If you decide you want to make it with peanut butter, add 3/4 cup of peanut butter (in addition to the baking cocoa) and leave out the nuts and the coconut. She swears making it in the cast-iron pan is the key to this recipe and whenever she doesn't make it in her special skillet they don't taste as good. Serving size is estimated.

2 1/2 teaspoons baking cocoa
2 cups sugar
1/2 cup butter or 1/2 cup margarine
1/2 cup evaporated milk
3 cups quick-cooking oats
1/2 cup nuts
1/2 cup coconut or 3/4 cup peanut butter

Steps:

  • Mix cocoa, sugar, butter, and evaporated milk together and bring to a boil.
  • Boil for 1 minute.
  • Add nuts, coconut and oats to mixture and stir well (or add 3/4 c peanut butter with oats instead of nuts and coconut).
  • Grease cookie sheet and drop mixture by heaping tablespoon and let set.

My Grandma Helen would bake a ton of goodies every Christmas and give them away to family and friends. She had made this recipe for as long as I can remember and they are still one of my favorites! I can remember standing on a chair at the counter beside my Grandma making these!

- ritz crackers
- chocolate bark candy coating, melted
- peanut butter (i used creamy)

Steps:

  • Spread peanut butter on the bottom side (the flat side) of one Ritz cracker. Place another Ritz cracker on top with the bottom of the cracker (flat side) to the peanut butter. Completely coat in melted chocolate candy coating. Place on cookie sheet lined with wax paper and place in the refrigerator until set. ENJOY!! This is a great recipe to include the kids in. I can remember standing on a chair at the counter beside my grandma Helen making these!
  • For a little extra fun you can sprinkle Christmas sprinkles on top while the candy coating is still wet. You can also use the white bark candy coating!!

  • Put in saucepan milk, butter and sugar and bring to a boil for 1 min. Take off heat, add some vanilla. Pour over the cocoa and oatmeal mix in a bowl. Mix well and place by tablespoons onto wax paper to cool. Place in airtight container.
