My Grandma Earhart was a wonderful cook. There wasn't anything she made that my family and I didn't love. This casserole of hers was one of my favorites. I hope you will try her casserole recipe and will love it as much as I do. Bon appetite!

1 tablespoon vegetable oil
2 tablespoons butter
1 onion, chopped
½ cup sliced celery
½ green bell pepper, chopped
1 pound bulk pork sausage
1 (28 ounce) can whole peeled tomatoes, chopped
½ teaspoon garlic powder
1 teaspoon dried basil
½ teaspoon dried sage
1 tablespoon Worcestershire sauce
1 (8 ounce) package egg noodles
1 cup grated Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the vegetable oil with butter in a large skillet over medium heat, and cook the onion, celery, and green pepper until the vegetables are tender, stirring occasionally, about 8 minutes. Mix in the pork sausage, and cook until the meat is browned, breaking it up into crumbles as it cooks, about 8 more minutes. Drain off excess grease. Stir in the tomatoes, garlic powder, basil, sage, and Worcestershire sauce, mixing until well combined.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink. Mix the noodles gently into the pork mixture, and place into a 9x12-inch baking dish. Sprinkle the top with Cheddar cheese.
  • Bake in the preheated oven until the cheese is bubbling and browned, 30 to 40 minutes.

This recipe goes back to when my family lived on the farm and was tight on cash. A delicious combination of just the right ingredients! YUM. Grandma is an amazing cook. Note-- For the vegetables you can substitute a bag or two of frozen vegetables. I like to use the new steam bags that you stick in the microwave!

1 lb ground beef
16 ounces instant mashed potatoes
16 ounces of mild shredded cheese
11 1/2 ounces cream of mushroom soup
14 ounces carrots (frozen or canned)
14 ounces green beans (frozen or canned)
14 ounces sweet corn (frozen or canned)

Steps:

  • Preheat oven to 350°F.
  • Brown the beef in a frying pan. While the beef is cooking, follow the directions on the instant potato box and prepare those in a separate pot. If you are using frozen vegetables, cook those now as well in a separate pot. If you use canned veggies, there is no need to cook them.
  • When the beef is browned, drain any grease from the pan. Add the can of creamed soup directly to the frying pan and mix the meat and soup together. (heat should be off now.).
  • On the bottom of a 13x9 baking pan smooth the beef mixture to cover the bottom. Add the vegetables on top of the beef. MAKE SURE TO DRAIN ALL LIQUIDS BEFORE ADDING TO THE DISH! On top of the vegetables smooth over the already prepared mashed potatoes. Sprinkle the cheese on the top and season with black pepper.
  • Stick 'er in the oven for 20-30 minutes or until the cheese is nicely tanned.
  • Enjoy!

3 cups cooked, mashed sweet potatoes
1 cup white sugar
½ cup milk
⅓ stick unsalted butter, cut into pieces and softened
2 large eggs, slightly beaten
1 teaspoon vanilla extract
½ teaspoon salt
1 cup brown sugar
⅓ cup all-purpose flour
1 cup chopped pecans
1 cup shredded coconut
⅓ stick unsalted butter, cut into pieces and softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 1 1/2-quart casserole dish.
  • Mix mashed sweet potatoes, white sugar, milk, butter, eggs, vanilla extract, and salt together; transfer potato mixture to the prepared baking dish.
  • Mix brown sugar and flour for topping together in a large bowl. Add pecans, coconut, and butter; mix until well combined. Sprinkle over the casserole.
  • Bake in the preheated oven until topping is golden brown, about 25 minutes.

3 cups mashed sweet potatoes
1 cup sugar
3 eggs, beaten
1 1/2 teaspoons vanilla
1/2-1 cup margarine
1 cup brown sugar
1 cup pecans, chopped
1/4 cup margarine, softened

Steps:

  • Mix all the ingredients together (not the topping ingredients).
  • Put in 12" X 8" X 2" pan.
  • For the topping, mix margarine, sugar and nuts.
  • Put over potatoes.
  • Bake at 350 for 50-55 minutes.
