Steps:
- For the Pie Crust
- Mix together flour, 1 1/2 tsp. sugar and 1 tsp. salt.
- Using pastry blender, blend together chilled butter, lard and flour until crumbly (pea size chunks).
- Start by blending 4 tablespoons of ice cold water into the flour/butter/lard mixture.
- Add more water a tablespoon at a time until mixed and dough sticks together when pressed. Don't make too wet, just enough water to have dough come together.
- DO not overmix or your pie crust will be tough.
- Divide in half, cover with plastic wrap and chill for 30 minutes.
- While dough is chilling, in large bowl toss together apple slices, white and brown sugar, tapioca and cinnamon.
- Roll out pie dough to make two crusts that cover pie plate with about an inch excess.
- Place one in bottom of pie plate.
- Pile high with apple mix, cover with other pie crust, seal edges, cut slits for venting.
- Sprinkle top with white sugar and cinnamon.
- Bake 350 for about 1 - 11/2 hours until top is golden brown. Cover edge with a pie shield or foil if edge starts to brown too much while baking.

GRANDMA OPLE'S APPLE PIE
This is a recipe for apple pie that I got from allrecipes.com and it is THE BEST apple pie I have ever had. It is different that ordinary apple pie, the fresh apples are placed in the crust, covered in a lattice top and smothered in a decadent sauce. Whoever Grandma Ople is, I would really like to thank her for she sure knows how to make a mean apple pie!For my crust, I use a recipe for pie crust that includes vinegar and is found on this site.

Steps:
- Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
- Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
- Bake 15 minutes at 425°F (220°C). Reduce the temperature to 350°F (175°C), and continue baking for 35-45 minutes.
- Note: you might want to set a baking sheet under the pie to catch any drips.
GRANDMA'S APPLE PIE
Steps:
- Preheat the oven to 375 degrees F.
- Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
- Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
- Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
- Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
- With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.
GRANDMA'S SECRET APPLE PIE (FRUIT PIE ROUND)
Steps:
- Crust Preparation: Preheat oven to 400 degrees F.
- Combine all the dry ingredients in a large mixing bowl. Add shortening and butter. Using a pastry blender, cut in the shortening and butter until the mixture resembles course meal. Drop by drop, add the cold water. Mix in with the fingertips, not hands, as the palms will warm the dough. Continue mixing water in until the dough begins to hold together without being sticky but not crumbly. Divide dough into 2 pieces and place 1 piece of dough in plastic warp. Press down to form a disk. This will make rolling out easier after chilling. Lightly spray a deep 9-inch pie pan with cooking spray. Roll out second piece of dough and place in pie plate, allowing the excess pastry to hang over the edge. Lightly brush sides and bottom of crust with egg wash. Chill in refrigerator for 10 minutes before filling. Makes pastry for 9-inch double-crust pie.
- Preheat oven to 425 degrees F.
- Filling Preparation: Peel, quarter, and core apples; cut into 1/4-inch slices (should have 6 cups). Toss with the lemon juice in a bowl. In a separate bowl combine sugars, flour, cinnamon, nutmeg, and allspice, pour over the apples and toss to coat. Whisk together egg and bourbon. Fold into apple mixture. Spoon apple filling into the chilled pastry shell; cut butter into very small pieces and sprinkle over the apples. Roll out remaining pastry. Cut slits in pastry to allow steam to escape. Lightly brush egg wash around edge of pie. Cover pie and trim overhang. Turn edges under flush with the rim; crimp all around to make a stand-up edge. Bake pie at 425 degrees F for 40 minutes, or until top is golden brown and juices are bubbling up. Remove from oven and sprinkle with vanilla sugar, if desired. Cool on wire rack.
GRANDMA'S APPLE PIE JAM
I got this recipe from All About Apples.com (http://www.allaboutapples.com/cooking/miscellaneous/000186.htm) I looked it up when we had a bumper crop of apples in the backyard last year. I'm posting it now so I can refer to it in my mini apple pie recipe! This jam is also fabulous in plain or vanilla yogurt for your own fruit on the bottom treat!

Steps:
- Wash 5 or 6 half-pint jars and fill with hot water until needed. Prepare lids as manufacturer directs.
- Measure sugars into a medium bowl and set aside.
- Peel, core and finely chop enough apples to measure 2 cups. Place in large saucepan with water, lemon juice, cinnamon and nutmeg. Stir in pectin.
- Place pan over high heat and stir until it comes to a full boil. Boil hard for 1 minute, stirring constantly. Remove from heat and immediately stir in sugars.
- Return to full rolling boil and boil hard for 1 minute more, stirring constantly. Remove from heat. Skim foam from surface and stir jam for about 5 minutes to prevent fruit from floating.
- Ladle hot jam into 1 hot jar at a time, leaving 1/4-inch head space. Wipe jar rim with a clean, damp cloth. Attach lid. Fill and close remaining jars. Process in a boiling-water canner for 10 minutes (15 minutes at 1,000 to 6,000 feet; 20 minutes above 6,000 feet).

This recipe was given to me by a friend. I've modified it slightly to use less sugar. Sometimes I leave the skins on the appple for a more rustic pie (plus you get a some extra fiber)

APPLE PIE BY GRANDMA OPLE
Up until I made THIS apple pie, I had hated apple pies my entire life! It didn't matter if I bought them or made them; it didn't matter if they were Dutch or Crumb-crust or plain crust...I couldn't get past the overly sweet/cinnamony insipidness of the filling. However, things have now changed, forever. A friend begged me to make them an apple pie, and I found this recipe on a website where it had garnered 1,617 five star reviews! I read over 40 of the reviews and the version of the pie recipe that I'm posting is based on THEIR tweaking it. The original pie had too many calories for some and no seasonings: suggestions included cutting the syrup in 1/2, adding vanilla and some spices. It also included several helpful hints on adding the buttery caramel syrup. Please do yourself a favour: whether you adore apple pie or have always avoided it as I have, MAKE THIS PIE!!!! If you want to make it with the original recipe, here is the link: http://allrecipes.com/Recipe/Apple-Pie-by-Grandma-Ople/Detail.aspx?src=etaf. My many thanks and appreciation to the original poster, Moshamama.

- Bake 15 minutes in the preheated oven. Reduce the temperature to 350°F (175°C).
- Continue baking for 35 to 45 minutes, until apples are soft and crust is a light golden brown.

Steps:
- In a medium bowl, beat the butter or margarine and cream cheese together until smooth.
- Work in the flour to make a soft dough.
- Divide the dough into two balls, wrap them, and chill them in the fridge for a minimum of 1 hour.
- Mix the sliced apples with the cinnamon, sugar, and lemon juice, reserving a little sugar and cinnamon.
- Mix well.
- On a lightly floured surface, roll out one ball of pastry and use it to line a deep 10-inch pie dish.
- Bake the pastry blind (see note on baking blind).
- When the pie shell has cooled, fill it with the apples, piling them higher in the center.
- Roll out the other pastry ball thinly and gently lay it on top.
- Press the edges together, trim off any excess pastry, then mark the edges with a fork and prick the top of the pie several times.
- Mix the reserved cinnamon and sugar together, and sprinkle the mixture on top of the pie.
- Bake at 375 F for 35-40 minutes, until the topping is golden brown and the apples have cooked.
- Note: Baking Blind: Baking blind, which partially cooks the pie shell, will ensure that it stays crisp under a liquid filling.
- Cover the pastry, including the rim, with aluminum foil to prevent it from rising.
- Weigh it down with baking beans (dried lima or butter beans are perfect).
- Bake it in a preheated oven at 400 F for 10-12 minutes (slightly less time if you are making small individual pie shells).
- Remove the foil and bake for a further 5 minutes or until the pie shell starts to color.
