This recipe for spice cookies came to The Times from Claire Will of San Francisco after a callout for favorite holiday recipes. At first, it seemed rather plain Jane, but the hefty dose of ground cloves (3/4 teaspoon) was what lured me into testing it, and I have to admit I was skeptical. I was soon a believer. Of the five kinds of cookies I served to a group at a holiday party, those crisp-edged, soft-centered beauties were the first to vanish. One friend texted on his way home, "send recipe for spice cookies a.s.a.p."

1 cup/225 grams unsalted butter (2 sticks), softened
1 cup/200 grams granulated sugar
1/4 cup/60 milliliters molasses
1 large egg
1 3/4 cups plus 2 tablespoons/240 grams all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon ground cloves
1/2 teaspoon fine sea salt
3 3/4 cups/460 grams confectioners' sugar
1 teaspoon vanilla extract
3 tablespoons heavy cream or milk, more as needed
1 to 2 tablespoons Irish whiskey, optional

Steps:

  • Heat oven to 375 degrees. Line several baking sheets with parchment paper or nonstick liners.
  • Using an electric mixer, beat 12 tablespoons butter with the granulated sugar, molasses and egg until fluffy, about 2 minutes. Slowly beat in flour, baking soda, spices and salt.
  • Shape dough into walnut-size balls and place 2 inches apart on baking sheets. Bake until firm, about 10 to 12 minutes. Let cool on wire racks.
  • To make the icing, beat remaining 4 tablespoons butter with the confectioners' sugar until smooth. (Go slowly so you don't create a sugar storm.) Beat in the vanilla and enough cream or milk, and whiskey (if using), to make a spreadable frosting. Slather on fully cooled cookies.

This is a traditional Christmas cookie made every year at our annual cookie baking weekend!

½ pound sweet butter
6 ounces cream cheese, softened
2 cups all-purpose flour
1 ½ cups dark brown sugar
1 cup chopped walnuts
3 tablespoons butter, melted
3 eggs
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat sweet butter and cream cheese together in a bowl with an electric mixer until smooth and creamy. Gradually stir flour into butter until forming a dough. Shape dough into 1-inch balls and place into 3/4-inch muffin cups. Press dough into the bottom and sides of each muffin cup.
  • Mix brown sugar, walnuts, melted butter, eggs, and vanilla extract together in a separate bowl. Spoon about 1 teaspoon of walnut filling into the dough cups.
  • Bake in the preheated oven until edges of cookies are lightly browned and filling is cooked through, about 25 minutes.

1 cup butter, softened
6 ounces cream cheese, softened
2 cups all-purpose flour
1 ½ cups firmly packed brown sugar
2 large eggs
2 tablespoons butter, melted
1 tablespoon vanilla extract
⅛ teaspoon salt
1 ½ cups chopped pecans

Steps:

  • Combine 1 cup butter and cream cheese in a bowl using an electric mixer on medium speed until creamy. Add flour gradually, beating at low speed. Shape mixture into 48 balls and place on a baking sheet. Cover and chill in the refrigerator for 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease the cups of a mini-muffin pan. Press 1 chilled dough ball into each cup and shape into a tart shell.
  • Whisk brown sugar, eggs, 2 tablespoons butter, vanilla extract, and salt together in a bowl. Stir in 1 1/4 cups pecans. Spoon mixture into tart shells. Top with the remaining pecans.
  • Bake in the preheated oven until edges of cookie shell are delicately brown, 12 to 15 minutes.
  • Cool in pans on wire racks for 10 minutes. Gently remove from pans and cool completely on wire racks, about 20 minutes.

My Gramma Cassidy was a wonderful cook, and especially famous for her pies. These cookies are like mini pecan pies and soo yummy.

1/2 cup butter, softened
1 (3 ounce) package cream cheese
1 cup flour
1 egg
1 cup brown sugar
1 teaspoon vanilla
1/4 cup broken pecans (approximately)

Steps:

  • Mix crust ingredients with a mixer until dough forms.
  • Divide into 24 cups of a mini-muffin pan.
  • Press dough onto sides and bottom of pan. (Pampered chef has a wooden "pusher" tool that does this for you automatically.).
  • Mix egg, sugar, and vanilla in a small bowl or measuring cup.
  • Place several broken pecans in bottom of each dough-lined cup.
  • Spoon filling over pecans.
  • Bake at 350 degrees for about 25 minutes.

The original recipe was posted in our local paper, and i adapted it to make it gluten free. These are so good , i had to make two batches because they were gobbled up so quickly, and no one realised that they were gluten free. i make my own gluten free flour which i will post seperately, but any good quality GF flour will do, just make sure it contains xanthan gum.

3 ounces cream cheese, softened
1/2 cup butter, softened
1 cup gluten-free flour, sifted
1 egg
3/4 cup brown sugar, firmly packed
1/2 teaspoon salt
1 tablespoon butter, melted
2/3 cup pecans, in pieces
1 teaspoon vanilla extract

Steps:

  • preheat oven to 325*.
  • mix cream cheese and butter together, stir in flour, chill dough in fridge for 1 hour.
  • Shape dough into balls and place in muffin tins, press dough up the sides and bottom of the muffin cups ( i usually wear a thin latex glove to stop my fingers sticking to the dough, and you have to work fairly quickly while the dough is chilled and still firm ) this amount usually makes 9 little pies.
  • Sprinkle half the pecans into dough lined muffin cups.
  • Beat together the egg, 1 tbsp melted butter, salt and vanilla until smooth.
  • Spoon filling into cups and top with remaining pecans.
  • Bake at 325* for 25 minutes.
  • Cool completely before removing pies from muffin tins.

2 eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon orange rind
1 cup oatmeal
1 cup coconut
1 cup pecans, chopped

Steps:

  • Preheat oven to moderate speed (350 degrees).
  • Cream sugar and butter or margarine.
  • Add eggs, then vanilla.
  • Sift dry ingredien ts (flour, soda, powder, salt and orange peel) together.
  • Add to first mixture.
  • Add oatmeal, coconut and nuts.
  • Roll out to 2" thickness and cutout with a 2" biscuit cutter and place on cookie sheet or drop by Tablespoonfuls onto cookie sheets.
  • Bake for 12 minutes.
  • Let cool on pan for 2-3 minutes .
  • Move to cooling surface (paper towels or cooling racks) and let completely cool.
  • Make appoximately 40 cookies.

These are a wonderful Christmas cookies. They are like bite-size pecan pies. They were gone in no time at my house during the holidays. Recipe can be doubled easily.

3 ounces cream cheese
1/2 cup butter
1 cup flour
1 egg
3/4 cup brown sugar
1 teaspoon vanilla extract
1 tablespoon butter, softened
1 dash salt
2/3 cup pecans, chopped
cooking spray
powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Blend together first 3 ingredients into a pie-crust-like consistency. Don't overmix. Shape into 2 dozen 1" balls.
  • Spray mini-muffin tins with cooking spray. Place 1 crust ball into each tin. Shape each into mini-crust with your thumb.
  • Combine egg, brown sugar, vanilla, butter, salt and pecans. Fill each crust with filling.
  • Bake for 25 minutes. Let cool in tins shortly and then remove and cool on wire racks.
  • Dust with powdered sugar.
