- For the aioli: In a small bowl, stir together the mayonnaise, mustard, garlic and a generous grinding of black pepper. Refrigerate while you make the fries.

GRAINY RASPBERRY MUSTARD
I haven't tried this recipe. It's posted in response to a recipe request. But it sounds really good! I am guessing on how much it makes, because the computer says I have to put the amount. If anyone makes it, perhaps you could alert Gay or Troy to the amount. Thanks!

MUSTARD 101: FIVE MUSTARD VARIETIES AND HOW TO USE THEM
From chatelaine.com
Estimated Reading Time 2 mins
- Yellow mustard. This is the typical variety served you’ll find served at every barbecue. With a bright yellow colour, this prepared mustard is mild and is best used as a topping for barbecue favourites like burgers, pulled pork or hotdogs.
- Dijon mustard. Originating from Dijon, France this medium-hot variety is pale yellow and has a creamy consistency. Traditionally prepared with verjus (pressed juice from unripened grapes), Dijon is now made with white wine.
- Honey mustard. Honey mustard is just that; honey and mustard blended together. This sweeter variety lacks the hot notes that you find in mustard, but still has a little sharpness.
- Whole grain mustard. As the name suggests, whole grain mustard is prepared with visible mustard seeds that have been mixed in with the other ingredients.
- Powdered mustard. The powdered variety is just ground mustard seeds and is often used in barbecue sauces and spice rubs. The acidic quality adds hot pungent notes of mustard without the added liquid which helps to cut through creamy and rich sauces like a cheese sauce for macaroni and cheese.

- In a medium bowl, combine the vinegar, water, yellow mustard seeds, and brown mustard seeds. Cover with plastic wrap and let stand at room temperature for at least 8 hours or up to 24 hours. (The resting time softens the seeds and ensures a creamy consistency.)
- Take your vinegar and mustard seeds mixture and measure out 1/2 cup (118 ml) and keep separate.
- In a small food processor or with an immersion blender, process the remaining vinegar and mustard seed mixture, sugar, and salt until coarsely ground and thickened, 1 to 2 minutes, scraping down the bowl as needed.
- Stir in the reserved vinegar and mustard seed mixture. Using a funnel and spoon, portion mustard into two 1 cup (237 ml) jars. Cover and let the mustard stand at room temperature for 1 to 2 days to allow the ingredients to meld and develop a well-rounded spiciness. The longer it rests, the spicier it gets.
