- START IN DUTCH OVEN ON TOP OF STOVE BOIL ALL ITEMS UR GOING TO USE.
- PLACE JUICE IN LARGE SAUCE PAN GET HOT ADD UR SUGAR AND PECTIN. WHEN IT COMES TO A BOIL TURN HEAT DOWN SOME AND LET SIMMER FOR 30 MINS OR UNTIL READY TO POUR JUCE IN JARS.
- WHILE JUICE IS SIMMERING AND ALMOST READY TO POUR INTO JARS. TAKE THE JARS OUT TO GET THEM READY TO POUR JELLY/JAM INTO. THEN POUR TO THE FIRST RIM[NOT TO THE TOP OF JAR] PLACE SEALS ON THEM AND RIMS TIGHTLY. WAIT 4 THEM TO START POPPING AND PUT UP LABEL THEM SO U KNOW WHICH IS WHICH.

- BOIL EVERYTHING U R GOING TO USE. THEN IN LARGE SAUSE PAN POUR APPLE JUICE. 5 CUPS OF SUGAR WHEN HOT STIR TIL BLENDED IN. THEN ADD PECTIN 1 BOX AT A TIME WHILE HOT STIR TIL BLENDED LIKEWISE WITH THE OTHER 2 BOXES. STIR TIL THICKENS.
- POUR INTO JELLY JARS. PLACE SEALS ON THEM AND RING LIDS TIGHTLY. THEN WAIT FOR THEM TO POP

- POUR ABOUT 2 CUPS OF GRAPE JUICE INTO LARGE SAUCE PAN. [BOIL EVERYTHING U USE TONGS ECT.. JARS ECT... GET IT HOT
- ADD ALL UR SUGAR STIR TIL DESOLVED. BRING 2 A BOIL PLACE ON MED HEAT. ADD 1 BOX OF SURE-JELL AT A TIME AND STIR TIL DESOLVED.
- BRING TO A SLOW BOIL. THEN SIMMER FOR ABOUT 40 MINS. WHEN THICKENED POUR INTO 1 QRT JAR AND PLACE SEAL AND RING LIDS ON VERY TIGHTLY THEN WAIT FOR THE POPS. I NOTICE WHEN I USE THE BALL LIDS AND SEALS THEY POP FASTER. BUT U CAN USE ANY SEALS. BUT NEVER REUSE A SEAL

- BOIL ALL UNTINSILS AND JARS ECT.. TONGS LADEL AND SO ON. POUR 2 CUPS APPLE JUICE IN LARGE SAUCE PAN. ADD CHERRY FLAVORING. A FEW DROPS RED FOOD COLORING TO MAKE RED. ADD 4 CUPS SUGAR COOK AND STIR TIL DESOLVED. THEN ADD 2 CUPS SUGAR AND STIR TIL DESOLVED.
- ADD FIRST BOX OF PECTIN STIR TIL DESOLVED THEN ADD 2 BOX OF PECTIN STIR TIL DESOLVED
- I SET MY TIMER FOR 30 MINS. BRING TO ALMOST A BOIL AND TURN DOWN AND LET SIMMER 20-30 MINS STIRRING REGULARLY
- THEN WHEN IT THICKENS TAKE TONGS AND LINE UP 1/2 PINT JELLY JARS AND USE A FUNNEL AND LADEL TO THE FIRST RIM. PLACE SEAL ON AND RING LIDS ON TIGHT. SET ASIDE AND WAIT 4 THE POPS

- IN LARGE SAUSE PAN ADD 1 QRT OF CRANAPPLE JUICE. 1 BOX PECTIN. ABOUT 6 CUPS SUGAR. I LET IT BOIL THEN TURNED IT DOWN.
- STIR TIL ITS THICKENED, BUT SO U CAN STILL LADEL IT INTO JARS. LADEL INTO JARS. PLACE SEALS ON AND RINGS TIGHTLY ON JELLY.
- WAIT TO U HEAR THEM POPPING PUT UP. HOPE U LIKE THIS JELLY

- IN LARGE PAN BOILE EVERYTHING UR GOIN TO USE. WASH BLACKBERRIES. THEN PLACE IN FOODPROCESSOR AND PURREE. THEN POUR INTO LRG SAUSE PAN. ADD 6 CUPS OF SUGAR. 1 1/2 BOX PECTIN. I NOTICED THAT SUREFINE IS A LIL LARGER AND SOME BOXES R A LIL SMALLER. USE THE LARGER POUCHES.
- STIR UNTIL EVERYTHING IS BLENDED WELL. LET COME TO A BOIL AND TURN DOWN THEN ON MED HEAT STIR TIL THICKENS. I ACTUALLY HAD ENOUGH FOR 6 OR 7 JELLY JARS I HAD MY FRIEND BRING A COUPLE JARS OVER THEN SHE TOOK THEM HOME IN MY PAN AND IT THICKENED RITE AWAY AND SHE SAID SHE USED UP ALL HER JELLY JARS.
- GET UR JARS READY. TAKE LADEL AND FUNNEL AND POUR INTO EACH JELLY JARS. THEN PLACE SEALS ON AND RINGLIDS TIGHTLY.
- HOPE U LIKE THIS. I THINK ITS SIMPLE. I HAVEN'T CANNED IN A WHILE BUT I HAD A MASTER TO CALL ON[MARY LOL]. SO I'VE 2 LEFT. I WILL GET ANOTHER CASE OF JELLY JARS AND MAKE MORE. BUT NEXT IS SOURKROUT. SOMETHING EASY LOL HOPE U LIKE THIS
MINT JELLY
Found this recipe at recipegoldmine while looking for a mint jelly that does not require apples or apple juice. Made this up and my DH who so loves mint jelly with his lamb (I don't) loves this. This is an easy recipe, and I will never have to run to the Market to buy Mint Jelly again when we have lamb. Yipee!!!

Steps:
- Crush mint leaves (I did a rough chop). Add water. Bring to a boil.
- Remove from heat, cover and let stand 10 minutes. Strain and measure 3 cups of mint infusion.
- Add food coloring and lemon juice. Add Sure-Jell, dissolve and bring to a rapid boil.
- Add sugar. Cook fast, stirring occasionally until it comes to a rapid boil that cannot be stirred down, then cook 1 minute more.
- Pour into sterilized jelly glasses and seal. I processed in the steam canner for 10 minutes to insure a good seal.

- In a Dutch oven, bring mint and water to a boil. Boil for 1 minute. Remove from the heat and pour though a fine sieve, reserving mint liquid. Discard leaves. , Return liquid to pan. Add the sugar, vinegar and butter; bring to a boil, stirring constantly. Quickly add contents of both pectin pouches; bring to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat; skim off foam. Add food coloring. , Carefully ladle into hot sterilized half-pint jars, leaving 1/4-in. head space. Remove air bubbles; wipe rims and adjust lids. Process for 5 minutes in a boiling-water canner. , Or, cool to room temperature, about 1 hour. Cover and let stand overnight or until set, but not longer than 24 hours. Refrigerate or freeze. (Refrigerate for up to 3 weeks or freeze for up to 12 months.)

JALAPEñO MINT JELLY

Steps:
- 1. Bring 1 1/2 cups (375 mL) mint and water to a boil in a small saucepan. Remove from heat, cover, and let stand for 30 minutes to steep. Strain through a lined sieve pressing with the back of a spoon to extract as much liquid as possible; discard mint.
- 2. Combine mint liquid, sugar, vinegar, lemon juice, and peppers in a large stainless steel or enamel saucepan. Bring to a full boil over high heat and boil hard for 2 minutes, stirring constantly. Remove from heat; stir in pectin and remaining mint.
- 3. Ladle into sterilized jars and process as directed for Shorter Time Processing Procedure .
- Variation: Lemon Balm Jelly
- Use lemon balm leaves in place of the mint and omit the jalapeño peppers.
PINK GRAPEFRUIT, RASPBERRY & MINT JELLIES
This refreshing dessert that's low in sugar is based on a mint tisane, set to a soft jelly with chunks of fresh fruit.

- Soak the gelatine in a bowl of cold water. Put on the kettle and when it boils pour 1 litre of the boiling water over the mint leaves. Leave to infuse for 5 mins then strain into a large jug. Squeeze the excess moisture from the soaked gelatine then stir it into the hot mint mixture until dissolved. Set aside to cool.
- Cut the peel and pith from the grapefruit with a sharp knife then cut between the segments to release them, reserving any juice. Cut the segments into about 3 pieces each then distribute the grapefruit, raspberries and peaches between 6 glasses. Stir any grapefruit juice into the mint jelly then pour it into the glasses and chill until set.
