ULTIMATE GOURMET GRILLED CHEESE
This gourmet grilled cheese is loaded with herbed caramelized onions, gooey gruyere and white cheddar cheeses, and is cooked in a savory rosemary butter!

Steps:
- Add 1 1/2 Tbsp butter and olive oil to a skillet and heat over MED-LOW heat. Add diced onions, salt, pepper, fresh thyme and 1 tsp of fresh rosemary to the hot skillet and saute, stirring often, until onions are soft and starting to brown, about 10 minutes.
- Stir brown sugar into the onions and cook another minute.
- Transfer onions to a plate.
- Spread one side of two pieces of bread with a little bit of mayonnaise.
- To the same skillet, add remaining butter and rosemary, and heat over MED heat. Swirl to coat the bottom of the skillet with the melted butter.
- Add both pieces of bread, mayonnaise side down, and cook until bread is golden brown and crunchy, about 2-3 minutes.
- As soon as you add the bread to the skillet, add a bit of cheese to the top of each piece of bread. Once it starts to melt a little, sprinkle a couple tablespoons of the caramelized onions over the top of one of the pieces of bread.
- When the bread is good and golden brown, sandwich the pieces of bread together and cook on LOW until cheese is fully melted.
- Transfer to a plate, repeat with remaining slices of bread and ingredients.
- Slice and enjoy!

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
- Heat a large skillet over medium heat. Spread butter onto one side of each slice of bread. Lay 4 slices of bread, butter side down, in the skillet. Top with a slice of cheese, 2 slices tomato, bacon, and another slice of cheese. Cover with a slice of bread, butter side out. Fry sandwiches until golden on both sides.

My family loves these sandwiches, they are especially great using garden tomatoes, I make them using Pepper Jack cheese but American cheese slices works good also, you can adjust the butter amount to suit taste.

Steps:
- Spread about 1 tablespoon butter into the bottom of a large skillet (or just leave some fat in the pan from the bacon).
- Spread 1 tablespoon (can use more) onto one side of each slice of bread.
- Place the 4 slices of bread butter-side down onto a large skillet or flat grill.
- Top with 1 slice of cheese, 2 slices of tomato and 2 slices cooked bacon, then 1 more slice of cheese.
- Cover with a slice of bread (butter-side facing outside).
- Fry over medium turning once with a spatula until golden brown on both sides.
GRILLED CHEESE WITH TOMATO AND BASIL
These sandwiches were cooked on a grill, but a skillet would work just as well. Choose your favorite kind of cheese. We prefer a variety that melts easily, such as Gouda or Swiss, but cheddar is also good.

- Butter one side of each slice of bread. Arrange 4 slices, buttered side down, on clean work surface. Divide cheese evenly among 4 slices of bread. Arrange tomato slices over cheese, cutting slices in half to fit if necessary. Scatter basil leaves over tomatoes. Top with remaining slices of bread, buttered side up.
- Place sandwiches on a medium-hot grill, off direct heat. Cook until bread is golden and cheese is beginning to melt, about 4 minutes depending on heat of grill.
- Turn sandwiches over, and continue grilling until bread is golden and cheese is completely melted. Move to a slightly cooler part of the grill to melt if bread is darkening too much.

- Cook bacon in a large nonstick skillet over medium, turning occasionally, until crisp, about 8 minutes. Drain on a plate lined with paper towels; let cool completely, about 5 minutes. Discard drippings from skillet; wipe skillet clean.
- Finely chop cooled bacon. Toss together chopped bacon, Cheddar cheese, Gouda cheese, and pepper in a medium bowl. Stir together mayonnaise and Parmesan cheese in a small bowl.
- Spread mayonnaise mixture evenly on 1 side of bread slices. Arrange 6 of the bread slices, mayonnaise sides down, on a cutting board; top evenly with bacon-Cheddar mixture (1/2 packed cup per slice). Top with remaining 6 bread slices, mayonnaise sides up.
- Return skillet to heat over medium-low. Add 2 assembled sandwiches to skillet; cook, partially covered, until bread is browned on both sides and cheese is melted, about 3 to 4 minutes per side. Transfer to a cutting board. Repeat process with remaining 4 sandwiches.
