GOURMET FRENCH BREAD STYLE HAMBURGER AND HOTDOG BUNS (BREAD MACH
This makes a crisp chewy style hamburger bun that is delicious! I made this for fun and it is a family favorite now. If you like big burgers these buns will handle them well. They are fantastic as sandwich buns also. They make a mean ham and cheese! This is adopted from Failproof french bread recipe # 81211

Steps:
- Place ingredients in bread maker according to manufacturer instructions. The water should be about 110*F.
- Set the machine to dough cycle and start the machine.
- When the dough is finished roll onto a floured surface.
- Roll the dough to about an 1 1/4" -2 inch thickness (depending on how tall you want your buns.).
- Flour a 3 1/2 inch cutter (I use a glass) and press straight down to cut out the bun.
- Place buns on a greased baking sheet and cover with a tea towell for about 1 hour, or until doubled in size.
- Preheat the oven to 425 degrees.
- Place buns in oven, then using a water bottle sprayer, squirt hot water all around the hot oven, but not near the light bulb. Wait 30 seconds and spray again, do this one more time and let the buns bake.
- Bake for 15 to 18 mins (ovens vary in temp). Check halfway way through and turn the pan.
- Cool on a wire rack and enjoy!
- (Note) I have made these with a stand mixer with great success.

- To prepare this homemade hamburger buns recipe, start by making the dough. Add in the mixer's bowl the yeast, the warm water and 50g flour (5 tbsps). Using a hand whisk, whisk all the ingredients to form a batter. Wrap the bowl with plastic wrap and set aside for 6-7 minutes, until the yeast rises and starts bubbling. Be careful not do add hot water, as it will kill the yeast, nor cold, as it will take forever for your hamburger buns to rise. The water should be at the same temperature as your finger, so check it out sticking one finger in; you should feel no difference in temperature.
- In the meantime melt the butter. The key is to melt the butter at very low heat, so that the temperature doesn't kill the yeast. Remove the pan from the stove and check the temperature. The butter should be at the same temperature as your finger. If it is warmer, leave to cool down for a few minutes and check again.
- Pour the butter in the yeast mixture and add the egg and sugar. Whisk to combine. Top with the flour and add the salt.
- Using the dough hook mix at first at low speed, until the ingredients start to combine and then mix at medium-high speed for about 10 minutes, until the dough doesn't stick on the sides of the bowl. At this point the dough should be really soft and a little sticky. (Be careful not to add any more flour than this homemade hamburger buns recipe calls for, as the dough should be really soft and not firm).
- Coat lightly the dough with oil and place in a large bowl. Cover with plastic wrap and let the dough rise in a warm place for about 2 hours or until doubled in size. If the environment is cold, preheat the oven at 30C, turn it off and place the bowl inside.
- Gently deflate the dough and place on a lightly floured working surface. Dust your hands with flour and divide in 8 equal sized pieces (approx. 115 g./4 oz. each). Form each piece into a round shape, gently tucking ends underneath. Gently pat the dough rounds into flat disc shapes about 1.5 cm thick. Arrange the hamburger buns on a large baking tray lined with parchment paper and dust very lightly with flour. Drape some plastic wrap over the baking sheet and let rise for about 1 hour or until doubled in size.
- Preheat the oven to 180C and beat the egg and milk in a small bowl. Lightly brush the top of each hamburger bun with the egg wash and sprinkle with sesame seeds. Bake in preheated oven for about 16-17 minutes until nicely coloured. Place the hamburger buns on a rack to cool down completely before cutting and store in airtight container for 1-2 days.

- In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
- In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
- Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
- Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
- For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

THE ULTIMATE BRIOCHE BUNS FOR BURGERS RECIPE

- In a large bowl of a mixer, combine all-purpose flour, sugar, yeast, and salt.
- In a separate jug whisk together the milk and eggs.
- Pour the liquid into the dry ingredients and knead on medium speed with the dough hook attachment. (Tip: hold back a little liquid in case you don't need it all to make the dough come together)
- Once the dough comes together and there is no dry flour add in the sliced, softened butter. Continue to knead the dough for another 6-8 minutes. You will notice it is a soft, shaggy dough.
- Turn out the dough onto a lightly floured surface and shape into a smooth ball. Place it into a greased bowl, cover the bowl with plastic wrap (or a shower cap), and keep in a warm place for 1 1/2 - 2 hours.
- To make your Hamburgers: Divide the dough roughly into 6 (3 ¾oz) pieces. Shape each piece into a smooth ball and place it on a baking sheet lined with parchment paper to proof. This should take about 45 to 60 minutes. (Shaping the dough into a smooth ball is very important. Watch how, here.)
- Once proofed, brush each bun with egg wash and sprinkle with sesame seeds.
- Bake at 375°F (190°C) for 20-22 minutes or until they are golden brown.
- Store buns in an air-tight container at room temperature for up to 2 days. Because of the butter and eggs, they can spoil after 3 days so you can either keep them in the fridge or in the freezer for longer shelf life.

- In a mixing bowl (of your stand mixer), combine the flour, yeast, sugar and salt.
- In another small bowl, whisk together the water, milk and egg.
- With the paddle attachment in your stand mixer or a dough whisk, mix the dry ingredients and add the water-milk-egg mixture and mix to combine.
- Switch to the dough hook of your stand mixer, and knead the dough to bring it together. The dough needs to be fairly wet and sticky. Knead for about 5 minutes, until you have a smooth ball of dough.
- Add the oil or butter and knead for a further 5-10 minutes (I knead it for about 8 minutes), until the dough is shiny, smooth and tacky to the touch.
- Lightly oil a big bowl and place the dough in it. Make sure the dough is lightly oiled on the surface as well.
- For best results, cover the bowl with plastic wrap and store in the fridge overnight (8 hours) or for up to 24 hours. Alternatively, if you want to bake it on the same day, you can cover the dough with plastic wrap and let it rise for 1 hour in a warm place, until it has doubled in size.
- On the day you bake the bread rolls - turn the chilled dough out on to a lightly floured surface and lightly dust the surface of the dough as well. If the dough wasn't chilled, you may need extra flour on your hands and on your work surface to prevent the dough from sticking.

- Over medium-high heat, heat large nonstick skillet or fire up grill.
- Trim thin slice off top and bottom of ciabatta bun to create flat surface. Then slice each bun in half horizontally. Lightly spread mayonnaise on outside of ciabatta bun, to enhance browning. Place bun, mayonnaise-side down, on grill or in pan. Top each bun with cheese slice to toast bun and melt cheese.

BREAD MACHINE HAMBURGER BUNS
Steps:
- Gather the ingredients.
- Add the water and nonfat milk powder to the bread machine followed by the flour. Add the shortening followed by the sugar, salt, and yeast. Set to the "dough" cycle.
- When the dough cycle finishes, turn the dough out onto a floured board and punch it down. Knead 4 or 5 times; add a little more flour as you knead if necessary to keep the dough from sticking to your hands or the board.
- Cover the dough with a clean dishcloth and let it rest for about 30 minutes in a draft-free place.
- Lightly grease a large baking sheet; sprinkle with cornmeal. Alternatively, line the baking sheet with parchment paper and sprinkle with cornmeal.
- Pat the dough into a circle and cut into 8 even wedges. Form each wedge into a ball, then flatten each one into a smooth and fairly even circle, slightly bigger than a burger.
- Arrange the dough pieces on the baking sheet about 2 inches apart and let rest for about 20 minutes.
- Preheat the oven to 375 F.

- Bake for about 18 minutes or until the buns are nicely browned.
