HAM AND BEAN SOUP
This is easily the best Ham and Bean Soup we've ever had! It's a simple, adaptable recipe, perfect with chunks of crusty bread.

Steps:
- Heat a Dutch oven (you can also use a thick-bottomed soup pot, but may need to stir more often to prevent burning) over medium heat for about 3 minutes or so, until it's nice and hot. Add the oil and the onions. Cook until the onions begin to turn translucent. Add the garlic and cook for 1-2 minutes.
- Stir in the chopped celery and carrots, and cook for an additional 5-6 minutes. Add the beans, followed by the water. Increase the heat to high.
- Add the bay leaves, dried thyme, garlic powder, onion powder, white pepper, black pepper, paprika, and chicken bouillon paste. (If you don't have chicken bouillon paste, simply use chicken stock in place of the water.) Bring to a boil.
- Stir in the ham. I like to cut it into big shards/shreds for extra texture. (Sarah likes hers cubed and orderly though. I won't judge either way!) If you're using a ham hock instead of ham, you can add it in now.
- Reduce the heat to medium-low so the soup is at a somewhat energetic simmer--it should always be at a low bubble. Cook for 4-5 hours, stirring periodically. If the soup isn't cooking down, you may want to increase the heat to medium. Every stove is different, so don't just set it and forget it. Periodically check liquid levels.
- In the last hour of cooking, add the fresh parsley, and cook for another hour. It's done when the beans and carrots are tender, and the soup is thickened. If you used a ham hock, fish out any bones, and chop up any large pieces of meat and skin (keeping the skin is optional) that don't break down during the cooking process before serving.
- This soup is quite forgiving. If it ends up too salty for your tastes, just add water, and lightly mash some of the beans to release their starchiness and re-thicken the soup. If you are reheating the soup and there is not enough liquid, just add 1-2 cups of water to bring it back to your desired consistency.

TOMATO AND CANNELLINI BEAN SOUP
"Vegetable soup is something I can eat a ton of and still feel healthy. The problem is, I get hungry again two hours later. So I came up with a version with beans, which deliver protein and texture, tiding me over to the next meal." -Rick Martinez, associate food editor, digital

Steps:
- Beans Combine beans, onion, garlic, and bay leaves in a large pot and add cold water to cover by 2". Bring to a simmer over medium heat, add several pinches of salt, and reduce heat to low. Continue to cook at a bare simmer until beans are creamy but still hold their shape, 35-45 minutes. Let beans cool in cooking liquid; discard bay leaves.
- Do ahead
- Beans can be cooked 3 days ahead. Cover and chill.
- Soup:
- Heat 2 Tbsp. oil in a large heavy pot over medium-high. Add tomatoes, 1/2 tsp. red pepper flakes, and a pinch of salt and cook tomatoes, undisturbed, until caramelized and borderline blackened on one side, about 5 minutes. Break up tomatoes, scraping bottom of pot, and continue to cook, scraping and stirring occasionally, until tomatoes are caramelized all over, about 5 minutes more. Transfer tomatoes to a plate.
- Heat another 2 Tbsp. oil in same pot over medium. Add onion, fennel, garlic, and a pinch or so of red pepper flakes, if desired; cook, stirring often, until vegetables are soft and starting to brown around edges, 8-10 minutes. Stir in vinegar and tomatoes, scraping up browned bits. Drain beans and add to pot along with broth (for a thicker soup, use half of the broth plus 2 cups bean-cooking liquid). Bring to a simmer; season with salt. Cook until flavors meld, 30-45 minutes.
- Just before serving, stir in chard and cook until wilted. Ladle soup into bowls, top with almonds, and drizzle with oil.
- Do ahead
- Soup (without chard) can be made 4 days ahead. Let cool; cover and chill.

Steps:
- soak beans overnight or till adequately moist.
- drain soaking water
- add all ingredients except cilantro to pressure cooker.
- wait for 3 whistles.(bring to pressure & cook 10 minute under pressure).
- garnish with cilantro.
- note: the tomato normally shouldn't be added before cooking beans, but in this recipe, this is ok b/c we use 3 whistles instead of two and the beans take a better firmer form necessary to make this a "gourmet" looking soup.

10 BEAN SOUP
Yes, another soup recipe! We really love a hot bowl of soup on a cold winter day for lunch. The challenge is keeping it low fat and healthy. This bean soup is fantastic! It makes alot and it freezes well. You can really use any favorite bean mixture (dry) or use your own! I buy the 10 Bean mix in bulk at a local grocery store. It also has some pearl barley thrown in there too!

- Instant Pot Braised Lamb With White Beans and Spinach. Like many of our favorite bean soup recipes, this one starts in the Instant Pot. Bone-in lamb shoulder chops enrich the garlicky broth, canned white beans get creamy and flavorful, and it all happens in about 20 minutes.
- Tomato and Cannellini Bean Soup. This wholesome vegetarian soup starts with beans cooked from scratch, then adds in whole peeled tomatoes, garlic, fennel, Sherry vinegar, and Swiss chard.
- Navy Bean and Escarole Stew With Feta and Olives. Is it a soup? Is it a stew? Does it really matter? This warming bowl of white beans is packed with flavor, thanks to savory Castelvetrano olives, fresh basil, tangy feta, and tender escarole.
- Brothy Beans and Farro With Eggs and Mushrooms. Stirring an egg yolk into each steaming bowl just before eating adds richness and body to this subtly spicy soup.
- Ham Hock and White Bean Stew. A ham hock is a great shortcut to deep flavor in any pot of beans. This version layers on crispy shallots, tangy honey-mustard sour cream, and bright, crunchy chopped cornichons.
- Brothy Pasta With Chickpeas. This is the kind of weeknight dinner that dreams are made of. The velvety-rich tomato broth comes together in a flash, and the pasta cooks right in the soup.
- Slow Cooker Ribollita. Ribollita is like a heartier version of minestrone, thickened with bread and redolent with garlic. It is a beautiful soup when it’s fresh from the pot, but it is also perhaps the most noble of leftovers.
- Instant Pot Beef and Sweet Potato Chili. Sweet potatoes almost melt as they cook under pressure in the Instant Pot, lending a silky texture and sweet flavor to this harissa-spiced chili.
- Three-Bean Soup. This fresh, vegetable-packed soup is perfect for those chilly spring days when you're craving a bowl of something warm. Get This Recipe.
- Escarole with Cannellini Beans. You can cook these beans up to four days ahead, then wait until you're almost ready to eat to wilt the escarole, seasoned with lots of garlic and red pepper.
