My husband is an avid fisherman. When a family get-together was planned and we had to bring something, we created this recipe using fish from our freezer. The chowder got rave reviews from the relatives! -Heather Saunders, Belchertown, Massachusetts

1/2 pound sliced bacon, diced
2 medium onions, chopped
6 cups cubed peeled potatoes
4 cups water
1 pound bay or sea scallops, quartered
1 pound lobster meat, cut into 1-inch pieces
1 pound uncooked medium shrimp, peeled and deveined
1 pound cod, cut into 1-inch pieces
1 pound haddock, cut into 1-inch pieces
1/2 cup butter, melted
4 teaspoons salt
4 teaspoons minced fresh parsley
1/2 teaspoon curry powder
2 quarts whole milk
1 can (12 ounces) evaporated milk
Oyster crackers, optional

Steps:

  • In a large soup kettle or Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; reserve drippings. Saute onions in drippings until tender. Add potatoes and water; bring to a boil. Cook for 10 minutes., Add the scallops, lobster, shrimp, cod and haddock. Cook for 10 minutes or until scallops are opaque, shrimp turn pink and fish flakes easily with a fork. Add the butter, salt, parsley and curry powder. Stir in milk and evaporated milk; heat through. Garnish with bacon, additional parsley, and oyster crackers, if desired.

⅓ cup butter
1 teaspoon olive oil
1 onion, minced
⅓ cup all-purpose flour
1 quart half-and-half, or as needed
2 cups bar clams, drained with juice reserved
⅓ cup grated Parmigiano-Reggiano cheese
2 potatoes, cubed
2 cups cream-style corn
1 large ear corn, kernels cut from the cob
1 cup sliced cherry tomatoes
1 ½ cups water, or as needed
sea salt and coarsely ground black pepper to taste
1 fresh haddock fillet, cut into 1-inch pieces
2 cups large shrimp, peeled and deveined
1 cup canned lobster meat, with juice

Steps:

  • Melt butter with olive oil in a large pot over medium-low heat; stir in onion and sauté until translucent, about 5 minutes. Whisk flour into butter mixture; whisk in half-and-half and juice from drained clams.
  • Stir Parmigiano-Reggiano cheese into onion mixture until melted, about 2 minutes; stir in potatoes, cream-style corn, corn kernels, and cherry tomatoes. If soup is very thick, stir in water, about 1/2 cup at a time, as desired; bring soup to a simmer and cook until potatoes are tender, about 15 minutes. Season with sea salt and pepper.
  • Stir drained clams, haddock, and shrimp into soup; simmer until haddock and shrimp are fully cooked for 5 minutes. Stir in lobster and its juice; cook just until heated through.

1 lb cod fish fillet
2 tablespoons margarine or 2 tablespoons cooking oil
1 medium onion, sliced
1/2 cup celery, diced
2 cups raw potatoes, diced
1/2 cup carrot, sliced
2 cups boiling water
1 teaspoon salt
1/2 teaspoon pepper
1 cup milk

Steps:

  • Cut cod fillets into bite sized pieces.
  • Melt margarine in large saucepan Cook onion and celery until onion is tender and translucent. Add potatoes, carrots, water, salt and pepper.
  • Cover and simmer 10 to 15 minutes until vegetables are tender.
  • Add fish and cook 10 minutes longer.
  • Add milk.
  • Reheat, but do not boil.
  • Serves 4.
  • Serve hot, with freshly baked home made bread or rolls and butter.

A steamy bowl of delicious fish chowder is a comforting warm-up for a cold winter day. Tender white fish combined with vegetables, broth and seasonings makes a delicious dinner.

1/4 cup olive oil
1 1/2 cups carrots (chopped)
1 1/2 cups celery (chopped)
1 1/2 cups yellow onion (diced (approximately one large yellow onion))
2 pounds red potatoes (quartered and diced into 1-inch cubes)
32 ounces seafood stock
32 ounces water
2 bay leaves
2-3 pounds frozen white fish
1/2 cup unsalted butter
1/2 cup all-purpose flour
12 ounce can evaporated milk
2 teaspoons salt
2 teaspoons white pepper

Steps:

  • Heat the olive oil over medium heat in a large stock pot. As the olive oil starts to shine, add in the carrots, celery, and onions. You should hear a sizzle indicating the oil is up to temperature.
  • Use a wooden spoon to stir the vegetables in the olive oil every minute or so. Allow the vegetables to saute without browning, until the onions start to become soft and translucent. The carrots and celery will still be more on the vibrant and stiff side. This should take about 10 minutes.
  • Add the potatoes to the pot and give a good stir. Allow them to mingle for just two minutes before adding in the liquid (stock and water).
  • Add the bay leaves on top. Cover and increase the heat to high, bringing the pot to a boil. Boil until potatoes are just fork tender. You do not want the potatoes to become mushy. This will take about 20-30 minutes.
  • Once the potatoes have become tender, bring the heat down to low. Add the chopped fish. Stir so all fish cooks evenly and has been covered by the stock.
  • Meanwhile, make the roux. Melt the butter in a 10 inch skillet.
  • Dust in the flour and whisk to combine and cook out the rawness of the flour.
  • As the mixture bubbles, slowly pour in the evaporated milk in 3 steps, whisking and allowing the mixture to thicken between each. It should have the consistency of a loose cake batter.
  • Add the salt and pepper to the roux giving a final stir.
  • Add the roux to the simmering stock pot and stir well. This will help to thicken the soup into a chowder and give a creamy texture.

2 lbs cusk (or other good chowder fish, if using Cusk cut into good bite size pieces) or 2 lbs haddock, cut in 1" cubes (or other good chowder fish, if using Cusk cut into good bite size pieces)
3 onions, diced
4 cups diced raw potatoes
1 can evaporated milk
3 cups fresh milk (1%, 2% or Whole)
1/4 lb butter
1/2 teaspoon ground pepper
1/2 teaspoon salt
1/4 teaspoon savory (optional)
2 cans clam broth or 2 cups water

Steps:

  • Cook onions and potatoes in broth or water until almost tender.
  • Add fish and complete cooking.
  • When fish flakes easily, add butter, salt, 1/2 the pepper, savory and all the milk.
  • Heat completely without boiling (very important, never boil any chowder).
  • Sprinkle with remaining pepper and serve with oyster crackers or saltines.
  • Note: If you want more potatoes or fish just add more broth and milk.
