1 teaspoon white sugar
salt and ground black pepper to taste

Steps:

  • Toss cucumber, serrano chile pepper, red onion, and mint together in a bowl. Pour lime juice and grapeseed oil over the cucumber mixture; toss to coat. Add sugar, salt, and black pepper; stir.
  • Cover bowl with plastic wrap. Refrigerate for 1 hour.

Toss 1 cup roasted peanuts with some of the spiced salt. Sprinkle the cucumbers with more spiced salt and serve with the peanuts.

1 bunch of radishes (preferably breakfast), halved
1 large jicama, peeled, cut into 1/4-inch-thick slices, half of slices cut into half moons, half moons cut into triangles

Steps:

  • Finely grate lime zest into a small bowl. Stir in salt and chile powder. Cut lime into wedges.
  • Arrange crudités on a platter. Squeeze lime juice over, then sprinkle with some spiced salt mixture. Serve remaining spiced salt mixture alongside.

1/2 teaspoon sugar
1/4 teaspoon ginger, ground
1/4 teaspoon hot pepper sauce

Steps:

  • Small Kirby cucumbers, normally used for pickling, are called for here because they are crunchier and less watery.
  • You can use other cucumbers and peel them if desired.
  • In a medium size bowl, combine the cucumbers and green onions.
