Carton heavy whipping cream, cold
Powdered sugar
Coconut extract
1 store-bought red velvet cake (unfrosted)
Toasted coconut flakes

Steps:

  • In a large glass bowl, combine the heavy whipping cream and sugar. Beat with a hand mixer until thick and foamy. Add a small drizzle of coconut extract. Continue to whip until soft peaks appear.
  • Using a serrated knife cut the red velvet cake into 1-inch squares. Add about 1/3 of the squares to the bottom of the trifle bowl. Spread a layer of the whipped cream on top of the cake squares, followed by a layer of toasted coconut. Repeat layering 2 more times and serve.

One 15.25-ounce box red velvet cake mix
Melted butter, for the cake
One 8-ounce container whipped topping
One 12-ounce container whipped cream cheese frosting
1/4 cup candied pecans, coarsely chopped
1/4 cup candied walnuts, coarsely chopped

Steps:

  • Prepare the red velvet cake according to package instructions, substituting melted butter for the oil. Pour into a 9-by-13-inch cake pan or baking dish and bake according to the package instructions. Let cool completely, then cut into bite-sized chunks (reserve crumbs).
  • Gently fold together the whipped topping with the frosting in a bowl. Spoon a dollop into a parfait glass, then sprinkle with candied pecans and walnuts. Top with a few pieces of the cake. Continue layering the frosting mixture, nuts and cake, finishing with a garnish of cake crumbs (tear up additional cake cubes if necessary). Repeat with remaining parfait glasses and serve immediately.

This is one of my favorite Valentine's Day or Christmas desserts. I am posting my favoritne Red Velvet recipe, but to tell the truth, I usuually start with a Red Velvet cake mix making it even easier.

RED VELVET CAKE, MADE FROM SCRATCH
1 tsp vanilla
1 c buttermilk
1 tsp salt
2 1/2 c cake flour
2 stick butter
2 eggs
2 oz red food color
2 Tbsp cocoa
2 c sugar
1 tsp baking soda
1 Tbsp white vinegar
OR
USE A BOX OF RED VELVET CAKE MIX AND PREPARE ACCORDING TO DIRECTIONS.
FOR PUDDING MIXTURE
1 large box vanilla instant pudding
3 c cold milk
1 c sour cream
1- 8 oz. pkg cream cheese, room temperature
1 -12 oz cool whip, thawed
2 tsp vanilla

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. IF USING A RED VELVET CAKE MIX, follow the package directions for preparations. Pour into prepared cake pans or a 9x13 pan. Bake until done. Allow to cool completely and cut into one inch pieces. Set aside to prepare the pudding.
  • 3. IF BAKING YOUR RED VELVET CAKE FROM SCRATCH,in a large mixing bowl, using a hand held mixer, beat eggs, butter and sugar until creamy. Add cocoa and food color and mix until combined.
  • 4. In a medium sized mixing bowl sift together flour and salt. Add to the creamed mixture alternating flour and buttermilk. Blend in vanilla.
  • 5. In a small bowl, combine soda and vinegar and add to batter. Pour into prepared round cakepans or a 9x13 pan.
  • 6. Bake for 30-35 minutes or until done in the center. Allow cake to cool completely.
  • 7. Cut cake into 1 inch pieces and set aside to prepare the pudding.
  • 8. TO PREPARE THE PUDDING MIXTURE...With your hand mixer, on medium speed, mix the instant pudding and the milk. Add the cream cheese and beat until very smooth. Add the sour cream and blend well. Add the Cool Whip and blend in. Mix in the vanilla.
  • 9. TO ASSEMBLE, place an even layer of the cake squares (using ½ of the cakesquares ) in the bottom of the trifle bowl. Place 1/3 of the pudding mix over the cake layer in the trifle bowl. Repeat the layering process. End by topping with a final layer of pudding mix. Garnish with chopped pecans or strawberries. Refrigerate until ready to serve.

1 pkg. (3.4 oz.) JELL-O Cheesecake Flavor Instant Pudding
1 tsp. red food coloring
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Prepare cake batter and bake in 13x9-inch pan as directed on package. Cool completely.
  • Loosen cake from sides of pan with knife. Gently remove cake from pan; place on cutting board. Cut cake crosswise in half. Cut one half into 3/4-inch cubes. Wrap remaining half tightly; reserve for another use.
  • Beat cream cheese in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mixes and food coloring; beat 2 min. Gently stir in 2 cups COOL WHIP.
  • Layer half each of the cake cubes and pudding mixture in 2-1/2-qt. bowl; top with layers of remaining cake cubes, pudding mixture and COOL WHIP.
  • Refrigerate 2 hours.

1 (18 1/4 ounce) red velvet cake mix, prepared
1 1/4 cups water (for cake)
1/3 cup vegetable oil (for cake)
3 large eggs (for cake)
1/2 cup Grand Marnier
1 cup frozen raspberries, thawed
1 tablespoon sugar
1/4 cup Grand Marnier
1 (1 ounce) package sugar-free instant cheesecake pudding mix, prepared
2 cups milk (for pudding)
1 cup heavy cream, whipped

Steps:

  • 1. Pour the Grand Marnier into the raspberries, and add the sugar. Stir and let chill for an hour.
  • 2. Cut the cake in half. We will only use this half; put the other half away.
  • 3. Cut the cake into little squares. Divide half of the squares into 12 individual bowls (or clear decorative plastic cups).
  • 4. Layer the bowls with half the raspberry mixture, half the pudding, and half the whipped cream. Repeat the layering with the other half of the cake, raspberry mixture, and pudding. End with whipped cream.
  • 5. Garnish with a raspberry (or gummie vampire teeth, if you're doing a halloween party).
  • 6. Chill for 8 hours or overnight.
  • 7. Variation: Prepare the whipped cream similarly to Recipe #74805 (essentially, prepare the whipped cream with a tablespoon of white chocolate pudding mix).
